You’re Not the Only One Who Doesn’t Totally Know How to Talk About Hard Kombucha
Ayla Bystrom-Williams’ brewery doesn’t make beer, and she’s O.K. with that.
Bystrom-Williams is the founder and CEO of HoneyMoon Brewery, a Santa Fe, N.M., hard kombucha operation that opened in December 2018. “At the current moment, [the FDA] doesn’t know how to classify hard kombucha, which is why we’re called a brewery,” Bystrom-Williams tells curious first-time visitors. The discrepancy “confuses people.”
Credit: HoneymoonBrewery.com
Holly Lyman understands. The “Queen Bee” of Wild Tonic, a hard kombucha made in Cottonwood, Ariz., says it took her approximately two years to get her honey-based formulations approved by the TTB.
“It was a very difficult process because they didn’t know where to put us in the beginning,” she recalls. “I was literally the second hard kombucha brewery in the country. We’re classified as a beer, but it depends on how you make your kombucha. They can put you in the wine category or spirits category — it all depends on your formulation.”
Complications with FDA and TTB regulations add to the confusion. Wild Tonic doesn’t contain hops or grains like a conventional beer, and yet the FDA classifies it as a gluten-free beer “because sugar is a beer fermentable,” Lyman says.
“All new hard kombuchas that are now entering the market must have their formulations approved by the TTB,” Lyman explains, but the FDA oversees anything it considers gluten-free beer. “Eventually the FDA will catch onto this oversight, or a concerned consumer group will take action, but currently, there are many brands on the market that are not compliant with the labeling laws.”
Maybe we shouldn’t be surprised kombucha is having an identity crisis among federal agencies. Although it has a long history in Eastern Europe and Asia, non-alcoholic kombucha is a relatively recent addition to American supermarkets. Many consumers aren’t clear on what exactly hard kombucha is, or how it differs from the non-alcoholic stuff.
To make all kinds of kombucha, you brew tea and sugar, then leave it to ferment with a symbiotic culture of bacteria and yeast (SCOBY), which produces tangy, fizzy kombucha. If enough sugars ferment, they can yield alcohol.
According to a report by Grand View Research, the global kombucha market size was valued at $760.0 million in 2016, and is expected to grow by 23 percent through 2025. “This market is projected to be driven by rising product innovations, flavor experimentation, and consumer awareness about health benefits associated with the product,” the report reads.
Cory Comstock, CEO of KYLA Hard Kombucha, believes “consumers are increasingly more health-conscious and seeking beverages that fit their health and wellness lifestyles. You see this reflected in the rapid growth of both hard kombuchas and hard seltzers. Four current trends in the alcohol space are low-cal, gluten-free, craft, and low-alcohol.”
These trends, coupled with regulations that misleadingly label hard kombucha, aren’t lost on Big Beer.
“In my conversations with larger beer companies in the networking that we’ve done and the competitions that we’ve won, I think the larger craft beer companies and general American beer companies like Coors and Anheuser-Busch are anticipating that 30 percent of the craft beer drinking market is going to start looking for alternatives to higher ABV products — low-calorie, low-ABV or health-oriented alcohol drinks,” Bystrom-Williams says. It’s a reflection of how current consumers are more health-conscious than those in the past.
So, is hard kombucha good for your health? “I definitely would not say that, and we try super hard not to say that,” Bystrom-Williams quickly adds. “There’s just no way to ever say ethanol is good for you. … Essentially, the only thing that people need to know is that it’s an alternative to beer, wine, ciders, and spirits. There are traces of caffeine and B vitamins from the tea. There’s all sorts of crazy sh*t you won’t find in other drinks.”
Take 100-calorie KYLA. It’s brewed and naturally fermented to 4.5 percent ABV, has live cultures from SCOBY, consists of 2 or fewer grams of carbohydrates, and is gluten-free and vegan.
Wild Tonic works with Jun, a honey-based kombucha, and is 99 percent organic.
“Seven percent of all millennials drink kombucha. The health benefits of the non-alcohol variety are something that keeps people drinking it,” Lyman says. Hard kombucha, meanwhile, as “no gluten, it’s low-cal, no sulfites, you don’t get that headache or hangover. It’s just a very different experience for alcohol.”
