Christmas pudding [...] [is] a boiled mass of suet - a raw, hard animal fat [...] often replaced with a vegetarian alternative - as well as flour and dried fruits that is often soaked in alcohol and set alight. [...] [I]t is a legacy of the British Empire with ingredients from around the globe it once dominated [...].
Christmas pudding is a relatively recent concoction of two older, at least medieval, dishes. [...] “Figgy pudding,” immortalized in the “We Wish You a Merry Christmas” carol, appeared in the written record by the 14th century. [...] During the 18th century, the two ["plum pottage" and "figgy pudding"] crossed to become the more familiar plum pudding – a steamed pudding packed with the ingredients of the rapidly growing British Empire of rule and trade. The key was less a new form of cookery than the availability of once-luxury ingredients, including French brandy, raisins from the Mediterranean, and citrus from the Caribbean.
Few things had become more affordable than cane sugar which, owing to the labors of millions of enslaved Africans, could be found in the poorest and remotest of British households by mid-century. Cheap sugar, combined with wider availability of other sweet ingredients like citrus and dried fruits, made plum pudding an iconically British celebratory treat, albeit not yet exclusively associated with Christmas.
Such was its popularity that English satirist James Gillray made it the centerpiece of one of his famous cartoons, depicting Napoleon Bonaparte and the British prime minister carving the world in pudding form.
Tumblr media
In line with other modern Christmas celebrations, the Victorians took the plum pudding and redefined it [...], making it the “Christmas pudding.” In his 1843 internationally celebrated “A Christmas Carol,” Charles Dickens venerated the dish as the idealized center of any family’s Christmas feast [...].
Three years later, Queen Victoria’s chef published her favored recipe, making Christmas pudding, like the Christmas tree, the aspiration of families across Britain.
Christmas pudding owed much of its lasting appeal to its socioeconomic accessibility. Victoria’s recipe, which became a classic, included candied citrus peel, nutmeg, cinnamon, lemons, cloves, brandy and a small mountain of raisins and currants – all affordable treats for the middle class. Those with less means could either opt for lesser amounts or substitutions [...]. Eliza Acton, a leading cookbook author of the day who helped to rebrand plum pudding as Christmas pudding, offered a particularly frugal recipe that relied on potatoes and carrots. [...] The high alcohol content gave the puddings a shelf life of a year or more, allowing them to be sent even to the empire’s frontiers during Victoria’s reign [...].
---
In the 1920s, the British Women’s Patriotic League heavily promoted it – calling it “Empire Pudding” in a global marketing campaign. They praised it as emblem of the empire that should be made from the ingredients of Britain’s colonies and possessions: dried fruits from Australia and South Africa, cinnamon from Ceylon, spices from India and Jamaican rum in place of French brandy.
Press coverage of London’s 1926 Empire Day celebrations featured the empire’s representatives pouring the ingredients into a ceremonial mixing bowl and collectively stirring it.
The following year, the Empire Marketing Board received King George V’s permission to promote the royal recipe, which had all the appropriate empire-sourced ingredients. Such promotional recipes and the mass production of puddings from iconic grocery stores like [Sains-bury's] in the 1920s combined to place Christmas puddings on the tables [...].

There are two things that are more difficult than making an after-dinner speech: climbing a wall which is leaning toward you and kissing a girl who is leaning away from you.
- Winston S. Churchill
I’ve had quite a few happy times at the Oriental Club in London. Dining there is an incredibly civilised and lively experience. Dining in the Library Room under the watchful gaze of the club’s first and only President in 1824, Arthur Wellesley, the 1st Duke of Wellington, who first cut his military chops with his older brother, Richard, in British India, can be a little distracting.
Should the after dinner speeches drone on there is a quick escape to one of my favourite bars, the Calcutta Light Horse Bar. Tradition has it that any member of the club who rings the bell has to buy a round for everyone present in the bar. One should only do so if you have something to celebrate.
Most food in gentlemen clubs in London’s Clubland is fine but nothing truly outstanding. But the Oriental Club has an excellent reputation as a good place to dine, and most surprisingly for its Indian food. But that isn’t too surprising given the Club’s historic roots with the East India Company and of its strong British India links. In 1861 the Oriental Club's then Chef, Richard Terry, wrote one of Britain’s first Indian Cookery Books simply entitled Indian Cookery. In it one could find such wonderful dishes as Periwinkle Curry, Bullachong and Cuthree, Palantee and Bird Room Stew.

