Fennel and Orange Chicken

Ingredients:

- 2 navel Oranges

- 2 shallots

- 2 fennel stalks

- 1 whole chicken

- Combination Butter: Salt, Pepper, Corriander seeds, thyme seeds, orange zest, and lemon zest

-Other Seasonings Used: salt, pepper, paprika, garlic powder, onion powder, season all

Directions:

Assemble the sliced oranges, fennell, and shallots in a deep pan

Spatchcock your chicken and place about your fruits and veggies

Season generously with seasonings listed above

Bake covered on 400 F for 25 minutes , uncover and lower heat to 350 for 1 hour and 30 minutes or until internal temp is 165-175 F

Rose Bitters

In last year’s June’s The Simple Things, there was a recipe for these Rose Bitters. We have so much of them blooming in the garden at the moment, I am stocking up my liqueur cabinet with both these and my Rosie Gin Liqueur!

Ingredients (makes about 250 millilitres/1 cup):

1 teaspoon fennel seeds

1 teaspoon coriander seeds

1 teaspoon plump cardamom pods

2 heaped tablespoon Dried Rose Petals

1 cup vodka

Place fennel seeds, coriander seeds and cardamom pods in a pestle and mortar, and crush them, without grinding. Place crushed fennel, coriander and cardamom into a large, sterelised jar. Add Dried Rose Petals, and stir, to mix. 

Pour vodka over the spices and petals and, give a stir. Close the jar tightly.

Allow to infuse for a fortnight, shaking the jar everyday.

Then, strain bitters into a clean, stereslised bottle. 

Mix Rose Bitters into cocktails instead of the usual Angostura. These should make a delightful Pink-ish Gin!
