grilled cheese
the trick with grilled cheese is to slice a good melting cheese relatively thin and get a nice, consistent coat of some kind of oil on the outside of the bread. butter works fine, olive oil does too, coconut can if it's summertime and it's liquid, and my personal favorite is mayonnaise. (it crisps up nice and feels less greasy than the other oils when cooked - grilled cheese is already pretty rich, it doesn't really need the help from butter imo.) medium-high heat, flip once. (this part's the challenging part; the bottom of a grilled cheese goes from underdone to carbon in about 30 seconds, so it's kinda likely that the first of any batch of grilled cheese sandwiches is gonna be fucked up.) you can't go wrong with any kind of cheddar except hard cheddar, but i'm also a big fan of other cheeses. my favorite ones so far have been dill havarti and fresh brie. (also, dill havarti in a corn tortilla quesadilla is a *revelation* - the corn and the dill feel like they were made to go together.)
i like any kind of tomatoey soup as a side or dip for grilled cheese as well; the acidity helps cut the richness of the sandwich. go for a slightly sweet bisque or something if you're cooking with actual cheese, something more acrid and sour if you're cooking with american cheese. (you can do this but i don't want to eat it.)

Melted Cheeses With Chunky Tomato Broth
Serves 4
Ingredients: Tomato Broth: 2 Tablespoons salted butter, 1 Large onion, finely chopped, 1 Bay leaf, Kosher salt, 1 Tablespoon light brown sugar, 1 Tablespoon tomato paste, 4 Cups low-sodium chicken broth, 2 Tablespoons long-grain white rice, 1 (28-Ounce) can peeled whole tomatoes, Freshly ground black pepper
Melted cheese sandwiches: 6 Tablespoons salted butter, softened, 8 (1/2-inch-thick) slices white or multigrain French, Italian, or sandwich bread, 8 Ounces firm or semi firm cheese (such as a young Chedder, Colby, Monterey Jack, Fontina, Havarti, Gouda, or Baby Swiss), coarsely grated, 1 1/2 Tablespoons chopped fresh parsley, dill or chives for garnish
Make the soup: In a large saucepan or Dutch oven over medium heat, melt the butter. Add the onion, bay leaf, and 1/2 teaspoon salt and cook, stirring frequently, until soft and light golden, 5 minutes. Add the brown and tomato paster and cook, stirring, until fragrant, 1 minute. Add the chicken broth and rice. Reserve 3 tomatoes and add the remainder with the juices, adjust the heat to medium-high and bring to a simmer. Adjust the heat to meium-low, cover and continue to simmer, stirring occasionally, until the rice is very tender, 20 minutes. Remove the Bay Leaf.
In a countertop blender, or with an immersion blender, puree the tomato mixture until smooth; return the pureed mixture to the pot. Chop the reserved tomatoes, add to the soup, and stir. Taste and adjust the seasoning with additonal salt, if necessary, and pepper. Cover and keep warm over very low heat.
To make the melted cheese sandwiches: Set a large nonstick or cast-iton griddle over medium-low heat.
Spread about 2 teaspoons of the softened butter on 1 side of 4 slices of the bread, all the way to the edges. Place them on the work surface buttered-sides down. Top each slice with about 1/2 cup of grated cheeses. Spread the remaining softened butter on 1 side of each of the remaining 4 slices of bread. Place them on the sandwiches buttered-sides up. Transfer the sandwiches to the griddle or skillet and cook until golden brown and crisp, 4 minutes on each side. Transfer the sandwiches to a cutting board and cut crosswise into 4 or 5 strips.
Serve the tomato broth and melted cheeses together, sprinkling each bowl of broth with the chopped herbs.

What kind of cheese(s) are your favorite(s)?
Ohhhh, don’t ask me what my favorite child is...
Havarti is a big weakness for me, especially when it has dill. Smoked gouda is AWESOME but it gives me a migraine. Goat cheese I love mostly as a spread in a sandwich or a filling, but damn is it good. Hm...I loooove soft cheeses a lot. 
I think the only cheese I don’t really like is monterey jack and derivatives of it. I can only eat it in mixes, like colby jack or mexican cheese blends, but even then I’d prefer to not have the monterey in it at all.

I’ve combined my chicken liver bagna caudau or smooth mousse with a lb of 80/20 ground beef I browned on the stove in some more Penzeys spices and put it in a dish in the oven, topped with the rest of my Parm, and poured water into the metal baking tray underneath to create a bain marie which is something I’ve always wanted to do
And I made smoked salmon sandwiches with dill havarti

I'm crying in a Starbucks because they ran out of grilled cheese and I got a stupid turkey and dill havarti sandwich instead and it tastes like shit, and then they handed me a drink that didn't look right (black tea lemonade is usually orange, this was brown), and I was like "that looks wrong" and she was like "taste it" and it was FUCKING BLACK COFFEE MIXED WITH LEMONADE anyway she remade it correctly for me but I'm still upset because I really wanted that grilled cheese
