Ingredients:

1 cup unsalted butter, softened

1 cup granulated sugar

1 egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup crushed pineapple, drained

Maraschino cherries, halved

Directions:

Preheat your oven to 350°F (175°C).

In a large bowl, cream together the softened butter and granulated sugar until it’s light and fluffy.

Beat in the egg and vanilla extract until everything is well combined.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing just until combined.

Gently fold in the crushed pineapple to give those cookies a tropical twist.

Drop rounded tablespoons of dough onto ungreased baking sheets.

For a festive touch, top each cookie with half a maraschino cherry.

Bake them in your preheated oven for about 10-12 minutes or until the edges turn lightly golden.
