This classic Maharashtrian delicacy, also known as 'sago vada,' is a perfect companion for your Janmashtami fast. Crispy on the outside and soft inside, it's a wholesome treat packed with flavor and devotion.
Ingredients:
1 bowl of soaked sabudana (soak for 2 hours)
3 boiled potatoes (mashed)
2-3 green chilies (finely chopped)
Rock salt to taste (sendha namak)
1 tbsp singhara (water chestnut) flour
Fresh coriander leaves (chopped)
Ghee (for frying and added richness)
Oil (for frying)
Simply mix all ingredients, shape into patties, and fry in ghee until golden. Enjoy the crunch and goodness of this traditional fasting delight!
2. Mango Sago Dessert
End your Janmashtami meal on a sweet note with this easy and delightful mango sago dessert. Infused with the tropical sweetness of mango and the richness of coconut milk, this dessert is perfect for fasting and festivity alike!

2 ripe mangoes (pureed)
Coconut milk (for creaminess)
1 bowl of sabudana (unsoaked, cooked)
Milkmaid (for added sweetness)
