Ingredients: 500g chicken, diced. 2 ripe mangoes, peeled and diced. 1 onion, finely chopped. 2 tomatoes, chopped. 3 cloves garlic, minced. 1-inch ginger, grated. 2 green chilies, chopped. 1 tsp cumin seeds. 1 tsp coriander powder. 1/2 tsp turmeric powder. 1/2 tsp chili powder. 1/2 cup coconut milk. 2 tbsp oil. Salt to taste. Fresh coriander leaves for garnish.
Instructions: Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions, garlic, ginger, and green chilies. Saut until onions turn golden brown. Add diced tomatoes and cook until they turn soft and mushy. Add coriander powder, turmeric powder, and chili powder. Mix well and cook for 2 minutes. Add diced chicken pieces and cook until they turn white. Add diced mangoes and coconut milk. Stir well. Cover and simmer for 15-20 minutes or until the chicken is cooked through and the curry thickens. Adjust salt according to taste. Garnish with fresh coriander leaves. Serve hot with rice or naan.

Lentil Apple Pepper Curry
Lentils...apples...peppers...in a curry...you betcha - savory, flavorful, high in fiber, easy to fix...all these things I'm looking for as part of my healthy eating plan.  This curry works well served as is or hot on a bed of cold chopped romaine or on a bed of hot, steaming brown basmati rice...however much work you choose to go to.  If your local grocers doesn't carry garam masala or madras curry powder try a nearby Asian grocery store.  PS. this is also excellent served cold the next day so can be an on-the-go lunch.
oil
1 yellow onion, diced
2 c. red lentils, rinsed
1 1/2 c. half and half
1 + 1 c. hot water
1 t. thyme, powdered
1 t. turmeric, powdered
dash chili powder
1 1/2 t. hot curry powder
1 t. garam masala
1 T. madras curry powder
1 t. salt1 bell pepper, seeded, diced
2 apples, cored, diced with the skin on for more color and fiber
3 T. garlic, minced
1 t. ginger, fresh grated fine
1/2 c. tomato sauce
Saute onions in oil.  While that's cooking, pour lentils in a large sauce pan covering by 1" with water, cover.  Bring lentils to a boil then take off the heat letting residual heat finish the cooking.  Add half and half to 1 c. hot water, set aside.  The onions should be about cooked by this time so add thyme, turmeric, chili powder, garam masala, mardars curry powder, salt, bell pepper, apples, garlic, ginger, and tomato sauce - stir all ingredients in together well.  Check your lentils which should be about tender by now.  Drain off any excess liquid from lentils and add to onion mixture - stir in.  Add milk/water mixture stirring to simmer seasonings and other ingredients together.  Add second 1 c. of water only as needed for the lentils to finish cooking.  Like I said, this dish is even better the second day - hot or cold...you decide.

Here are two popular and yummy variations of Chingri Macher Curry: Traditional Bengali Chingri Macher Curry: Ingredients: 500g fresh prawns/shrimp, cleaned and deveined 1 large onion, finely chopped 2 tomatoes, finely chopped 2-3 green chilies, slit 1 tablespoon ginger paste 1 tablespoon garlic paste 1/2 teaspoon turmeric powder 1 teaspoon cumin powder 1 teaspoon coriander powder 1/2 teaspoon red chili powder (adjust to your spice preference) 1/2 cup coconut milk 2-3 tablespoons mustard oil (or any cooking oil of your choice) Salt to taste Fresh coriander leaves for garnish Instructions: Marinate the cleaned prawns with a pinch of turmeric powder and salt. Keep them aside for 10-15 minutes while you prepare the curry base. Heat the mustard oil in a pan until it starts to smoke. Then reduce the heat to medium and add the chopped onions. Sauté until they turn translucent. Add the ginger and garlic paste and continue to sauté for another minute until the raw smell disappears. Now, add the chopped tomatoes and green chilies. Cook until the tomatoes become soft and the oil starts to separate. Add turmeric, cumin, coriander, and red chili powder. Mix well and cook the spices for 1-2 minutes. Add the marinated prawns to the pan and cook them for 2-3 minutes until they turn slightly pink. Pour in the coconut milk and bring the curry to a gentle simmer. Cook for an additional 5-7 minutes or until the prawns are fully cooked and the curry reaches the desired consistency. Adjust salt and spices according to taste. Garnish with fresh coriander leaves. Serve the delicious Chingri Macher Curry with steamed rice or Bengali-style pulao. It creates a semi-thick gravy that can be eaten with roti or chapati, jeera rice, or even other Indian bread.   Ingredients for  Easy Tasty Homemade Rajma Masala CurryRecipe  For Cooking Rajma  (Serves 5 -6) 1.5 cup-Rajma (Soak rajma in enough water for at least 8-9 hrs) 3-Cloves 1- black cardamom 1/2 inch-cinnamon stick  1-  bay leaf 1/2 tsp-Salt 1.5 tbsp-Oil  1/2 tsp-Cumin seeds   1 cup- Onion  2 tsp-Ginger garlic paste 1/2 tsp- Turmeric powder 1.5 – 2 tsp -Chilli powder 2 tsp-Coriander powder 2 medium-Tomato(rip) chopped 2 tsp - Oil + butter (each) 1/2 cup-Hot water  as required 1/2 tsp-Garam masala powder   1/2 tsp-Kasoori methi   1.5 tsp-Butter (optional) 3 tbsp-Coriander leaves, chopped  2 tsp-Ghee (optional)  2-3 - Green chilies (slit) 3/4 tsp-Ginger (sliced) Water – As required Method for Easy Tasty Homemade Rajma Masala Curry Recipe Pressure Cook the soaked rajma for 1-2 whistles with the remaining ingredients listed under number 1-6 with required water. Splutter cumin seeds in oil as it is heated over a medium flame. Add the onion and continue cooking it until it softens and begins to change color.  Add the ginger-garlic paste and continue cooking until the raw scent is gone. Add the coriander, chili, and turmeric powders. Cook until the smell of raw meat is gone. Once added, boil the tomato until mashed. switched off the flame.  After cooling, add 3–4 tablespoons of water and grind to a fine paste. Over a medium burner, heat 2 tablespoons each of oil and butter. the ground paste, please. Cook with a cover on low heat for 6 to 8 minutes or until oil separates.  Along with the gravy, add the cooked rajma (add more boiling water if necessary). Mix well.  Add salt to taste, bring to a nice boil. For 10 to 12 minutes, cook. Mix thoroughly after adding the kasoori methi and garam masala powder. Turn off.  Add 2 tablespoons of butter and the chopped coriander leaves last. Again Taste-check for salt. Heat 2 to 3 tablespoons of ghee over medium-high heat. Add two slit green chilies and a teaspoon of thinly sliced ginger after turning off the stove. Lastly, Pour over the rajma after a brief stir. Before serving, allow it to rest for 10 to 15 minutes. Serve with papad, pickle and rice. How To Make Cumin Rice or Jeers - 1-1.5 tsp. cumin seeds are sputtering in 1.5 tbsp. oil. Add a bit of salt, along with the hot, cooked rice and chopped coriander.
