Today's canning adventures. 14 pints of pork broth and 6 pints of pulled pork. Pork broth - used the bones from the smoked pork chops I canned last week. Was on the stove simmering for 48+ hours! Pulled pork - was in the smoker most of the day. I brought it up to a temp of about 150 (didn't want to take it all the way to 195+ .... But 150 may have been a bit much), wrapped in foil and let it sit for an hour or more. Cut it up and it seemed a bit dry. So we got water boiling and seasoned the water with my homemade rub that is on the pork today. Added that to the jars with the meat. We did lose 1 jar of broth in the canner. The bottom blew out.
