Recette de chef Fresier

Ingrédient: Pour le biscuit à la cuillère (2 carrés de 20cmX20cm) : 100g de farine 120g de blancs d’œufs 100g de sucre 80g de jaunes d’œufs 35g de sucre glace

●Pour le sirop au Kirsch : 100ml d’eau 70g de sucre 2 c. à s. de Kirsch

●Pour la Crème Mousseline (crème pâtissière + crème au beurre légère) :

Crème pâtissière : 60ml de lait entier 1 jaune d’œuf 15g de sucre semoule 7g de Maïzena 7g de beurre ½ c. à c de gousse de vanille en poudre

Crème au beurre légère (crème au beurre + meringue italienne) : 120g de beurre 2 jaunes d’œufs 80g de sucre 35g d’eau Meringue italienne : 15g d’eau 35g de sucre 25g de blancs d’œufs 10g de sucre

+ 15g de pâte de pistache

●Pour le montage et la décoration : 500g de fraises 230g de pâte d’amande rose foncé 30g de pâte d’amande verte 30g de pâte d’amande rose pâle 30g de pâte d’amande ivoire

Préparation: -Réalisez le sirop en faisant chauffer l’eau, le sucre et la gousse de vanille fendue. Portez à ébullition 2/3 minutes et laissez infuser. Vous pouvez également ajouter du kirsch, du sirop de fraise ou autre… -Réalisez la crème en chauffant le lait avec la gousse de vanille fendue (ou l’extrait de vanille ou sucre vanillé, au choix 🙂 -Fouettez les jaunes avec le sucre, ajoutez la maizéna ensuite, progressivement -Ajoutez l’agar agar dans le lait et laissez bouillir 1 minute -Versez le lait bouillant dessus en une fois, mélangez et remettez sur le feu moyen, fouettez constamment, la crème pâtissière va s’épaissir -Reversez la crème dans un bol propre, couvrez-la au contact avec du film alimentaire et laissez refroidir. -Fouettez la crème liquide bien ferme (mettez-la au congélateur 15 minutes avant, ca aide !!) -Ajoutez la crème fouettée à la crème pâtissière froide, délicatement, et mettez dans une poche à douille au frais. -Réalisez la génoise à présent : séparez les blancs des jaunes et battez les blancs bien fermes -Ajoutez un tiers du sucre aux blancs quand ils sont fermes, et battez encore 1 minute. -Fouettez les jaunes avec le restant de sucre et la vanille -Ajoutez le beurre fondu, puis la moitié de la farine tamisée -Pour détendre la pâte, ajoutez 2 c. à soupe de blanc d’oeufs Puis ajoutez le reste de la farine -Enfin, ajoutez les blancs d’oeufs délicatement en soulevant la pâte pour ne pas casser les bulles d’air ! -Versez la pâte dans deux cercles (ou sur une plaque, vous pourrez découper les cercles après cuisson…) Enfournez à four chaud 10 minutes à 190°C Imbibez les génoises du sirop dès la sortir du four -Procédez au montage du fraisier : disposez un cercle de génoise dans votre cercle ou moule à charnière -Découpez les fraises en deux dans le sens de la hauteur et disposez-les face tranchée vers l’extérieur Plaquez bien les fraises contre le bord avec la crème, et complétez l’intérieur avec la crème et des morceaux de fraises -Recouvrez avec le 2e cercle de génoise, et décorez avec de la pâte à sucre, de la pâte d’amande étalée au rouleau, ou encore un glaçage blanc royal (blanc d’oeuf, sucre glace et jus de citron) Placez au frais entre 2 heures et une nuit avant de démouler et de servir.
