大家好! Pomfret is 1 of my favourite fishes to eat and whenever I find a food stall that sells it, I'll always order it. This fatty fish is very popular with locals and especially sought after during Chinese New Year for its tender, silky smooth flesh. Families steam the freshest fishes or debone and slice them for steamboat/hotpot festive meals. Besides being yummy, pomfret is a rich source of protein and other important nutrients.

Including plant protein in meals at home (yes, I bought more tau kwa - firm tofu - and falafels) frees up dining out meals for fish and seafood. Tau kwa and falafels are tasty when added to stirfried veggies and eaten with rice or congee. They're great toppings for soup noodles along with braised mushrooms, braised peanuts, xiao bai cai (bak choy) or cabbage, and a sprinkle of chopped spring onions. I may buy fu pi (tofu skin) and fu zhu (dried tofu skin) during my next grocery shop; both are very tasty and can easily be included in homemade meals. Besides tau kwa and falafel, other plant-based buys this week: braised peanuts, unsalted sunflower seeds and roasted chickpeas.

The following videos are a stark reminder that, if we can afford adequate nourishment for all our meals, we're blessed. For some, choosing healthier foods is a luxury they cannot afford. Even in the richest countries in the world, less well-off citizens may not get to eat protein for an entire week; others are nutrition insecure. Hopefully, their food banks help to fulfil their basic nutritional needs. After all, these are very wealthy nations.

Our National Day fell on Wednesday this week, thus it was time to enjoy 1 of our national dishes - the always delicious chicken rice. Some stalls may be more famous but generally speaking, quality is good at most places. I don't have the patience for long queues especially on hot days, thus, as long as portions of protein and veggies are decent for the price and the rice is flavourful and fluffy, I'm happy. This is 1 of my favourite ways to eat chicken; the meat is so velvety and tender! Many tourists usually fall in love with this national dish for good reason ❤️

Whilst those of us who lead moderately healthy lifestyles seldom consume fast food, I hope this post reminds us that we're blessed to be in a position to choose healthier alternatives. Even in wealthy countries, some citizens can't afford basic nourishment on a daily basis. I watched a video recently in which 1 such citizen said that, thanks to the food bank, they eat meat 4 times a month. This might sound inadequate, but on the flipside, without food bank assistance, they wouldn't be eating meat at all. 下次见!

9 Must-Try Goan Dishes and their Recipes
Goa is a world-famous tourist destination. Every year, lacs of tourists flock to Goa to experience it’s blue beaches. Goa’s sunny weather is a perfect getaway during winters for these tourists to escape the harsh winters of their countries.
In addition to it’s tourism, Goa has also garnered popularity for it’s food dishes. Goan foods are a fusion of Portuguese and Konkani cuisine.
Here are a the names and recipes of 9 Goan dishes that must-try:
1. BANGDA RAWA FRY

Take 1 kg of Bangda (Mackeral) gutted and thoroughly cleaned. Season it well with salt and pepper and leave it aside for at least 10 to 15 minutes.
Apply the Green Raechado masala both on the inside and outside of the fish generously and again leave it aside for another 10 minutes.
Coat the fish with Rawa (semolina) or breadcrumbs by rolling the fish in it. Heat 2-3 tbsps of oil in a frying pan and shallow fry until the fish is firm to the touch.
Serve hot with fresh mint or coriander chutney, and slices of fresh lime. You can also use pomfret or even sardines, and depending on your preference, you can shallow fry, deep fry, grill, or even steam. You can also use this as a marinate for small fish and even meats.
2. MUTTON BIRYANI

Boil 1 kg of basmati rice and keep it aside.
Marinate 1 kg of mutton on the bone, cut in bite-sized pieces, with 1/2 a cup of curd, lemon juice, and salt, and keep it aside for at least 2-3 hours.
In a kadhai, add 5-6 tbsps of oil, 2 tbsps of ghee, and fry 3 sliced onions. Add the puree of 2 tomatoes and cook until the oil separates.
Add all the Goemchi Biryani masala and cook for 2 minutes. Now add the mutton to the masala and cook until the mutton is well cooked.
Add rice into the kadhai and mix well. Garnish with fried onions and coriander leaves.
You can substitute the mutton with chicken too.
3. MUTTON CURRY

