Puff pastry tarts with lemon-thyme curd
Flaky, crispy puff pastry is topped with a homemade lemon curd in this classic mini-tart recipe, perfect for breakfast, brunch, tea, or dessert. The savory pastry and the brightness of the lemon cut the sweetness of the curd, while fresh thyme adds a bit of minty, peppery complexity.

Makes 12 pastries.
Ingredients:
For the pastry:
1 batch puff pastry
For the curd:
1/2 cup granulated sugar
1/2 tablespoon agar agar flakes (or 1/2 tsp agar powder)
1/4 cup fresh lemon juice (about 2 lemons)
Zest of two lemons (about 1/2 Tbsp)
1/2 cup (120g) non-dairy margarine
2 sprigs fresh thyme leaves, removed from stems and minced
Pinch salt
Crack of black pepper (optional)
Replace the agar with 1 Tbsp of cornstarch in a pinch.
For the 'egg' wash:
1 Tbsp non-dairy milk
1 Tbsp agave nectar
Instructions:
For the curd:
1. Juice and zest the lemons. Scrub lemons under running water for a few seconds to clean their peels (especially if they're not organic). Use a surform tool to zest the lemons, or use a vegetable peeler to remove just the top layer of the peel (trying not to take too much of the white pith) into strips, and then mince.
Press and roll the lemons firmly against a hard surface to make juicing easier, then cut them in half and juice with a reamer or citrus press. Pass the juice through a fine sieve to remove seeds and fibers.
2. Make the curd. Whisk together sugar, agar or cornstarch, lemon zest, thyme, and salt in a small pot. Add lemon juice and stir to combine. Add margarine.
3. Bring curd mixture to a low boil over medium heat, whisking constantly. Lower the heat to medium low for and continue to cook, stirring often, or 10-30 minutes until thickened.
You will know it is thick enough when you can run a finger across the back of a spoon dipped in the curd, and the trail your finger made does not collapse back into the curd but remains visible. Keep in mind that it will thicken further as it cools!
4. Remove curd from the pot into a bowl and refrigerate until cold.
For the wash:
Whisk ingredients together in a small bowl. Set aside.
To assemble:
1. Cut your puff pastry in half and refrigerate the half you're not working with. Roll the other half out into an 8 x 12” (20 x 30cm) rectangle, then cut it into 6 4” (10cm) squares.
2. With a small, sharp knife, score the edges of each square to form a smaller square about two inches in diameter in the center of each pastry. Be careful not to cut all the way through the pastry—you just want to create a little bit of separation while leaving the square in one piece.

3. Refrigerate the dough squares you have formed and repeat with the other half of the puff pastry.
4. Brush the pastry squares with the 'egg' wash mixture and bake in a preheated oven at 400 °F (205 °C) for 10-15 minutes, until golden brown.
5. Using a sharp knife, gently trace over the previously scored squares to re-separate; press each central square down, leaving the outer borders puffy and elevated.

6. Add a dollop of lemon curd to each square and garnish with thyme, mint, or candied lemon peel, or drizzle with a mixture of powdered sugar and non-dairy milk.
Note that non-vegan recipes for puff pastry tarts with fruit curd often instruct you to bake them, for some or all of the cooking time, with the curd already added—with an eggless curd, I found that this resulted in the curd bubbling up and spilling over the sides of the pastries, then burning to the bottom.

We're doing our usual low-key Thanksgiving at home tomorrow, just the four of us. I'm a little tired of the sides I usually make, but I didn't have it in me this year to branch out and try new things. I also like my gross Southern sides too. I can't help it. Casseroles raised me. I did add an (eggless) baked macaroni and cheese because so much of what I'm making has eggs in it, and R can't have eggs. Today I made cornbread muffins for the cornbread dressing I'll assemble tomorrow. I mixed the broccoli casserole and put it in the fridge. I made spinach dip. I have sparkling wine and orange/mango juice for mimosas. Dominic said he's going to make some sausage cheese balls for breakfast, and I'm really looking forward to that. I also have things to make a cheese board, but I bet we won't even get around to that. Here's what we're eating tomorrow:
Sausage cheese balls, with mimosas for me.
Spinach dip with sliced red and yellow sweet peppers and tortilla chips.
Fried turkey and gravy, cornbread dressing, jellied cranberry sauce (from a can obviously), broccoli casserole, baked macaroni and cheese, green beans, and yeast rolls.
For desert I wanted to make a chocolate chess pie, but all the premade frozen pie shells were gone when I finally went grocery shopping yesterday, and though I'm capable of making a pie crust from scratch, that's more effort than I care to put forth, so I grabbed two different kinds of frozen apple tarts and apple dumplings, and we'll have those with vanilla ice cream, and I think that will be good enough.
Thanksgiving used to be one of my favorite holidays, but as I get older it seems more and more complex. Regardless, I am grateful to eat too much gross but delicious food with the family I love.

