Barely made it through the fast today. I used to be able to fast so easily and exercise while fasting. Now it’s such a struggle…. Ended up eating 20 blackberries. Guess it’s better than a binge…but still wish I hadn’t eaten it

I made a test batch of gooseberry jam to see whether we liked it, and I think I’ve discovered a new favorite jam. It’s wonderfully tart & it’s a gorgeous color because our gooseberries are red. Since I’d never had this kind of jam I figured I should test it before making a real batch -- and now I’m going to make a whole gallon & become the mayor of Jam City!

Pesach recipes: Random Mix 2
It’s been a few years since I added to my tumblr collection of Pesach recipes, so I figure we’re due. Let’s see what I can offer this year!

Cheesy Scalloped Potatoes (adapted from here)
1 ½ cups heavy cream, or a combination of cream and milk
2 cloves garlic, pressed
1 sprig fresh thyme or more
Nutmeg, paprika, onion powder, kosher salt and black pepper, to taste
2 pounds yukon gold potatoes, cut into 1/8-inch thick slices
Shredded muenster cheese (or other mild white cheese)
Grated parmesan cheese
Cornflake crumbs, breadcrumbs, panko, or matzah meal crumbs (optional)
Preheat oven to 375°F. Lightly oil or butter a 9-inch pie plate or casserole dish.
In a medium saucepan, combine heavy cream, garlic, thyme and seasonings over medium heat until heated through, about 1-2 minutes.
Add a layer of potatoes to the prepared baking dish in an overlapping pattern. Pour ⅓ cup cream mixture over potatoes; sprinkle generously with shredded muenster and grated parmesan. Repeat with remaining potato slices, cream mixture and cheese to create 2 more layers.
Place into oven and bake until cooked through, about 35-40 minutes. Sprinkle with additional cheese and (if using) crumbs, and broil for 8-10 minutes, or until top becomes golden brown and crusted. Serve immediately.

Balsamic Peach Chicken
1 whole chicken in pieces, or the equivalent
4-6 shallots, or more as desired
4-6 canned or frozen peach halves, or more as desired, sliced
1-2 tablespoons minced garlic
1-2 teaspoons balsamic vinegar, or to taste
4-6 sprigs fresh thyme, or to taste
salt, pepper, and poultry seasoning to taste
olive oil
Peel and quarter shallots and sautee in olive oil until slightly browned.  Put in marinating dish along with peach halves.  Add garlic, balsamic vinegar, thyme, remaining seasonings, and more olive oil to combine.  Toss chicken pieces in marinade and let sit for a while.
Put chicken, shallots, and peaches into roasting pan.  Pour remaining marinade over the whole.
Cook at 375°F until done. Serve hot.

Roasted Carrot Soup (adapted from here)
olive oil as needed for roasting and sauteing
1 to 2 lbs carrots
1 medium yellow or red onion, diced
1-2 ribs celery, diced
2 tbsp minced garlic
salt and black pepper to taste
thyme, paprika, smoked paprika, cumin
3-4 cups vegetable or chicken broth, or more as needed
optional: 1 to 2 tablespoons unsalted butter or margarine, to taste
optional: 1 ½ teaspoons lemon juice, to taste
Preheat the oven to 400°F. Line a large rimmed baking sheet with parchment paper for easy cleanup, if desired.
To prepare your carrots, peel them and then cut them on the diagonal so each piece is about a half-inch thick at the widest part.
Place the sliced carrots on the baking sheet. Add about 2 tablespoons olive oil and ½ teaspoon of the salt. Toss until the carrots are lightly coated in oil and salt, then arrange them in a single layer.
Roast the carrots until they’re caramelized on the edges and easily pierced through by a fork, 25 to 40 minutes, tossing halfway.
Meanwhile, in a large soup pot, heat the remaining 1 tablespoon olive oil over medium heat until shimmering. Add the onion and cook, stirring occasionally, until the onion is golden and starting to brown, 40-50 minutes.