Fry 1 kg of mutton, cut into bite-sized pieces in 6 tbsps of ghee, in a frying pan until it turns slightly brown. Set aside.
In the same pan, heat 3 tbsps of oil, fry 4 finely sliced onions until they turn golden brown.
Add two tablespoons of Chandrawado Mutton masala and saute for 2-3 min, then add the mutton, and salt.
Fry for 7-8 min, add 1 cup of water and cook until meat is tender. While on the gas flame, add 1 cup of unsalted curd or yogurt, and mix well to combine.
Simmer on low flame for 5 min. Garnish with chopped mint or fresh coriander and lightly roasted cashews.
Serve hot with rice or poi (Goan bread).
4. TISRYO MASALA

Clean and wash about 40 to 50 Tisryo (clams), cut in two or shelled. In a vessel, add 2 to 3 medium onions, finely chopped, along with the clams and add 2 cups of water. 
Bring to boil and continue cooking until the onions are tender. Add 2 to 3 tbsps of Kunbi Xasti masala, 1/2 a cup of grated coconut, chopped coriander leaves, and salt to taste. 
Stir well, and continue to cook for 3 to 4 minutes. Remove from fire and serve with rice or Poi (Goan bread). It’s advisable to soak the clams in some salt water to remove all traces of sand. 
Fresh clams will open up when cooked. You can substitute crabs for the clams, in which case you should take 2 to 3 medium sized ones.
5. STUFFED FISH IN BANANA LEAF

Take 2 medium sized seerfish, scaled, gutted and the fins removed. Using a pairing knife, make three slits on each side of the fish and then marinate them inside and outside throughly with lemon juice and salt. 
Stuff the fish with the Fisherman’s Barbeque masala. Oil one side of the banana leaf and wrap the fish in it, securing with butcher’s twine. Repeat with the other fish and grill them on a barbecue grill over medium heat for 10 minutes each side. 
Remove and let it rest for 5 minutes. Open the banana leaves and serve the fish with a dash of lemon and chopped mint. You can try this with other popular Goan fish like Chaunak (Giant Sea Perch) or Pomfret.
6. MORI AMOBOTIK

Take half a kilo of fresh Mori (shark), clean well, and cut into bite-sized chunks, season with salt, and set aside for 10 to 15 minutes.
Heat 2 to 3 tbsps of oil in a Tawa and fry 1 finely sliced onion until it turns brown.
Add 2-3 (add more for more gravy) tbsps of Aamso-Tiksso masala paste and fry for another minute.
Add a cup of water and allow it to come to boil. Add the shark and cook over a low flame until the fish turns firm to the touch.
Adjust salt, garnish with fresh coriander leaves, and serve with steamed rice or poi (Goan bread). Though traditional Ambotik is made with sharks, you can use also Rohu, Catla, Catfish, or any fish that has chunky flesh.
7. CHICKEN SHAGOTI

Clean 1kg of chicken, cut into bite sized pieces and season with salt. Marinate with 1 tbsp of ginger-garlic paste, 1 tbsp of coriander paste (from coriander leaves) and set aside. 
In a frying pan, fry 2 large onions, thinly sliced, until they turn translus- cent. Add the chicken and cook on high heat until the water begins to evaporate (about 3-4 minutes). 
Mix 2 to 3 tbsps of the Pedne Shagoti masala with 1 cup of coconut milk and add to the chicken and cook for 10 minutes. 
Stir well and cook for another 15 minutes till the gravy reaches the desired thickness. Garnish with coriander leaves and serve with Poi (Goan bread) or rice.
8. SWEET POTATO BHAJI

Take 1 kilo of sweet potatos and cut them in bite sized pieces. Cook until three-fourhs cooked. 
In a pan, fry 2 finely chopped onions and 2 tbsps of ginger-garlic paste until the onions become translucent. 
Add 2-4 tbsps of Gavli Bhaji masala and fry for a minute. Add 1 finely chopped tomato and cook until it becomes soft. (at this point you can make this a mixed bhaji by adding a cup of chickpeas to the mixture) If not, add 1 cup of coconut milk and bring it to a simmer on a low flame. Add the sweet potato and salt to taste. 
Cook for another 3-4 minutes until the gravy reaches the desired consistancy. Serve hot with rice or Poi (Goan bread). You can also use potatos or yam.
9. PRAWN WITH OKHRA

