Hi there. do you think/know if people not in the field of literature studies or work -- not exactly used to the literature theory/criticism -- will fully be able to grasp philosophical texts? Tbh I've always been curious, but also highly intimidated. Are there any titles or approach you recommend? Thank you.

I’m very sorry for how late this is.
I’ve read very, very little philosophy, officially, so I’m not the best person to ask for this–but even so, I absolutely, genuinely do not believe there’s any reason at all why you won’t be able to grasp them (I feel like ‘grasp’ is very nebulous territory anyway, especially in philosophy). Literary and philosophical studies train your brain to think and question a certain way, yes, but I don’t think that anyone really goes into it with an already assigned capacity for either of them, just as no one is born knowing how to ride a bike or ice skate; you’ll bruise yourself over and over, sure, but that’s fine–one way or another, you’ll get there. If you’re curious and interested then that curiosity is the most important thing and what matters most is how you use it–how well you grasp a subject or how comfortable you are with it is down to your own patience, dedication and willingness to learn, which is also the rule for literally anything else you want to study or learn more about, regardless of your background or your age.
As I said, I have hardly any experience with philosophical texts directly, so I can’t really point you anywhere concrete, but something I was told a little while ago and that may help is to try by easing into it with philosophical works that are written poetically–Barthes A Lover’s Discourse is one example–or otherwise, novels or essays written philosophically (there’s a really good post here)–Sophie’s World by Jostein Gaardner, Slowness by Milan Kundera, I think most of Hermann Hesse’s work falls into this too–Siddhartha, or Steppenwolf, or Narcissus and Goldmun–Zadie Smith’s essays in Feel Free are also wonderful and cover a few topics, but for philosophy in particular I’d look at: “Anomalisa: Windows on the Will”, “Killing Orson Welles at Midnight”, and “Meeting Justin Bieber”). 
If you’re going straight in, the only thing I can really advise is to try and find a companion guide and be ready and willing to explore as much as you can to place things in context. You can also try these online resources:
Khan Academy is usually very straightforward and accessible and they have a good few videos and articles here
Stanford’s online Philosophy Encyclopedia is a bit chunkier but they cover a lot, here
You can also try MIT’s OpenCourse Ware program, here (linguistics and philosophy)
Wes Cecil’s lectures here
There’s also a fairly broad post here, which is really way more thorough than anything I can give you.

Do you have a psychology or counseling degree?
Psychology: A degree, yes. Focusing specifically on human sexuality and deviance (like TRUE sexual deviance, as in paraphilias, not "oh she likes to spank, what a deviant" 🙄). Now seems like a good time to announce that I've recently been asked to join the staff of a website geared specifically towards sex education for adults in regards to "outside the norm" practices, along with another site by the same founder for wlw who simply want a safe space to be as gay as they please! Be ye warned: once we officially open our virtual doors, I will be promoting both sites on here!
Counseling: Working towards becoming a fully accredited life coach. Spent a few years working with a counseling program for at-risk youth as well.
I currently work with children with neurodevelopmental disorders and brain injuries. I have trained with the Center for Autism and Related Disorders and am currently undergoing training at another neurodevelopmental therapy center so that I can learn how to better devise treatment plans for my clients.
Also a lot of my knowledge comes from autodidactism. I lived with a neuropsychologist for years and picked up a lot. I currently work in conjunction with pediatric psychiatrists and cognitive behavioral therapists and I'm constantly learning from them and the materials they provide. I also take advantage of MIT's Opencourse materials on neuropsychology and early childhood development and am constantly reading journals and books on the subject.

I knew John Merriman wrote a really famous book about history of modern Europe, but I just realized today that he’s the guy who taught the Yale opencourse on modern European history, of which I’ve only watched the episode about the French Revolution (naturally), which is…ugh. Robespierre identified with the revolution so much because his father left him and stuff.

Stop saying "i wish i had learned ____". We're in the age of the internet. Information is abundant and it's never too late to start learning!
This post and its comments inspired me to post this because I realized how often in my own life I hear this phrase.
If you truly want to learn something you wish you knew, it's easy to find resources to do so, especially today. There are how-to's and tutorials on YouTube, subreddits like /r/AskReddit and the Ask family (Historians, Science, etc.), Quora, etc.
Basically under your mouse and keyboard is a HUGE library of the world's knowledge at your disposal that you can access at your leisure!
EDIT: Re-wrote this so it reads more like a LPT. Some commentators noted that what I wrote earlier was only true in some circumstances and that I made some generalizations. I agree with them.
For anyone curious, the links mentioned in the post above are as follows (taken word-for-word, thanks /u/MungoTungo for gathering these):
OpenCourser. Good for finding an online course to take, more for in-depth learning + building professional skills.
NoExcuseList. Great for discovering new learning websites. Neatly categorized into sections (like cooking, music).
KhanAcademy. (Re-)Learn pretty much every subject taught in K-12. Edit: Also great for college-level math and exam prep (SAT, GMAT, MCAT, etc).
StackExchange. Get answers from people who are super knowledgeable about all sorts of different things.