Push onion to the side and add celery, stirring until fragrant and starting to be translucent. Add garlic and other spices. Cook, stirring constantly, about 30 seconds to 1 minute. Pour in the broth, while scraping up any browned bits on the bottom of the pot.
Add the roasted carrots to the pot when they are out of the oven. Bring the mixture to a boil over high heat, then reduce the heat as necessary to maintain a gentle simmer. Cook for 15 minutes, to give the flavors time to meld.
Once the soup is done cooking, remove the pot from the heat and let it cool for a few minutes. Puree the cooled soup with an immersion blender, and strain through a sieve.
Add the butter and lemon juice if using and stir until smooth. Taste and adjust seasonings as necessary. Serve hot.
This soup keeps well in the refrigerator, covered, for about four days, or for several months in the freezer.

Butternut Squash Pie (adapted from here)
2 medium butternut squash, cut in half, seeded
3 tablespoons butter or grapeseed oil
3 large eggs
1 tablespoon vanilla extract
1 tablespoon cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
½ teaspoon salt
Bake squash in the oven at 350° for 40-60 minutes, until soft. Scoop squash out of skin, discarding skin.
Place squash in food processor with butter (or oil), eggs, vanilla, spices and salt. Puree until smooth and creamy.
Pour mixture into a 9-inch tart pan or a casserole dish, sprinkle cinnamon lightly over the top, and bake at 350° for 40 minutes. Serve hot.

Fresh Berry Tart (adapted from here)
1 pie crust (use premade, your favorite recipe, or the one in this previous post!)
22 oz. fresh blackberries, raspberries, or strawberries (will also work with diced peaches and/or plums)
2/3 cup granulated sugar or equivalent (I use xylitol or erythritol)
1/2 cup water
2 packets unflavored gelatin
1/8 tsp. salt
Wash the berries, then put half in a saucepan on medium heat with water, sweetener, and salt. Let simmer for 5 or so minutes, until berries start to turn red (if using blackberries) and juice darkens.
Add gelatin while stirring mixture and continue stirring until powder is completely dissolved. (Tip: To avoid clumps, add gelatin a small amount at a time, stirring in each addition in fully before proceeding.) Add remaining berries, stir to coat with juice, then pour into pie crust. 
Refrigerate for 2-3 hours, or until berries set and pie is cool throughout. Serve chilled.

Scodelline (Almond Custards) (from here)
6 egg yolks, room temperature
a little over ¾ cup sugar (I use granulated xylitol)
½ cup ground almonds
1 tbsp orange blossom or rosewater, OR fresh lemon zest OR vanilla
¾ cup water
grated cinnamon to decorate, if desired
Place the sugar in a small pot, barely covered by water (more or less the same amount of water and sugar).
Cook over low heat, stirring continuously, until it starts simmering and turns into a dense syrup. Do not allow it to brown and turn into caramel: as soon as it melts and thickens into a thick syrup, go on to the next step.
Add the almonds and the flower water (or lemon zest), stir a couple more times and remove from the heat.
In a separate bowl (I like to use pyrex) whisk the yolks until frothy. It will be easier with an electric whisk or mixer.
Slowly pour the whipped egg yolks into the syrup until the mixture is smooth. Cook the mixture on very low heat in a double boiler (you can use the pyrex bowl on top of a pot filled with some water), stirring continuously until it begins to thicken (about 20 to 30 minutes) and the surface turns shiny, almost glaze-like. 
Once the custard is cooked allow it to cool down, stirring occasionally, and once it’s lukewarm pour it into individual espresso cups (full) or tea cups (half full), and dust the top with some grated cinnamon. Serve accompanied by some fresh fruit.
Using 6 yolks, you will make about 8-10 espresso-cup sized scodelline.

Snickerdoodle Blondies (from here)
Blondies:
2 cups almond flour
1 tbsp gelatin
1 tsp cinnamon
2 tsp baking powder
¼ tsp salt
½ cup butter softened
⅓ cup granulated sweetener
⅓ cup brown sugar substitute
1 large egg room temperature
½ tsp vanilla
Topping:
1 tbsp granulated sweetener
½ tsp cinnamon
Preheat oven to 325°F and grease an 8x8 inch baking pan.