Credit: WildTonic.com
Three Hard Kombuchas to Try
HoneyMoon Brewery. Look for Pearsephone, a refreshing flavor that combines elderflowers and pears in tribute to New Mexico’s fruits and flowers.
KYLA Hard Kombucha. The effervescent Hibiscus Lime is bright and spritzy.
Wild Tonic. If you want to kick things up a notch, Lyman recommends making a Wild Mule cocktail with Wild Tonic’s Mango Ginger flavor and a shot of Tito’s Handmade Vodka.

for life events such as my best friend’s (one of dos) wedding in Washington (State) later
this year and to Nevada this weekend for the Bachelor party… but don’t worry it’s not
going to be a Julia Roberts situation… well maybe hair wise… thank you pre-summer heat
& humidity.
One way to stay refreshed to beat the heat is with some choice beverages and my
choice beverage in months to come is HARD KOMBUCHA (and that rosé all day even
more so now that there’s rosé EVERYTHING)…. according to wikipedia:
Kombucha is a fermented, slightly alcoholic, lightly effervescent,  sweetened black or green tea drink commonly intended as a functional beverage for its “supposed health benefits.”
HARD Kombucha to be more on the nose is very alcoholic, ranging from 4% and up
(much like hard cider) and is a popular alternative for adult beverage partakers who
aren’t big on beer, wine, whiskey, and all that other fun treat yoself stuff.
While finally catching the last season of Broad City season cinco (5)
*insert tears for days*
We (mi and mi amor) had the pleasure of indulging in two quality H.K. brands
among other things… while binging the magic, merriment and mishaps of Abbi &
Ilana… those beautiful “Jew-ess” (Jewish Goddess – call back to the final season and Miss
Wexler finally getting some ethnically appropriate hoops) KWANES of the NY do their
thing we call life.
Abbi goes on a journey of creativity, realizing she’s kind of just jumping from one job
to the next, but not really living out her full dreams (as an artist) since she’s a floor sales
associate at Antropologie (that discount though O.O).
She finally takes life by the metaphorical balls and “Makes the Space” in an episode
of the same name only to get fired for overstepping in Broad City spirit (probably one of
my top three ep picks for this season and not just because of the Guillermo Diaz guest
spot/character arc as Jaime’s boyfriend from Jersey. Love me some Guillermo…who you
may know from Scandal (w/ Kerry Washington), Oil Can Harry’s in Studio City (one of
my bar/dance/karaoke hangs… he’s a regular), Weeds (con en español/with Mary Louise
Parker who I think is somehow related to Parker Posey or should play her sister in some
one off project and have mixed up recently… though I definitely know as well as love me
some P. Posey in The Sweetest Thing, Josie & the Pussycats, Adam & Steve, etc…. so
why I did that is beyond me… but hey I’m 33 and it’s just “spilt milk” and I’m non-dairy so
I’m over it… sorry not sorry mostly…), Half Baked (also starring Dave Chappelle) or I
Wanna Go music video via Britney Spears… it’s Britney… Betch!!!!)
youtube
As Ilana finds her own bliss cashing out her bitcoin capital to start a business and
live out her pansexual freedom… solo… so much freedom that she at some point drunkly
kissed Bevers  #bearcub at some point off season.
So much good in this season including the Instagram Stories birthday episode to kick
it all off… sipping Kyla was definitely a highlight. Kyla is a popular craft brew hard
kombucha priced around ten bucks per six pack (without tax) hitting you smoothly at
4.5% abv and comes in 4 different flavors Ginger Tangerine (OG), Pink Grapefruit
(Emmanuel’s aka my boyfriend’s favorite), Hibiscus Lime and Cold Brew… yes hard craft
cold brew kombucha… it’s hella strong and yes I just used the word hella in 2019. Kyla is
best served cold or at room temp, though it does fair well when warm compare to Booch
Craft my favorite craft kombucha brand and not just because I was the VERY lucky
winner of their Sun & Swell mashup IG contest (Lemon Coconut snack bites take the gold
medal, Clean Cookie gets the silver, my fav color). This made grabbing this quality drank
easier than applying some sunscreen
before going out the door for work in
the morning (*hint* pile that ish on…).