Team Wild Fang Headcanons
After Nile and demure found out that Kyoya’s rival’s name was Gingka, they insisted on playing the game Jenga at least once a week just to annoy him.
They all have dual citizenship to Savannah.
They were given a small apartment by the Savannah government as thanks for their help to expand Savannah’s trading during the World Championships.
All arguments consist of everyone switching back and forth between like four central languages. Eventually they all get so confused they just stop.
Nile and Demure’s families moved to Savannah after the World Championships.
Benkei didn’t start traveling with the team until the match in India. Before that, he was just listed on the paperwork and honestly had no idea that Kyoya wrote his name down.
Their group chat is extremely chaotic. Like next level chaos and switches topics every 45 seconds.
All of their families absolutely adore the group and consider them all to be family literal moments after meeting them.
The age order of the group is Benkei, then Nile, followed really closely by Demure, and finally Kyoya. They all (but especially Nile) tease Kyoya about this fact constantly.
They all have matching fang charms. Kyoya wears his as a necklace, Nile wears theirs hanging from their belt, Demure wears xyrs as an earring, and Benkei wears his on his backpack.
They all are super protective over Kakeru, who adores having 3 new older siblings as well as Kyoya.
They all are earning each other’s first languages and try to help each other with it as well. Kyoya and Benkei are learning Arabic and Swahili, Nile is learning Japanese and Swahili, and Demure is learning Japanese and Arabic.
They are insanely popular in Savannah as they are essentially the country’s first celebrities so they get a ton of attention.
They all get jobs working at a nature reserve/park in Savannah after the World Championships (part time jobs). Kyoya is a park ranger, Demure is a tour guide, Nile is a cultural educator at the cultural center, and Benkei is a chef in the park building’s cafe.
Demure randomly started carrying a bat with xem. And no, xe will not ever explain how or where xe got it.
Kyoya randomly got really into rock climbing in Savannah and no they all do it as a way to hang out and do team bonding outside of just regular battle practice.
They get matching tattoos of their team crest over their hearts when they’re older.
When Kyoya got a pet cat they all begged him not to name it Lion, especially Demure. Kyoya proceeded to name it Simba, which is lion in Swahili... Demure’s first language. Demure is still annoyed by this.
They have a shared video folder of Kyoya doing cat-like things that they use as blackmail.
Demure is essentially the team parent and xe is so tired of Kyoya’s grumpiness, Benkei’s impulsiveness, and Nile’s complete disregard for their personal health at this point.
Nile is essentially a world class strategist and is amazing with planning battles or events.
They use wrestling matches to solve nearly everything from arguments to Kyoya sitting in the good spot on the couch and even just being bored. They always all end up laughing, even if they were originally fighting.

