Homemade Sandwich Bread Recipe.
(only 6 ingredients)
2 cups of warm water
1 tbsp active dry yeast
1/4 cup of sugar (or honey)
Let yeast/sugar proof for a few minutes until its bubbly/foamy then add other ingredients
2 tsp salt
2 tbsp olive oil
5 cups flour
Mix until its not sticking to sides of bowl anymore, it should be tacky.
Leave in bowl and cover until it doubles. After it doubles, punch it down and unstick it from sides to remove it from bowl onto a floured surface to knead and shape.
Add about a tsp of olive oil to add some moisture back into your loaf and then put it in greased bread pan (or you can use parchment paper inside the pan) and let rise again then.
Put in oven for 35 mins on 350.
Remove loaf from oven and let it cool completely before cutting into it.

Here’s what you’ll need…
Ingredients
Bread
236 Grams Warm Water (1 Cup)
17 Grams Dry Active Yeast (1 Tablespoon)
510 Grams All-Purpose Flour (4 1/4 Cups)
42 Grams Quick Oats (1/2 Cup)
9 Grams Salt (1 1/2 Teaspoon)
85 Grams Honey (1/4 Cup)
56 Grams Butter (1/4 Cup)
1 Large Egg
Oat Topping
1 Large Egg
15 Grams Water (1 Tablespoon)
10 Grams Quick Oats (2 Tablespoons)
Additional Equipment
Small and Large Mixing Bowls
Wooden Mixing Spoon
Measuring Cups and Spoons
Kitchen Scale
Cambro Container with Lid
One 9-inch by 5-inch pan
Cooling Rack
Oven Mitts
Instructions
In the bowl of a standing mixer, stir together yeast and warm water. Let rest for 10 to 15 minutes until foamy.
In a separate mixing bowl, combine the dry ingredients: flour, oats, and salt.
Set the standing mixer to low. Add the dry ingredients and mix with the dough hook. Gradually mix in in the wet ingredients: honey, butter, and egg.
Continue mixing with the dough hook until the dough pulls away from and cleans the sides of the bowl. The dough will feel smooth and slightly tacky. If sticky, add flour a tablespoon at a time. If too dry, add water a tablespoon at a time.
Place dough in a lightly greased container. Cover and let rise until doubled and puffy, about 1 hour.
Punch down dough and shape into a sandwich loaf. Place in a lightly greased 9-inch by 5-inch bread pan. Cover and let rise until the dough reaches above the lip of the pan, about 30 minutes to 45 minutes.
Preheat the oven to 375° Fahrenheit (190° Celsius) and bake for 35 to 40 minutes.
Turn out bread onto a wire cooling rack and allow it to cool completely before slicing and serving.

I made a silly little cartoon loaf of bread! I think the Pullman loaf pan was what made it so tall and silly looking. Still, it was pretty good! It reminded me of Texas toast, very fluffy and held it's structure really well. It also toasted *fabulously* (pictured) and made some pretty good French toast as well! I wouldn't recommend it if you're looking for a flavorful bread, but it's a good base for things!

I made a bread recipe that rivals storebought white bread in terms of softness and lasting power that is half, but could be more, whole wheat flour and is made with baking ingredients most people could source easily (at least in the USA). I’ve been developing the recipe for several months and finally think it’s good enough to stop reiterating it every time I bake it. I’m very proud of it.

Avocado and Pesto Grilled Cheese
Chef’s Note: I don’t know how to feel about this. I remember that this was an interesting combination, but I have an aversion to store-bought pesto (taste thing). I think this was good though.
Ingredients
8 slices sandwich bread (I use whole wheat)
1/4 cup pesto
1 ripe avocado, peeled, pitted, and sliced
4 to 6 oz thinly sliced mozzarella/shredded mozzarella or sliced Muenster
kosher salt
(opt.) pinch crushed red pepper flakes
maple syrup or honey
2 tbsp olive oil or butter spread
Instructions
1. Brush one side of each slice of bread with pesto.
2. Layer avocado and mozzarella over half of the slices.
3. Sprinkle with salt and, if desired, crushed red pepper flakes. Drizzle with some maple syrup
4. Top with remaining bread.
5. Brush outside of sandwiches with oil or butter spread.
6. Heat large skillet over medium-low heat. Cook sandwiches for 2 to 3 minutes per side, pressing lightly, until bread is golden brown and cheese is melted.
