Moink Balls Rezept - Hackbällchen in Bacon mit Barbecue Soße

Werbung / Dieses Moink Balls Rezept haben wir zwar schon häufiger gemacht, aber noch nie auf dem Blog gezeigt. Das ändert sich heute. Denn wir präsentieren euch diese leckeren, rauchig, saftigen Hackbällchen mit Bacon und ordentlich Barbecue Soße. Und mal wieder ein kinderleichtes Rezept mit Gelingsicherheit :-) Leckere Moinkballs vom Grill Moinkballs Rezept - rauchiges Fingerfood vom Grill Vorab: Wer hat´s erfunden? Natürlich die Amis! Moinkball ist übrigens eine Wortschöpfung aus Muuuh und Oink, sprich Kuh und Schwein. Irgendwie süß oder? Im Endeffekt haben wir hier ein Rindfleischhackbällchen mit Bacon umwickelt und dann wird alles noch in ordentlich Barbecue Soße getaucht. Wir haben bei unserer Version hier die Smoked BBQ Sauce von Hengstenberg genommen und die Kombination war ultra lecker. Generell gibt´s dort einiges an Soßen und auch anderen coolen Grilltoppings wie z. B. die Spicy Burger Chips (eingelegte Gurkenscheiben), die hatten wir auch schon mal. Aber auch Jalapeno Rings hören sich vielversprechend an oder? Wenn ihr jetzt Hunger auf kleine umwickelte Moinks habt, dann nichts wie ran ans Rezept. Posiziona i bricchetti usando il “metodo snake“ affinché il tempo di cottura possa durare per ore, senza dover rabboccare in continuazione e così da avere una zona di fuoco diretta ed una indiretta. A chi piace, adagiare sopra i bricchetti delle Chips da affumicatura. Dopo aver finito con il barbecue passiamo alla preparazione delle polpette. Prendete una ciotola e mettete dentro il macinato, il Rub, le uova, il parmigiano ed il pangrattato. Amalgamate il tutto fino a creare un impasto uniforme. Ora creiamo le polpette. Cercate di farle della stessa misura per regolarvi meglio nella cottura con la temperatura. Ad ogni polpetta fatta, mettete dentro un pezzo di Galbanino che avrete tagliato a dadini non troppo grandi. Un consiglio molto utile, una polpetta lasciatela senza formaggio interno, vi servirà più in là. Arrivati a questo punto prendete il bacon e avvolgete una fetta di quest’ultimo ad ogni polpetta e adagiatele in una pirofila. Fatto? Bene adesso possiamo accendere il barbecue cercando di stabilizzare la temperatura sui 110°/130° gradi usando le varie bocchette di ventilazione che avrete nel vostro Barbecue (ricorda, più ossigeno entra nel BBQ e più salirà la temperatura). Nel momento che la temperatura sarà stabilizzata potrete mettere le polpette sul fuoco lontano dalle braci. Inserisci la sonda nella polpetta che non ha il formaggio così che la temperatura sia precisa. Considera che la T delle polpette deve arrivare ad almeno 73-75° gradi. Chiudere il barbecue ed aspettate. Arrivate quasi alla temperatura desiderata (70°circa), aprite il barbecue, spennellate ogni polpetta con la salsa BBQ e aspettate che arrivino alla T desiderata.Fate un rest di 10 minuti e servitele ancora calde.