In a medium bowl, whisk together almond flour, gelatin, cinnamon, cream of tartar, baking soda, and salt.
In a large bowl, beat the butter with both sweeteners until lightened and fluffy. Beat in the egg and vanilla extract until well combined.
Add the almond flour mixture and beat until the dough comes together, scraping down sides of bowl and beaters as necessary.
Spread the batter in prepared baking pan and smooth the top with an offset spatula. Bake 18 to 22 minutes or until set and top is golden brown.
In a small bowl, whisk together sweetener and cinnamon. Sprinkle over hot bars in pan. Let cool in pan, and then cut into squares.

Day 2/90, 08/24/20
Ok so day 2 is upon us lol, I find that for the first 4-5 days I can stick to my plan pretty easily but the 6th or 7th day is the most difficult. If I can get past it I know I can be consistent for at least 3 months (since I have in the past) but thats when my hunger and exhaustion peak, over the next couple days im gonna be more hungry, moody, and uncomfortable but after then I should adjust all the way.  
As I posted earlier I weighed in at 185.4lbs today which is 1.8 lbs down! I know its probably mostly water weight but its a start lol.
Today is my Upper Body workout day which I combined with some ballet stretching to help my horribly tense muscles lol.  As well I harvested some potato plants so that was a good deal of effort.  I also ran again today at 11:30  as I actually really enjoy it and it burns so many calories! I think burning 3000+ calories according to my Fitbit has got me a bit exercise addicted lol.

Is the Keto Diet Healthy? When everyone – not just celebrities – appears to be following a ketogenic diet, you want to know if this will work for you. The so-called keto diet is a moderate-protein and low-carb diet plan. But while people say you can eat all the butter and bacon you want, is this true or healthy to follow a keto diet? Is the keto diet the best way to lose weight? Can it cause more problems than it solves?
Here are 13 Burning questions answered about the “Keto Diet”.
Question #1.) Is the Keto Diet Healthy?
The first question first, Is the Keto Diet Healthy? In past, the keto diet was used to control seizures in people with epilepsy. But today, the Keto Diet is a trend. And many people use it for weight loss. It is hard to say categorically that either the keto diet is safe or not. And it is also largely dependent on the types of foods you eat on the keto diet. (For example, olive oil is a healthier option than butter, similarly, salmon is healthier than bacon.) However, proper dieting of keto, especially with the help of a medical professional, should reduce negative health effects.
Question #3.) Is Ketosis Bad?
Ketosis is when your body turns into a fat-burning state and breaks down fats into ketone bodies that are used as energy. Beyond the keto flu, several studies have shown that entering ketosis through the diet has no real negative results in the short term.
But long-term studies are needed to truly assess impact. The bottom line: putting your body in a keto for a limited time is likely not harmful.
Question #4.) How Many Carbs Do You Eat on a Keto Diet?
The keto diet generally consists of 70 to 75 percent of fats, 20 to 25 percent of protein and 5 to 10 percent of carbohydrates. The exact number of grams (grams) of carbohydrates varies for everyone but generally ranges from 20 to 50 grams per day. Many people on a keto diet count “net carbs”, which is total carbohydrates minus fibre. Fibres are not counted in total carbohydrates, because they are not digested. Either way, this number of carbohydrates is very low and requires careful planning. Eating a little bit of starchy fruit or vegetables, sugary foods or whole grains can easily disturb your ketosis.
Question #5.) How Much Weight Can You Lose on the Keto Diet?
There is no doubt that a ketogenic diet may help stimulate weight loss – and it is easy to find anecdotal reports of radical shifts. Many people lost a lot of weight on the keto diet, they were obese when starting and had a lot of fat to lose. These individuals have somewhat radical transformations.
