Forging progression of a chefs knife. I like to say, "It looks like shit until it doesn't". I hear so much frustration from so many beginner smiths because after a heat or two their metal looks gnarly and nothing like the knife they want to forge. Learning to embrace the funky shapes that are necessary to get the final desired shape is a skill of its own. It's not unlike growth in our daily lives. We often go through challenging and messy time periods and having the foresight and trust to navigate through them to the otherside makes those times easier to swallow. . Gluten free, egg free, yeast free calzones. Looks delicious. Smells delicious. Tastes, pretty good. Things we would do different next time: 1. Roll the dough thinner. This would probably help the dough cook all the way especially because we are folding it creating two layer. 2. Cut dough in half or 4ths. Cook for maybe 5-10min. Then top and put 2 of the 4 pieces on top of the other 2. This eliminates folding and risk of breaking. 3. Thicker sauce. Michael thinks our sauce was too liquid-y causing it to run out like crazy while eating the calzone. 4. Put tin foil over the top after a while to let the bottom crust get crisp but keep the top from burning. . . So we did a thing yesterday afternoon. We picked up 3 nucs (small bee colonies) from Douglass Ga. We were so disheartened at losing hive 1. Now we have 3 nucs to transfer into hives. Hai- Our last day in Ubud! We went to tour the Green Village school- designed by jewelry designer John Hardy and is made entirely of bamboo. Truly a sight to see. At the school they are on the forefront for eco friendly studies- the goal is to raise innovators in sustainable areas- want to send our kid there! Then we had a beautiful drive up to Lovina- about 3.5 hours- coutesy of Gustu. We will miss Gus! He was the best driver, quick, quiet and always smiling. Tonight we had some serious laughs with some youtube videos- much needed after today. Also, the bug net proved more toubel than its worth but still was incredibly entertaining- I think I trapped a mosquito in the net so it was rendered useless 

Bai- Lovina is NOvina- not what we expected....at all. So after a mini mental breakdown and a quick therapy session courtesy of Benjamin, we have a solid plan b- going to southern beach town closer to Kuta. Also bai on the hurricane weather everyone is getting back home. Spoke to our family and eveyrone is fine- some things flooded but everyone is safe

This afternoon, we received our first ever order in 13 years that came with a Hebrew address. It is really strange how when we tried to click-copy-paste the shipping address onto our address sticker template, it keeps showing up completely reversed? The roman numbers are showing up correct, but everything else is completely reversed, not just the word order, but even the 'spelling' within an individual word. For Christmas I got Octa something I had been eyeing up for a long time! . . Blocks seem like a silly thing to get excited about, but watching her build and play has been amazing. . . With the other kids I tended to buy more "structured" toys. But with Octa we have approached a more natural lifestyle, and as cliche as it sounds... you do the best you can with what you know, and when you know better you do better. . . I thought the more toys the kids had the happier they would be. But as we had more children the toys that are open ended, can be used for so many more things became more valuable. Realizing that just because it's a big name brand doesn't mean it's better. Price, doesn't mean it's better. Just because it's popular, doesn't mean it's better. . . These blocks have gotten the seven (even the older day home boys!) kids playing together, learning cause and effect, learning so much! The oldest of mine says "it's just like Minecraft" 😅😅😅 . .