Heat 4 tbsps of oil in a kadai, and fry 1 finely chopped medium sized onion until it turns pink. 
Add 250 grams each of the prawns (cleaned and deveined) and the okhra (lady’s fingers) and sautee for about a minute. 
Add 2 to 3 tbsps of the Soongta Hooman masala along with a cup of thick coconut milk. 
Stir well. Add salt to taste and cook until the prawns and the okhra are done––the prawns should not be overcooked––and the gravy reaches the desired consistency. 
Garnish with chopped coriander leaves or mint leaves and serve hot with steamed rice or poi (Goan Bread). A variation on this is substituting okhra with white radish.

As a child Sunday's used to be exciting... Where the routine was so simple and no hustle... Waking up late as there were no worries of getting late for school.. no tuitions... Life was so simple and stress free... 
On of my Sunday ritual was to go to the market (bazar) with my father to buy vegetables, fish, chicken for the entire week (as the market place was bit far from our house and it was not possible to visit every day)... 
Sunday menu used to be always special as it would either include Chicken or Egg or some other good fish (which were not affordable for everyday consumption like Pomfret, Prawn, Ilish or Hilsa) 
I still remember that I used to sit by my mother's side in the kitchen and observe how she marinated the chicken or fish and kept it aside before finally cooking them to some delicious curry.. Even my father cooks tremendously well (may be I got the trait from my parents) and so do my husband...
Coming back to the reality.. Sunday's are still exiting as I get to spend my entire day with Shivang and Aarav (rest of the days I am so tied up with my office work that I am unable to spend quality time with them... And that's a hard fact)... 
This Sunday we bought Chicken from the market and my father was not very pleased with that as now a days he does not prefer eating chicken much... So I decided to opt out of the regular Bengali Chicken Curry recipe and try something different... So I thought of making a gravy which will look and taste like mutton curry minus the regular potato... 
I came out with an idea of cooking the chicken in an fried onion or Beresta curry... Here is the recipe.. Check it out.. Give it a try and let me know how it came out... 
Ingredients:
Skinless Chicken - 1kg (curry cut) 
Big Onions - 4 to 5 thinly slices (this is going to be the base of the gravy) 
Tomato - 2 (pureed) 
Ginger paste - 1 1/2tsp 
Garlic Paste - 2tsp
Ghee - 5 tbsp
Bay leaf - 1
Cinnamon - 1stick
Clove - 3 to 4
Cardamom - 3 to 4
Red Chilli Powder - 1/2 tsp
Kashmiri Red Chilli Powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Salt - To taste 
Method:
Marinated the chicken pieces with salt and keep it aside
Take a kadhai add 4tbsp of Ghee let it heat add the thinly sliced onions and fry them till they become dark brown in colour. 
Keep the fried onion aside and let it cool down completely 
On the same Kadhai add 1 tbsp of Ghee and fry the chicken pieces slightly (do not over fry as it will become tough once cooked) 
Make a paste of the cooled down fried onion and keep aside 
In the same kadhai add all the whole spice (you will be left with Ghee on the kadhai after frying the chicken pieces. Rest of the cooking will be done with that Ghee only) 
Once the whole spices starts splattering add the ginger and garlic paste and fry till the raw aroma is gone
Add on the fried onion paste and cook for 5 mins
Add on the tomato puree and salt and continue cooking till the rawness of the tomato is gone
Add all the powder spices and cook till the spices leaves oil (you can add some water to avoid burning of the spices) 
Once the spices are cooked properly add all the chicken pieces and keep cooking until the chicken pieces are 80% cooked 
Slowly the gravy colour will change to dark brown then you will get to know that the gravy is nicely cooked 
Add some water at that stage (to your desired gravy consistency) and cover it and give it a nice boil for 10mins
Check the seasoning and turn off the heat 
Garnish with some green chilli and serve it hot with steam rice, fried rice, pulao or roti... Believe me it is such a side dish that goes well with all.