While I do believe all Booch Craft is
created equally we did discover that
the Ginger*Lime*Rosemary is more
enjoyable at room temp. Now as a lush I enjoy most beverages both non and completely
alcoholic… that didn’t come out right…, but some people don’t have a pallet for that malty,
yeast-ish, hay ale and beer savor… this would be the closest flavor to these two worlds
and is what I’d recommend for the beer guy or gal or just being who is looking to branch
out and expand their pallet then graduate into some of the more creative mouth-feel
styles such as Apple*Lime*Jasmine and Grapefruit*Hibiscus*Heather.  ALJ is a
showstopper like everyone embrassing the sexual fluidity of Abbi in Broad City’s
final season when she starts dating Dr. Lesley Marnell also known as CLEA DUVALL (in
real life) or the explored sexuality of “Striking Vipers”/ Black Mirror season 5 episode 1,
which come BM we can’t have one straight forward representation of queer men… it’s
2019…
Tangents and rants aside… Black Mirror is great and the new season is worth it, go in
with an open mind… by best male friend Mr. Ryan Russell noted we often go into new
seasons, reboots and remakes with so much judgement we can’t appreciate all the
“notes”… the same applies to the world of beverages… maybe kombucha might be
farfetch’d if and when you try it in any form… but take a pause… smell it… take in the
color, texture and all the aspects on the surface… give it a swish and let it roll over your
taste buds then in a few seconds give it another go… you’d be surprised at what you get
and how much you enjoy the second go around… apply this process to your view habits
(less literally) and see where it takes you…. could even work in life… *mind blown*
Catch the last season of Broad City on
Hulu now (meaning asap) and the new
season of Black Mirror via Netflix.

A few years ago, I got carded at a bodega. This isn’t unusual—I have round cheeks and penchant for wearing pastel hair clips that would put a third grader to shame—but I wasn’t buying beer. I was just trying to get my fix of bubbly, funky kombucha.
By now, you may have read panicked headlines about the debated alcohol percentage of kombucha. “Can you get drunk off kombucha tea?” “Could kombucha really have caused Michael Floyd’s failed alcohol test?” Yeah, probably not. Sorry, Michael Floyd.
So, why all the confusion? “Most packaged foods on the market are processed and pasteurized, and are thus pretty straightforward and consistent,” says Health-Ade Kombucha CEO Daina Trout. “But kombucha is alive! And living foods are a lot more complex.”
For starters, it’s true that kombucha’s fermentation process does create some alcohol. As yeast consumes and ferments sugar to produce CO2 and ethanol (along with that distinct probiotic tang), some alcohol remains in the final product. “It’s a constant cycle and thus the alcohol in kombucha is self-limiting, unlike beer or wine, which are intentionally brewed to have higher alcohol content,” says Trout. “Because real kombucha is naturally fermented and not pasteurized to kill the beneficial yeast and bacteria, the trace amount of alcohol in kombucha varies from brew to brew.”
Health-Ade Kombucha is low in caffeine and alcohol, but high in probiotics.
Still, you would have to drink a lot of kombucha to feel a buzz. Most brands on shelves today contain just a fraction of alcohol—less than .5% ABV—allowing them to be sold as non-alcoholic beverages under the guidelines of the Alcohol and Tobacco Tax and Trade Bureau. (For context, a can of Miller High Life clocks in at 4.6% ABV.) Any higher than that, and you too will be carded before purchasing a high-octane version. And if you’re looking to really up that buzz, several “harder” kombucha brands like Kombrewcha and KYLA are ready to take your money—and get you about as tipsy as a sour beer, with about 3% ABV.
So what about the caffeine part? Kombucha is commonly brewed from black or green tea, so it’s true that most kombucha contains some amount of caffeine. But replacing that morning cold brew with a bubbly cup of kombucha won’t provide that same caffeine jolt that gets you to work on time. While the fermentation process does cut down on the tea’s natural caffeine content, about ⅓ of the caffeine remains. It’s not an exact percentage—for reference, GT’s Kombucha contains anywhere from 8 mg to 14 mg of caffeine per 8 oz serving, and Health-Ade has between 6 and 10 mg of caffeine in that same amount. Even if you’re someone like me, who often drinks the whole bottle in one go, you’re still getting less than a quarter of the amount of caffeine in an 8 oz cup of coffee. But if you’re someone like GT Kombucha founder GT Dave, who told us he drinks two gallons of booch a day, you’ll definitely feel the caffeine. And if you’ve quit caffeine cold turkey and now get the jitters just from drinking decaf coffee (which tends to have around 5 mg of caffeine per 8 oz serving), you might feel the kombucha too.