In a study published in the Journal of Clinical Endocrinology, 20 obese people who had followed a very low diet of keto for four months lost an average of 44 lbs (lbs), mainly from the body and visceral fat. In another study published, normal-weight adults who followed a restricted-keto diet without energy (calories) for six weeks lost about 4 pounds in both fat and lean body mass.
But long-term studies show that there is not much difference in weight loss between keto and other diets. A meta-analysis published in BMJ adults on a ketogenic diet (eating less than 50 grams of carbohydrates) compared with those on a traditional low-fat diet. After at least a year, those who were following the keto diet lost two extra pounds compared to the group that lowered fat.
Question #6.) What Fruits Are Keto Friendly?
Fruit, in general, is not the mainstay of the keto diet. With lots of natural sugar, the fruit generally has a lot of carbohydrates to include. But you can get small amounts of low-carb fruits, such as berries, avocado, and coconut. Here’s what would fit with a keto:
Berries: 3 g of net carbohydrates per half-cup.
Strawberry: 2 g net carbs per half-cup slices.
Blueberries: 4 g of pure carbs per ¼ cup.
Blackberries: 3 g net carbs per half-cup.
Chopped Coconut: 2.5 g net carbs per half-cup.
Avocado: 3 g net carbs per cup, cubes.
Question #7.) Can I Eat Snacks Like Popcorn, Oatmeal, and Yogurt on Keto?
Unfortunately, foods that are high in carbohydrates such as popcorn or oats will not match the keto diet. One cup of pop-up popcorn contains 5g of pure carbs, which maybe half of the carbohydrate serving throughout the day. It is also worth noting that a cup of popcorn is not a big meal; it contains only 30 calories and does not contain fat, so it will not be full. Oats probably don’t work either. About ¼ cup of regular dried oats contains 12 grams of pure carbs for 77 calories and only 1 gram of fat.
As for yoghurt, it depends on the type you choose and whether it is compatible with the keto. For example, about half a 7-ounce container of Greek yoghurt contains 5 percent of regular milk fat which contains 3 g of carbohydrates. Remember to choose regular versions because the flavour will add more sugar (and therefore more carbohydrates).
Keto-compatible snacks include the best nuts (1 ounce of almonds contain 3 g of pure carbs), seeds (½ cup of sunflower seeds contain 3 g of pure carbs), and small amounts of low-carb fruits such as berries. Spastic beef and non-messy vegetables like broccoli and cucumbers are other options for snacks on keto.
Question #8.) Should I Be Concerned About the Keto Flu?
If you are interested in the keto diet, you may have read about keto flu, which is an unpleasant side effect. The keto flu is definitely real. Your body works well on carbohydrates – that’s what it was designed for. When it turns into a fat-burning, it becomes less energy efficient. In keto, you have less energy available and you may feel sick and slow as if you had the flu. As your body naturally adapts to this new method of drawing energy, you will emerge from it. This may take up to two weeks.
Question #9.) Will the Keto Diet Give Me Kidney Stones?
The development of kidney stones is a concern if you switch to a diet with more protein. (Although the keto diet is again a moderate protein diet.) Consuming high levels of red meat and not drinking too much water may make the stones more likely. In the keto diet, you need to stay hydrated and replenish minerals like sodium, potassium, magnesium, and calcium). If not, it may increase the risk of side effects such as stones.
Previous research gives a small overview of the possibility of stone injury. A study published in the journal Child Neurology on children using the keto diet to control epilepsy found that about 1 in 15 of the advanced kidney stones, although oral potassium citrate supplementation reduced this risk. Talk to your doctor if you have risk factors, such as a family or a personal history of stones, about any precautions you should take when following a keto diet.
Question #10.) How Long Do You Need to Stay on the Keto Diet to Lose Weight?
Many people report losing weight fast on a keto diet. Research in the journal Clinical Endocrinology found that overweight people lost an average of 44 pounds over four months when following a very low-calorie diet. Do not spend more than 12 weeks on ketosis due to the uncertainty of its long-term risk of nutritional deficiency.