Pomfret Patio : Out of all the pomfret recipies , pomfret Patio is my favourite. The smell of curry leaves along with cumin seeds and dry red chili gives this recipe a magical taste and flavour. Pomfret Patio is not really a Bengali cuisine, it's origin is Parsi. However, I always prepared this cuisine in my own Bengali style. I always shallow fry the pomfret fish after marinating in salt, turmeric powder, red chili powder and lemon juice. Whereas the Parsis prefers to not to fry the fish, instead, they marinate the fish in salt and turmeric powder and directly cooks in the rich gravy of tomato, onions and other spices. The Parsi Patio at its very basic is a sweet, sour, tangy and slightly spicy seafood accompaniment featuring curry leaves, coriander,, jeera, garlic, jaggery and brown vinegar. This semi-dry preparation made with tomatoes, onions and pomfret fish is the easiest to make and can be cooked in under ten minutes. Fish Recipes #FishBiryani #Fish #Rawmango Fish Biryani Ingredients: for marination Seer Fish - 1 Kg Turmeric powder - 1 tsp Chili powder - 2 tsp Salt - 2 tsp for saute Ghee - 2 Tbsp Oil - 1 Tbsp Bay leaves - 3 nos Cinnamon - few pieces Cloves - 10 nos Cardamom pods - 4 nos Onions - 5 nos (chopped) for masala paste Ginger - 1 big piece (chopped) Garlic - 7 to 8 cloves Green chilis - 3 nos Dry Red chilis - 3 nos Fresh grated coconut - 2 Tbsp Little water Tomatoes - 3 nos (chopped) Turmeric powder - 1/2 tsp Chili powder - 1 tsp Coriander powder - 2 tsp Salt Coriander leaves - 1 small bunch Mint leaves - 1 small bunch Long grain rice - 500 ml (soaked 30 mins) Diluted coconut milk - 500 ml Method: 1. Marinate the fish pieces with turmeric powder, chili powder & salt for 30 mins 2. In the pressure cooker, add ghee & oil. Saute Bay leaves, Cinnamon, Cloves, Cardamom pods & Onions 3. Grind Ginger, Garlic, Green chilis, Red chilis & Fresh grated coconut with little water to paste 4. Once the onion turns brown add the masala paste and cook till the raw smell goes 5. Now add tomatoes, Turmeric powder, Chili powder, Coriander powder, Salt, Coriander leaves& Mint leaves. Cook till the tomatoes becomes mushy 6. Add the marinated fish and gently mix till the masala coats evenly. *Do not break the pieces 7. Add soaked basmati / long grain rice & diluted coconut milk. Mix gently 8. Close the lid. Wait till steam appears, then put the weight 9. Cook for 5 minutes and turn off the stove. Raw Mango Fish Curry Ingredients For Marinating Fish Black Pomfret - 250 gms Salt to taste Turmeric powder - 1/2 Tsp Chili powder - 1 Tsp For Curry Raw Mango - 1 no. Oil - 2 Tbsp Mustard seeds - 1/2 Tsp Fenugreek - 1/4 Tsp Shallot - 1 1/2 cups Garlic Green chili - 2 nos slit Curry leaves Ginger garlic paste - 1 Tsp Tomato - 2 nos chopped Turmeric powder - 1/4 Tsp Chili powder - 1 Tsp Coriander powder - 2 Tsp Salt to taste Kashmiri chili powder - 1 Tsp Water - 1 1/2 cups Coriander leaves Fish Omelette Ingredients Marinated Fish - 2 nos Egg - 2 nos Turmeric Powder - 1/4 tsp Green Chili - 2 nos Onion - 1 nos chopped Coriander leaves Grounded Pepper Salt Oil Method: 1. Seer fish is been marinated with turmeric powder, chili powder, ginger garlic paste & salt. 2. Fry the fish, 3 minutes on one side and then flip it. Cook for 3 minutes on another side. 3. Shred the fried fish and discard the bones. For this recipe use single bonefish. 4. In a mixing bowl, crack open the egg, add salt, turmeric powder, green chili, onion and whisk it. 5. Next step making the omelette, coat the pan with little oil. 6. Once the pan is hot pour the egg mixture and reduce the flame to low. 7. Now gently add the shredded fish pieces, coriander leaves, and pepper. Close and cook it. 8. Your Fish Omelette is ready to serve.
