En Papillote: Chilean Sea Bass

Twas the night before Thanksgiving. We’ve done all the prepping for the big day, but we realized that we needed to still eat dinner. For us, it was important to eat as healthy as we could before the morning Turkey Trot 5K that we’ll be running. And so what’s better than one of our favorite childhood meals: steamed fish? 
The best looking fish at the store that day was Chilean sea bass so we figured why not splurge a little and spoil ourselves with some good quality fish? And when you have fish that good, you don’t need much more than very simple ingredients in order to really let the flavor of the fish shine. And so, here’s the recipe to one of our favorite dishes cooked in a different manner than the traditional Asian sense. We decided to cook in en papillote. 
Ingredients:
Chilean sea bass fillet
Coconut aminos (substituting for soy sauce)
Rice wine vinegar
Sesame Oil
Minced fresh garlic
Fresh ginger slices
Celery, sliced as seen in the picture
Green onions, chopped
Sliced jalapenos (optional)
Sauce: 
There’s really no measurement to it. It’s all just a matter of preference and taste so taste your sauce as you combine ingredients. Remember that if it tastes too salty, you can always add a little bit of water. Also remember that when the fish steams, the juices will also combine with the sauce to help mellow out some of the saltiness. 
Combine the coconut aminos, rice wine vinegar, and sesame oil (a little goes a long way for this one) and stir. 
Mince up the garlic and add to the sauce. 
Slice up the fresh ginger, jalapenos (optional) and green onions and also add to the sauce. 
Stir to combine and the taste test to make sure it’s to your liking. 
Procedures:
Preheat the oven to 375 F.
Take a good size piece of parchment paper and place the fillet of sea bass on top. Season with salt and pepper. 
Add the sliced celery and sprinkle it on top of the fish. 
Pour the sauce over the fish and make sure it coats the entire fish. 
Fold over the parchment paper and then wrap it around tightly so that there’s no way for steam to escape. I just roll the edges so that it’s tightly wrapped into a little package and it almost looks like an empanada.
Place on a baking sheet (just in case) and into the oven for approximately 20 minutes (more or less depending on the size of your fish). 
Once done, carefully pierce or open the package and serve the fish with rice or, if you’re eating low carb like me, with a side of vegetables!

Filé de peixe no papelote

INGREDIENTES
Tilápia no papelote (Quantidades indicadas por porção)
1/2 cebola roxa em rodelas 1/4 abobrinha lavada e picada 3 tomates cereja cortados na metade Sal e pimenta do reino à gosto Filé de peixe temperado com sal e pimenta do reino à gosto (Usei tilápia - Pelo menos 200g por porção, se não for ter outros acompanhamentos. Fiz 100g por porção) 3 azeitonas pretas sem caroço e em rodelas Salsão picado à gosto Azeite extra virgem à gosto 1 raminho de alecrim 1/2 rodela de limão siciliano para decorar
Purê de batatas temperado
500g de batata Baraka (Batata para fritura, aquela marronzinha na feira, cheia de terra) 1 dente de alho Água até cobrir as batatas 320ml de leite amornado (usei sem lactose e coloquei 30s no microondas logo antes de acrescentar à panela) Sal e pimenta do reino à gosto 70g de manteiga gelada Cheiro verde à gosto (Só piquei 5 talinhos de folhas de salsão)
MODO DE PREPARO: PEIXE NO PAPELOTE
Pré-aqueça seu forno à 180 °C por 20 minutos. Pegue um prato fundo e ponha 50 cm de papel manteiga nele. Faça uma caminha com a cebola, a abobrinha e os tomates, tempere com um pouquinho de sal e pimenta. Largue seu filé de peixe por cima da caminha, salpique o salsão, as azeitonas e derrame um fio de azeite em zig-zag por cima de tudo. Coloque o raminho de alecrim e feche BEM seu saquinho, com bastante altura, para garantir que o vapor fique e circule lá dentro. Ele que vai cozinhar tudo. Atenção: Nessa receita não é necessário colocar água ou vinho para umedecer, pois a água do tomate e da abobrinha criarão caldo suficiente. Coloque seus papelotes em uma assadeira e leve para o forno por 20 minutos. Sirva no próprio papel ou em um prato (achei no papel tão charmoso!)
MODO DE PREPARO: PURÊ DE BATATAS TEMPERADO
Descasque as batatas, corte-as em pedaços e vá colocando-as em uma panela com água fria suficiente para cobri-las. Descasque o alho e coloque junto na panela. Tempere a água com sal (coloquei 1/2 colher de chá). Deixe cozinhando por 20 minutos após levantar fervura ou até você espetar um garfo sem esforço. Imediatamente após o cozimento, escorra toda a água e usando uma peneira com malha de aço, vá amassando os pedaços de batata até obter uma massa fina e homogênea. Leve para o fogo baixo, acrescente o leite aos poucos e vá misturando devagar (Pode não ser necessário todo o leite, fica a seu gosto). Depois do leite incorporado, adicione a manteiga aos poucos (2 cubinhos ou colherzinhas por vez) até derreter. Mexa devagar. Acerte o sal se precisar. Por fim, adicione o cheiro verde e desligue. Sirva junto com o peixe.
EXTRA: UTENSÍLIOS
1 assadeira retangular 1 panela alta 1 prato fundo 1 balança de cozinha 5 recipientes para os ingredientes (pratos ou copos ^^) 1 conjunto de colheres medidoras 1 tábua de corte 1 descascador de verduras (use a faca se não tiver) 1 faca de vegetais (ou normal) 1 espátula de silicone 1 colher   1 peneira com malha de aço 1 rolo de papel manteiga 1 tesoura 1 tigela média
