Garden Chickpea Salad (Vegetarian)
On a hot day --do we count them still?-- this hearty Garden Chickpea Salad makes a delicious and refreshing lunch. I feel quite chuffed that half of the ingredients --well, at least a third!-- for this nutritious salad comes from my garden. The mint is fragrant, the Green Onion is tangy and crisp, and the Cherry Tomatoes are just wonderfully juicy, with that lovely hint of sweetness! Best eaten in the sunshine at lunch; it really does feel like a holiday! Happy Thursday!
Ingredients (serves 1)
1 small Green Onion
half a dozen leaves fresh mint
1 tablespoon olive oil
1 tablespoon apple cider vinegar
a pinch of salt and freshly cracked black pepper
15 fresh(ly picked), ripe Cherry Tomatoes
1/4 cucumber, rinse
1 cup tinned chickpeas
60 grams/2 ounces Feta Cheese
Finely chop Green Onion, and spoon into serving plate. Finely chop mint, and add to the Green Onion. Drizzle with olive oil and apple cider vinegar. Season with salt and black pepper; give a good stir.
Rinse Cherry Tomatoes thoroughly, then, cut them in halves. Cut cucumber into slices, then, cut these into quarters. Add Cherry Tomatoes and cucumber to the plate, and gently toss to coat in dressing. Set aside.
Rinse and thoroughly drain chickpeas. Then, add them to the plate, and toss once more to combine and coat in dressing. Crumble Feta on top.
Chill in the refrigerator, at least one hour.
Serve Garden Chickpea Salad cold, with a warm.
