Day 12 #AIP . . . Wanted some Cuban/Caribbean type food so I made some cauliflower rice with mined mini peppers, onion, garlic added some cumin and lime juice obviously grated cauliflower, some green Spanish olives finished the dish off with fresh cilantro. It was all cooked in coconut oil. And had some smashed avocado on the side. Some DOUCHENOZZLE tried to tell my sister that being vegan was the same as being diabetic. Yeah okay. Making a CHOICE about your dietary habits everyday is the exact same as having to carefully count all your carbohydrates, restrict all your sugars, and give yourself shots of an artificial hormone multiple times a day or you'll DIE. "I wanted to punch him the throat, but that's not professional." -@celiacsucks (my sister, and a stronger person than me) I only know what she goes through from an outside perspective, and it is rough. If she could CHOOSE not to do it, she would. If I could CHOOSE to take it from her and transfer it to myself so she had one less chronic illness to deal with, I would. Comparing something that you could wake up tomorrow and decide you don't want to do anymore and it would have little to no impact on your life to an illness where if you decided you didn't want to deal with it anymore you would literally die is a bitch ass move. Like shut the hell up, you pretentious asshole.

Happy first day of Celiac Awareness Month! Here's a rare picture of me not a complete bloated mess (although lately it's been mostly under control)! There is no cure for celiac and the only treatment is a strict gluten-free diet. When a person with celiac disease ingests gluten (can be as small as a breadcrumb, or food sharing the same cooking surface) the body responds by attacking itself causing intestinal damage. Over time the villi in the lining of the gut gets broken down (while undiagnosed/if still ingesting gluten) and is unable to absorb nutrients. This is why cross contamination is such a big deal and needs to be taken seriously. There are so many side effects that come with celiac and some that I personally suffer from include; anxiety, brain fog, depression, bloating, gas, fatigue, mood swings, mouth ulcers, short temper, joint pain and so much more. I do not eat gluten free to be trendy or hip I do it because I have to. Half the products on the market that are "gluten free" either 1. Taste like 💩 and/or 2. Are processed in a facility that also processes gluten; so its safest for us to stick to whole food sources. Gluten can be found in makeup, tooth paste, bath products and even deodorant but does not need to be marked gluten free because it's not food... #goldenmilk . . . So I did it. Made it to day 10 nothing out of my AIP diet. Been great. Feeling so much better....Until stress hit my house and so did a bag of fries. Said "gluten free" on the package I only had a few. 20mins people.......20 freaken minutes and headache, dizzy, nauseous, shooting pains, hot/cold. Awesomeness. Awesomeness. Totally not worth it. . . . Made some golden milk to make me feel better. Finger crossed it helps.