When people go into a keto diet and start to incorporate more carbohydrates into their day, they tend to regain some weight during this adjustment period. They will also regain all the weight they lost, and possibly more if they return to pre-keto ways to eat after feeling deprived in the plan.
Question #11.) How Will the Keto Diet Affect Your Cholesterol Levels?

A sweet innovation for quality
Some might recall that we went to Colombia last year to participate in the judging panel of the Cauca Best Cup event. During this event, we cupped the top coffees from the Cauca region that were already screened through by the local cuppers. The top 10 coffees were then sold through a live auction where the producers get to meet the buyers who successfully won the bid. Together with this event, there was a separate silent auction held by Cafe Imports and Banexport. In this silent auction, there were 10 coffees from the Huila region of different varietals and processing methods. Some of the varietals included Geishas, Pink Bourbon, Orange Bourbon,  Red Bourbon, Caturra and Castillo. 8 of them were washed coffees, 1 was natural-processed and 1 was honey-processed. These are micro-lots which ranged from 2 bags to 15 bags. We had an amazing experience cupping through such a spread of interesting coffees. 
Some of the coffees were super delicious but we had our mind set on that one special coffee on the table after the cupping. It also ended up to be the highest scoring coffee amongst the 10 cups after the scores were tabulated from almost 30 roasters/cuppers from around the world. The coffee turned out to be a honey-processed Red Bourbon/Caturra lot from Finca El Mirador.
As it was a silent auction, we had no idea how much other buyers will bid for it so we had to work out our sums to decide how much we would be willing to pay for this special coffee. In the end, we placed a bid of US$7.00/lb. This is easily double the price of what most of the specialty coffee producers would receive. Maybe lady luck was smiling upon us or maybe other buyers/roasters were bidding for the Geishas and Pink Bourbon, we actually won the bid! To cover the cost of event and logistics incurred by Banexport, US$0.60/lb was added on to our bid price, so the final price for this coffee was US$7.60/lb. 
What made this coffee score so high amongst the panel of buyers/roasters? Some of the taste descriptors from the cupping session included: blackberry, red apple, nectarine, soft peach, vanilla, panela, oreo cookie, passionfruit and wine. For us, it was that melange of berries, red wine, sugary goodness and lush mouthfeel that really left an impression. At that time, we were also sourcing for a coffee which had qualities that we felt would be suitable for competitions. So this lot seemed to fit the bill and we were glad that our friend, Hee Wei, from Vanilla Bean in Johor decided to compete in the Malaysia Barista Competition earlier this year with this auction lot.
There is plenty to share about this coffee from El Mirador. Firstly, this farm is owned by Fanny Vargas and his son, Elkin Guzman. The farm was handed down from Elkin's grandfather, Tomas Vargas. It is located in the municipal of Pitalito in the Huila department. The farm is approximately 18.7 hectares, with about 11 hectares used for coffee production. Elkin studied agricultural engineering in the local university and after graduation, he started working in his family farm full time. That was more than 8 years ago. As a young and progressive producer, Elkin is using new technologies in innovative ways to improve his techniques in terms of cultivation, harvest, and process. 
The auction lot came from Lot 13th at the farm, which consists of 2200 trees. In order to develop coffees with a particular process, quality control protocols have been established at the farm:
1) Picking process: pickers are trained to pick only the ripe beans by recognising the colour of the cherries and using the Brix meter to measure the development of sugars. For this Red Bourbon/Caturra lot, the average Brix measure is 25 degrees. This measure was identified to reflect optimal ripeness of the cherries for these 2 varietals. 
2) Balseo: The cherries are submerged in water, afterwhich a manual mesh is used to remove low quality beans such as the dry, empty beans as well as those affected by coffee rust. This process also are clear out unwanted "dirt" such us leaves or sticks. 
3) Filtering out unripe beans: in the wet mill, these unripe beans are selected by hand to be removed from the optimum cherries. 
