After work, I was tasked to bring back dinner for both mum and myself. At the MRT station, there was this hole in the wall stall selling Korean/Japanese fusion cuisine with pretty reasonable prices. Ordered BBQ Chicken with Rice (烧烤鸡肉饭) and Korean Fried Chicken with Rice (韩式炸鸡饭) at S$6.80 per bowl. Mum enjoyed everything in the bowl saved for the half boiled egg which she gave to me. My fried chicken is a little dry but well-seasoned and still warm with kimchi and corn for the sides.

Vegan Gyeran Bokkeumbap
(Korean "Egg" Fried Rice)

1 tbsp olive oil
1 block of extra firm tofu, crumbled
1 tbsp nutritional yeast
1/2 tsp black salt
1/4 tsp black pepper
1/4 tsp turmeric
3 cups cooked rice
4 green onions, chopped
1 tbsp black sesame seeds
1 tbsp soy sauce
1 tbsp sesame oil
Heat olive oil in a large saucepan over medium-low heat. Stir in the crumbled tofu. Stir in the; nutritional yeast, black salt, black pepper, and turmeric. Cook for several minutes, stirring frequently.
Stir in the cooked rice and green onions. Cook for several more minutes.
Stir in the black sesame seeds, soy sauce and sesame oil. Remove from heat and serve.

It's a good day bc I took my cat in her stroller up with me to get the mail, I had a successful phone interview, and in half an hour I'm leaving to go to my favorite restaurant with my best friend, then after the restaurant we're seeing the new Spy X Family :))