Horror of horrors! I let my 19th century man take a Grand Tour for enrichment purposes, but he has, unfortunately, now arrived in Italy. He has begun eating—GARLIC! In most of his meals. How am I supposed to convince him to drop this deplorable habit when even the ladies in Italy eat garlic? Please help me save my Man from the cruelest of fates—becoming Italian!!!
Hope is not lost! There's a lot more information I need to know before I can give you my condolences for hearing the dirge of the organ-grinder.
While today we think of Englishmen as being harmed by garlic and sunlight, and unable to enter a residence without a proper invitation—historically they have eaten a spicier diet, with Indian influences like Mulligatawny Soup from over 200 years ago. It's the late Victorian types (ironically raised on imperialist adventure fiction for boys) who need their plain toast cut into pieces before they can consume it.
An earlier 19th century Englishman might be a fan of celebrity chef William Kitchiner. The 1822 (fourth) edition of his Cook's Oracle sings the praises of "the Whip and Spur that Students of long standing in the School of Good Living are generally so fond of enlivening their palate with, i.e. Cayenne and Garlick" and has many spicy and garlicy recipes.
As The Practical Cook, English and Foreign of 1845 acknowledges, "there is scarcely an English family among the higher or middle classes, who does not number among its members a retired military or civil servant of the East India Company" and he probably has a taste for Anglo-Indian cookery, so the book has a whole chapter. Your early-mid 19th Englishman enjoys a variety of ethnic cuisines and may even relish an Irish stew!
Here is another possibility: could your "English" man actually be French? You might not think of this prospect, but the reality is there are a lot of 19th century French anglophiles who love their redingotes and twine anglais. Every 19th century man aspires to speak la langue de Molière—but when he orders a cup of coffee on his trip to Paris, does the waiter give him a knowing nod and bring him Le Charivari with his beverage, or start speaking English and offer him The Times?
Tumblr media
Even in the latter case, he may have only developed an unfortunate predilection for the pungent allium. It's not that uncommon for a 19th century man to enjoy piquant recipes—yes, even if he's English.
You can try offering him a variety of foods to break him from this Mediterranean passion, as he may find that less highly spiced foods agree more with his digestion (which will be true especially as he ages).

From the scrubland of Argentina and the kitchens of Japan all the way to the South Pole, these women are writing the next chapter of history.
This Is What a Polar Explorer Looks Like
by Amy Crawford
Last year, 33-year-old Harpreet Chandi became the first woman of color to make the difficult solo trek to the South Pole. The harrowing 40-day, 700-mile journey—which Chandi described as “like traveling inside a marshmallow”—was “about so much more than me.” She hopes to “inspire people to push their boundaries, no matter their background, gender, or color of their skin.”
How the Enchanting, Elusive Pink Fairy Armadillo Became One Scientist’s Obsession
by James Hall
Conservation biologist Mariella Superina began studying armadillos in western Argentina 25 years ago. Today, she leads an international team that monitors global populations of anteaters, sloths, and armadillos. But, thanks to her obsession with the pink fairy armadillo, she has also become the leading expert on these diminutive, enigmatic animals. She even hosted a live pink fairy armadillo—which turned out to be a real diva—in her living room in the name of science.

In India, These Trailblazing Female Stunt Bikers Rule the Road
by Shubha Menon

Ngonnso Will Finally Come Home to Cameroon
by Ye Charlotte Ming
For years, Sylvie Njobati would walk by a life-size statue of a woman in Kumbo, in the northwest region of Cameroon. Meticulously outlined with hundreds of seashells, the statue depicts Ngonnso, the queen mother of Nso people, a cultural group in the region whose origin can be traced to the 14th century. But the statue is only a replica. The real one was 3,000 miles away, in a glass box at Berlin’s Humboldt Forum, a museum mired in controversy for its connection to Germany’s colonial past. Now, thanks to work by activists such as Njobati, Ngonnso is coming home to Cameroon.

One Woman’s Quest to Create Truly Japanese Cheese
by Joan Bailey
“One of my goals is to introduce Japan through cheese,”says cheesemaker Chiyo Shibata of Fromage Sen cheesery in Chiba Prefecture. Cheese is not a historical part of the Japanese diet, but Shibata believes it could be part of its future—especially as the country faces the impact of climate change. She uses local Japanese microbes and flavors such as Sakura blossoms and sake to create a uniquely Japanese product.
She Was There
This ongoing Q&A series features female scholars who are writing long-forgotten women back into history. Among them are historian Rebecca Hall, who is telling the untold stories of the women who led slave revolts; scholar Pamula S. Murray, who has rediscovered the female revolutionaries behind Latin American independence; documentary filmmaker Immy Humes, who has focused her lens on lone women as they made their way into a man’s world; and many more.