The cherries are picked in the morning, depulped with some mucilage left on the beans and dried just after mid-day. Most coffees in Colombia are dried for 5-7 days in parabolic dryers, but for this special lot, Elkin dried the coffee in parabolic dryer on African raised beds for more than 30 days. The humidity level in the dryer is controlled by allowing air flow with openings on the top and sides of the dryer. The temperature is kept at an average of 30℃.  The objective is to slow down the drying process to enhance the sweetness in this honey processed lot. 
The result of the above is a super sweet coffee that has comes with bountiful notes of berries (closer to blueberries), dried fruits and a decadent finish reminiscent of Moscato wine.

The progressive nature of specialty coffee has really pushed the boundaries of coffee cultivation and processing. Is the Keto Diet Healthy? When everyone – not just celebrities – appears to be following a ketogenic diet, you want to know if this will work for you. The so-called keto diet is a moderate-protein and low-carb diet plan. But while people say you can eat all the butter and bacon you want, is this true or healthy to follow a keto diet? Is the keto diet the best way to lose weight? Can it cause more problems than it solves?
Here are 13 Burning questions answered about the “Keto Diet”.
Question #1.) Is the Keto Diet Healthy?
The first question first, Is the Keto Diet Healthy? In past, the keto diet was used to control seizures in people with epilepsy. But today, the Keto Diet is a trend. And many people use it for weight loss. Eating high levels of saturated fat may pose a risk to heart health in the long run, And in the short term, severely low-carb diets may come with unpleasant side effects, such as constipation and headache. Given the restricted nature of keto, (it kills most fruits, dairy products, whole grains, and many vegetables and legumes), it may also fall short of certain nutrients, such as fibre.

However, proper dieting of keto, especially with the help of a medical professional, should reduce negative health effects.
Question #3.) Is Ketosis Bad?
Ketosis is when your body turns into a fat-burning state and breaks down fats into ketone bodies that are used as energy. Beyond the keto flu, several studies have shown that entering ketosis through the diet has no real negative results in the short term.
But long-term studies are needed to truly assess impact. The bottom line: putting your body in a keto for a limited time is likely not harmful.
Question #4.) How Many Carbs Do You Eat on a Keto Diet?
The keto diet generally consists of 70 to 75 percent of fats, 20 to 25 percent of protein and 5 to 10 percent of carbohydrates. The exact number of grams (grams) of carbohydrates varies for everyone but generally ranges from 20 to 50 grams per day. Many people on a keto diet count “net carbs”, which is total carbohydrates minus fibre. Fibres are not counted in total carbohydrates, because they are not digested. Either way, this number of carbohydrates is very low and requires careful planning. Eating a little bit of starchy fruit or vegetables, sugary foods or whole grains can easily disturb your ketosis.
Question #5.) How Much Weight Can You Lose on the Keto Diet?
There is no doubt that a ketogenic diet may help stimulate weight loss – and it is easy to find anecdotal reports of radical shifts. Many people lost a lot of weight on the keto diet, they were obese when starting and had a lot of fat to lose. These individuals have somewhat radical transformations.
In a study published in the Journal of Clinical Endocrinology, 20 obese people who had followed a very low diet of keto for four months lost an average of 44 lbs (lbs), mainly from the body and visceral fat. In another study published, normal-weight adults who followed a restricted-keto diet without energy (calories) for six weeks lost about 4 pounds in both fat and lean body mass.
But long-term studies show that there is not much difference in weight loss between keto and other diets. A meta-analysis published in BMJ adults on a ketogenic diet (eating less than 50 grams of carbohydrates) compared with those on a traditional low-fat diet. After at least a year, those who were following the keto diet lost two extra pounds compared to the group that lowered fat.
Question #6.) What Fruits Are Keto Friendly?
Fruit, in general, is not the mainstay of the keto diet. With lots of natural sugar, the fruit generally has a lot of carbohydrates to include. But you can get small amounts of low-carb fruits, such as berries, avocado, and coconut. Here’s what would fit with a keto:
Berries: 3 g of net carbohydrates per half-cup.
