Chilli Flatbreads

Deliciously piquant, these Chilli Flatbreads are also so easy to make for whenever you need bread in the next few minutes!
Ingredients (makes 2):
2/3 cup plain flour
1/2 teaspoon baking powder
陆 teaspoon salt
3/4 teaspoon ground chilli or Cayenne Pepper
1/4 teaspoon paprika
1/4 cup plain yoghurt
1/4 cup cold water
1 tablespoon olive oil
In a large bowl, combine聽聽flour,聽baking powder,聽salt, ground chilli and paprika. Give a good stir.
Dig a well in the middle of the ingredients, and spoon in the yoghurt. Gradually add聽water, stirring with a wooden spoon until a聽dough聽starts forming. Dust work surface with a little bit of聽flour. Turn聽dough聽out and knead lightly for a couple of minutes. Return聽dough聽to the bowl, cover with a damp tea towel and set aside, at room temperature, for 5 minutes.
Meanwhile, heat a heavy-bottomed frying pan over high heat. Lightly grease with聽olive oil. Divide the聽dough聽into two portions. Roll them into聽balls聽and flatten them out slightly. Roll them out on a lightly floured surface. Add and cook聽flatbreads, one at a time, about 2 minutes on each side.聽
Serve Chilli Flatbreads warm with Hummus, Baba Ghanoush or Amba Sauce.

I wasn't running a check on this so all times are approximate and I may have missed a step or few minutes, but in general from DD saying "could you make naan?" to the finished photo, things happened really fast with total time about (makes vague handwave gesture) 90 minutes.

I also made enough that some can be eaten and others kept back for photo props tomorrow (I don't think they'll have gone stale by then - and that won't show on photos anyway - though at this speed I could make fresh if I had to, no probs...
assemble ingredients, 5 mins
knead in Magimix (food processor), 2 mins;
let rise to doubled size (microwave Dough Rise setting), 1 hour;
knock back & divide in 6 while pan and grill (broiler) pre-heat, 5 mins;
roll out and cook, 2 mins each;
stack and coat with butter / ghee, 15 seconds each;
Take completion photo. Eat some, save others for later pix.
Done.

Here's the recipe.
NB, DD wanted "brown flatbreads" to accompany the Middle Kingdoms smoked fish and salad (photos of THAT tomorrow), so the flour for these is 录 wholemeal, 戮 white rather than 100% white.
This meant I had to add a little extra water while kneading and did that by eye, no more than a Tbsp at a time, with the processor running. It needed only 2 Tbsps of water before the dough gathered correctly, transforming from breadcrumbs to dough in about a second. Following which, I continued with the recipe and the results are there to see.
It tastes great, too! :->

And while The Fish Himself looks a little dubious before being properly plated up, it's A REALLY NICE LOCALLY-SOURCED FISH SMOKED IN OUR OWN BACK YARD, and staying away from it is proving... unusually difficult.)