If you’re being strict about alcohol and caffeine but still thirsting for a refreshing, vinegary-in-a-good-way beverage, try a sparkling switchel, herbal oxymel tonic, or even an easily DIY’d vinegar shrub. For the rest of us, know that you won’t likely feel a buzz after downing a bottle of lemon ginger kombucha. And if you do, well, that might just be the probiotics talking.
Looking to get a buzz with your probiotics? Make a kombucha cocktail.
New to kombucha? This cocktail is perfect for a test drive because you’ll get a taste of “original” (unflavored) kombucha. Try Health-Ade or GT’s, which you can find at most supermarkets.

About Bigfoot Mojo
Blugrass duo
Upright bassist Belinda Underwood and national mandolin champion Josiah Payne met on the bluegrass scene in Portland, Oregon, as hired hands in other award-winning bands. Musicians in multiple genres since childhood, they both grew up in family bands before moving to Oregon, and were feeling orphaned without their families until they found each other in 2012. After playing together for 3 years as "Josiah and Belinda", they adoped the mascot of the Northwest when they became Bigfoot Mojo.
Songwriters and multi-instrumentalists, they have many creative offerings, including this new incarnation. Josiah and Belinda continue to mesmerize audiences with groove-based melodies and impeccable vocal harmonies (the kind that sound genetically-blended), setting a new standard for original music which defies genre boundaries.
Bigfoot Mojo plays with other amazing guest musicians to create a trio, quartet or bigger. Lately they have been featuring world-traveling guitarist Pete Kartsounes, when he is home from tour! Also featured is the young national twin fiddle champion Wilhelmina.
Josiah and Belinda also play together in the high-energy bluegrass band The Wild Wood and in their Middle Eastern funk band, Al Farasha.

About Silver Lake 66
Modern Americana
Maria Francis and Jeff Overbo define modern Americana with a winning amalgamation of classic country, folk and blues. Their songs have been hailed by numerous publications and radio stations for their knack of authentic, heartstring-tugging songwriting, impeccable harmonies and ardent guitar-playing. For nearly a decade through the 1990s, Francis and Overbo called Los Angeles home when they fronted a band called The Ruby Trees. The couple performed in a slew of local LA clubs, which includes appearances at Ronnie Mack’s Barn Dance at The World-Famous Palomino Club. Following a move to Portland, Francis and Overbo dealt with illness-related adversity that sidelined them from performance. But rising healthy and happy,  they found themselves adopted by a likeminded tribe of Portland musicians who helped them get back into the art of music-making. It was then that Silver Lake 66 was born. In August of 2016, the duo released a new LP, Let Go Or Be Dragged, featuring a collection of songs drawn from personal experiences of travel, love, loss and adversity. A group of local veteran musicians from the Portland Americana community round out the vocally driven, warm, tremolo-laden sound. The album has been a resounding success with Americana radio, receiving airplay from over 55 stations throughout the U.S., Canada and Europe. The album hit #19 on the Roots Music Report’s album chart, and the song “San Francisco Angel” reached #18 on its singles chart.
The Huffington Post’s Randy Radic describes Silver Lake 66’s music as “elegant simplicity” and “the real McCoy.” For Folk’s Sake’s Jonathan Frahm calls the duo “the real deal” and highlights their “sweet harmonies that mesh the entirety of their sound together.”
About The Hillwilliams
Bluegrass
The Hillwilliams are a group of Portland, OR musicians who have come together to celebrate the high lonesome sound and hot picking of traditional Bluegrass.
Brought together initially by admiration for bluegrass masters like Bill Monroe and The Stanley Brothers as well as 1970s bluegrass supergroup Old and in the Way, The Hillwilliams blend three strong vocalists, smoking fiddle, mandolin, guitar, banjo and doghouse bass, into a fun high energy mix, that harkens back to classic bluegrass, while exploring an exciting sound of their own. Whether they are playing the best of the traditional bluegrass repertoire, or playing their own original bluegrass songs, their shows are fun, high energy events that leave audiences asking for more.
The Hillwilliams' first album of original material, "Hill Yeah!", was released in February of 2015.