Strawberry: 2 g net carbs per half-cup slices.
Blueberries: 4 g of pure carbs per ¼ cup.
Blackberries: 3 g net carbs per half-cup.
Chopped Coconut: 2.5 g net carbs per half-cup.
Avocado: 3 g net carbs per cup, cubes.
Question #7.) Can I Eat Snacks Like Popcorn, Oatmeal, and Yogurt on Keto?
Unfortunately, foods that are high in carbohydrates such as popcorn or oats will not match the keto diet. One cup of pop-up popcorn contains 5g of pure carbs, which maybe half of the carbohydrate serving throughout the day. It is also worth noting that a cup of popcorn is not a big meal; it contains only 30 calories and does not contain fat, so it will not be full. Oats probably don’t work either. About ¼ cup of regular dried oats contains 12 grams of pure carbs for 77 calories and only 1 gram of fat.
As for yoghurt, it depends on the type you choose and whether it is compatible with the keto. For example, about half a 7-ounce container of Greek yoghurt contains 5 percent of regular milk fat which contains 3 g of carbohydrates. Remember to choose regular versions because the flavour will add more sugar (and therefore more carbohydrates).
Keto-compatible snacks include the best nuts (1 ounce of almonds contain 3 g of pure carbs), seeds (½ cup of sunflower seeds contain 3 g of pure carbs), and small amounts of low-carb fruits such as berries. Spastic beef and non-messy vegetables like broccoli and cucumbers are other options for snacks on keto.
Question #8.) Should I Be Concerned About the Keto Flu?
If you are interested in the keto diet, you may have read about keto flu, which is an unpleasant side effect. The keto flu is definitely real. Your body works well on carbohydrates – that’s what it was designed for. When it turns into a fat-burning, it becomes less energy efficient. In keto, you have less energy available and you may feel sick and slow as if you had the flu. As your body naturally adapts to this new method of drawing energy, you will emerge from it. This may take up to two weeks.
Question #9.) Will the Keto Diet Give Me Kidney Stones?
The development of kidney stones is a concern if you switch to a diet with more protein. (Although the keto diet is again a moderate protein diet.) Consuming high levels of red meat and not drinking too much water may make the stones more likely. In the keto diet, you need to stay hydrated and replenish minerals like sodium, potassium, magnesium, and calcium). If not, it may increase the risk of side effects such as stones.
Previous research gives a small overview of the possibility of stone injury. A study published in the journal Child Neurology on children using the keto diet to control epilepsy found that about 1 in 15 of the advanced kidney stones, although oral potassium citrate supplementation reduced this risk. Talk to your doctor if you have risk factors, such as a family or a personal history of stones, about any precautions you should take when following a keto diet.
Question #10.) How Long Do You Need to Stay on the Keto Diet to Lose Weight?
Many people report losing weight fast on a keto diet. Research in the journal Clinical Endocrinology found that overweight people lost an average of 44 pounds over four months when following a very low-calorie diet. Do not spend more than 12 weeks on ketosis due to the uncertainty of its long-term risk of nutritional deficiency.
When people go into a keto diet and start to incorporate more carbohydrates into their day, they tend to regain some weight during this adjustment period. They will also regain all the weight they lost, and possibly more if they return to pre-keto ways to eat after feeling deprived in the plan.
Question #11.) How Will the Keto Diet Affect Your Cholesterol Levels?
The interesting thing about the keto diet is that it often leads to weight loss, which can improve blood fat levels per se. At the same time, you may consume more saturated fats than ever before, in the form of butter, bacon, cream and coconut oil.
We have long been warned that eating excess saturated fat can raise cholesterol and thus put us at risk of heart disease. For this reason, many experts are concerned that increased fat intake may be particularly harmful to people who already have heart disease or have risk factors for it.