2 1/2 c. Bob's Red Mill Gluten Free 1:1 Flour Blend
1/2 c. BRM Tapioca Flour
1 tsp. BRM Xanthan Gum
1 tsp. Salt
1 tsp. Baking Soda
1/2 tsp. Baking Powder
1 c. Sugar
1 c. Brown Sugar
2 Tbsp. BRM Egg Replacer
4 Tbsp. Water
8 Tbsp. Butter (softened)
1 Tbsp. Vanilla Extract
1 c. Milk
1/4 c. Vegetable Oil
10 oz Enjoy Life Mini Semi-Sweet Chocolate Chips (Free From 14 Common Allergens)
Whisk together flour blend, tapioca flour, xanthan gum, salt, baking soda, baking powder
Mix egg replacement with water, let sit for one minute to thicken
Beat with electric mixer butter, sugar, brown sugar, egg replacement mixture, milk, oil, vanilla extract
Combine wet and dry ingredients
Fold in chocolate chips
Make balls 2-3 Tbsp in size
Bake at 350 12-16 minutes or until golden brown
Let stand and cool/firm up for 5-10 minutes

Umami, fermented, and fresh flavors are combined in this sweet-and-savory, thick, hearty stew. This dish is often called "pumpkin curry," but the "pumpkin" is actually kabocha—a sweet winter squash with edible green or orange skin.
This recipe uses fried TVP meatballs in place of the pork belly more commonly combined with kabocha (though pork meatballs are used in Burmese cooking, as in ဝက်သားလုံးဆီပြန်, pork meatball curry). The meat may also be omitted entirely: this curry is frequently vegetarian.

Ingredients:
For the spice mixture:
3-4 dried bird's eye chilis, or to taste
2 tsp ground turmeric
1 tsp of prik bon, cayenne pepper, or other ground red chili pepper may be substituted for the chilis. Substitute ground sweet paprika for all or some of the chili if you prefer less spice.
For the meatballs:
1 1/4 cup TVP
1 cup water
1 tsp vegetarian 'beef' broth concentrate or pho seasoning
1/2 Tbsp soy sauce
1 1/2 Tbsp vegetarian fish sauce, or 1 Tbsp liquid from jar of fermented bean curd + 1/2 Tbsp white miso paste (optional)
1/2 tsp spice mixture
1/4 cup chickpea flour (besan), toasted
1 Tbsp tapioca flour
1 1/2 Tbsp peanut oil
1 1/2 Tbsp sesame oil
I used toasted besan because it is common in Burmese cuisine and is excellent at holding eggless meatballs together. If you don't have any, you could substitute a baking egg replacer, or equal parts flour and tapioca starch.
Any neutral oil may be substituted for the peanut and sesame oils in the case of allergies.
For the soup:
700g kabocha, halved, seeds removed, and chopped
2 yellow onions, minced
1-inch chunk (10g) ginger, minced
4 cloves garlic, minced
1 green chili, sliced
Remaining spice mixture
About 3 1/2 cups water
1 tsp sugar
Salt to taste (if you're adding meatballs)
1/2 Tbsp soy sauce + 1 1/2 Tbsp vegetarian fish sauce (if not adding meatballs)
1 1/2 Tbsp peanut oil
1 1/2 Tbsp sesame oil
Chopped cilantro, mint, or green onion, to serve
Lime wedges, to serve
Kabocha can be found in the fall at an Asian grocery store, or at a Western grocery store that has a good selection of produce. You can substitute it with pumpkin or butternut squash.
Instructions:
For the spice mixture:
1. Toast chilis in a dry skillet on medium heat for a few minutes, agitating occasionally, until fragrant and a shade darker. Set aside.
2. Remove the skillet from heat and toast ground spices, stirring constantly, until fragrant, about 30 seconds. Remove from heat and allow to cool.
3. Grind chilis with turmeric in a mortar and pestle or spice grinder to desired consistency.
For the meatballs:
1. Whisk hot water, broth concentrate, soy and fish sauces, and about 1/2 tsp of the spice mixture together until combined. Add TVP and allow to rest for about 10 minutes, until hydrated.
2. Meanwhile, toast chickpea flour in a dry skillet, agitating every few minutes, until it is golden brown.
3. Add chickpea and tapioca flours to the TVP mixture and stir to combine. The TVP should hold its shape when pressed into a ball—add more besan if necessary. Shape TVP into balls of the desired size and refrigerate.
For the soup:
1. Halve the kabocha squash and scrape out the seeds, then chop each half into 2-inch (5cm) wedges and then cubes. There is no need to peel the squash. If you're having trouble chopping the squash, you can soften it by microwaving it for 30 seconds to a minute.
2. Heat oil on medium in a large pot. Add onion and a pinch of salt and cook for 10-15 minutes until golden brown. Add garlic, ginger, and chili and cook until no longer raw-smelling.
4. Add spice mixture and allow to fry for about 30 seconds, until fragrant.
5. Add squash and stir to combine. Fry for about 2 minutes more.
6. Add sugar, salt or soy and fish sauces, and water to cover. Cover and simmer until squash has softened, 10-15 minutes. Taste and adjust salt and spices.
To assemble: 1. Heat oil in a large skillet on medium. Fry meatballs, occasionally turning over carefully, until browned on all sides. Set aside.
2. Ladle in about 1/2 cup of broth from the soup and cook it down, turning meatballs occasionally, until the broth is thick enough to coat the meatballs.
3. Place meatballs and soup in serving bowls and serve warm with mint, cilantro and/or green onion, and lime. Serve alone or alongside rice.
Notes:
Typically, pork belly is fried in a mixture of minced or pureed onion, garlic, and spices (turmeric and chili powder, to which is sometimes added dried prawn), then water is added and the pork is boiled to produce the soup's broth. The squash is then added and simmered until tender. I have called for the meatballs to be fried separately, since they would fall apart with long simmering.
