My son has encouraged me to develop a spice rub for grilled steaks. I’ve settled on a blend of sea salt, cane sugar, cayenne, smoked paprika, cumin, and cayenne. The spinach is steamed, squeezed dry, then sautéed. I’ve added tons of my bountiful garlic, homemade ricotta, and parm. This is my riff on a recipe from Carla, @lallimusic. It starts with a seared pork layer (seasoned ground meat from our local share) topped with toasted garlic croutons (from my home baked organic sourdough). Then torn haloumi. Then a ton of torn herbs from my container garden, plus some foraged ones: garlic mustard, mint, basil, cilantro, tarragon, lemon verbena, thyme, and chives. Finally seeds, lemon zest, and flaky salt toasted in oil: pumpkin, cumin, sesame, mustard, and caraway, drizzled over it all. When it's time to begin to embrace life after another huge loss (Dad's unexpected death 2 months after Mom's), food is one of the best ways I know. Standing on the deck, watching the deer and wild turkeys in our woods while grilling our supper, I feel a glimmer of hope and vitality return.
