Honestly, where do you think Sigma sits in the Mirrorwatch Universe? I’ve seen theories that he could have been saved by Overwatch instead, that he wouldn’t have lost his mind, etc, but I have yet to see and decisive agreements in the community.
I think the story for Sigma would be the same up until he's saved. The biggest problem with Sigma is that despite him having a lot of similarities to Amelie, his accident doesn't have a moral connotation. The only thing that has a moral connotation in his story his who he is saved by and how he is treated. Not only that but since Sombra is a part of this universe's Overwatch I honestly don't see Sigma anywhere else as to me Sombra and Sigma's dynamic is integral to both characters. That and this version of Overwatch desperately needs more members cause as it stands there aren't enough playable villain characters that would be on this Overwatch's side, let alone to give them a fighting chance against this version of Talon.
So I do think that he would be saved by MW!Overwatch I also believe that through he would have still lost his mind from his experiment, in this world he would be getting the help he needs. Meaning though he'd still have moments of drifting and being off in his own world, he'd be a lot more aware of his surroundings.

Could I request some Sigma headcannons? How would he react to being confessed to? (Full on flowers and gifts!) + how he would be in love/in a relationship?
Sure thing! Figured I'd get to this first as it's only HC's, but hopefully you like it! Bear with me, first time doing this sorta thing
He was awkward at first, almost speechless as you confessed, a single flower handed to him.
"Oh, thank you." rosy cheeks and a stammer.
He wouldn't understand for a long time, still confused as to why you liked him.
The flower you confessed with was in a small vase on his desk and he'd keep looking at it between equations.
"Curious."
He'd see you around more often. (More like he began to notice you even though he'd pass you in the hallway almost everyday)
Your smile was burned in his memory, and the way you confessed heightened his own feelings towards you.
Small gifts appeared on his desk, little trinkets that you had found.
Sigma quite liked the origami stars, noticing the small imperfections in each one, bashful you took the time to make them.
He eventually asked you out for coffee, to get to know you better.
Looks wasn't something he worried about, but he made an effort this time, a simple grey sweater and black slacks.
Question after question were answered while he was sat with you, hot coffee burning through the mug he held.
He enjoyed his time with you, eventually confessing he quite admired your persistence in pursuing him.
He felt touched that someone liked him more than a friend.
After awhile, hangouts happened each week, a coffee date here or a museum date there.
He enjoyed your company, much like you enjoyed his
Sigma would ask before he did anything, even if it was holding hands. He didn't want to make you uncomfortable even though he knew your feelings towards him.
Hand holding, cuddling, kissing, or even laying together, he'd ask.
Always gentle, never wanted to harm you or put you in harms way.
Very protective.
He learned a lot about you, and was always curious to know more.
"I got you these." He'd say, handing you a bouquet of flowers - the same flower you confessed with, but with the added kiss to the cheek.