A study of obese patients on a keto diet found that after 24 weeks, total LDL cholesterol decreased and HDL good cholesterol increased. This can reflect the fact that any weight loss, regardless of how it is achieved, tends to lower cholesterol. As we mentioned earlier, people with risk factors for heart disease need to consult their physicians before trying to follow a keto diet. Research linked, as in this study in the British Journal of Nutrition in April 2013, that the diet is low in carbohydrates but contains a high percentage of fats, proteins and weak arteries in those who are at risk of developing cardiovascular diseases.
What may come up with this is the type of fat you consume in keto. A meta-review and meta-analysis in the issue of the Journal of the Academy of Nutrition and Dietetics considered the effect of a low-fat versus low-carb diet on blood lipids. While eating less saturated fat was associated with lower cholesterol levels, eating more monounsaturated fats (such as olive oil or avocado) in the context of a high-fat diet was associated with increased levels of HDL cholesterol.
Question #12.) How Much Protein Will You Eat on the Keto Diet?
The usual keto diet may include 20 to 25 percent of the calories coming from protein. One common misconception is that this diet has a high protein content, where it is a moderate-protein diet. Many proteins can be converted and broken down as sugar for use as an energy source.
However, you don’t want to cut protein much. You want to be able to stay in the ketosis without sacrificing the lean body mass [muscles] if you lose weight. This can loosely equal 1.2 to 1.5 g of protein per kilogram of body weight. (The current recommended daily allowance is 0.8 grams per kilogram of body weight, according to Harvard Health Publishing, so in the case of keto, it is much more.) Therefore, a woman weighing 140 pounds might aim for 76 to 95 grams per day. For reference, the 3.5-ounce skinned chicken breast provides 31 grams of protein.
One of the best sources of protein in the keto system is fatty fish (like salmon or mackerel), as it provides a source of heart-healthy protein and omega-3 fatty acids. Eggs are another good option. There is 6 grams protein and 5 grams of fat present in one large egg contains.
While the keto diet may focus on fat, this does not mean that you should eat bacon and sausage throughout the day. There is room for lean proteins like chicken or cod. Just remember to add fat (for example, roasting chicken with olive oil) to these low-fat sources. Many cuts of beef are also considered lean or extra lean because they contain 10 g or less of total fat, plus a modest amount of saturated fat (4.5 or 2 g or less, respectively). These include eye of round roast and steak, sirloin tip side steak, top round roast and steak, bottom round roast and steak, and top sirloin steak.
Question #13.) Can the Keto Diet Reverse Type 2 Diabetes?
Although counting carbohydrates is not the first tool to help someone control insulin, distributing carbohydrates evenly throughout the day may be easier to stick to – it’s not off the table, especially with stronger emerging research.
That’s right: Some preliminary research suggests that keto may be a good approach for some people with type 2 diabetes. For example, a small study in the Journal of Internet Medical Research has randomly distributed overweight adults with diabetes from Type 2 into two groups: one group consumed a keto diet and a control group that consumed a low-fat diet recommended by the American Diabetes Association. After 32 weeks, the keto group experienced a decrease in A1C (an average glycemic measure over three months) compared to the control group, and reduced half of the A1C to less than 6.5 percent (less than 5.7 percent considered normal). The keto group also lost 28 pounds, compared to about 7 pounds for the control group.
But long-term studies are needed. Keto can pose health risks for people with diabetes, especially if you follow it without supervision by a medical professional. More importantly, anyone taking drugs to reduce blood sugar or using insulin must realize that cutting carbohydrates significantly, as they should do with keto, can lead to a serious drop in blood sugar, as research shows. This untreated condition, called hypoglycemia, may lead to seizures, unconsciousness, and blurred vision. (Experts warn that type 1 diabetics should not try a keto diet.)
Bottom Line:
Be sure to work with your doctor if you have type 2 diabetes, and manage your expectations. Ask your doctor the same question that Is the Keto Diet Healthy for you to follow of not. Not only is there no consensus on whether keto is an effective diet approach for diabetes, but according to research published in the European Journal of Nutrition, it’s also tough to stick with. Keep in mind that type 2 diabetes cannot be reversed, but it can be put into remission.
