Dinner tonight- rice with stir fried veggies (zucchini, squash, and broccoli) and pork/veggie mandu. I made two sauces to go with it on the side. Recipe 38: Thai Basil Fried Rice (Seonkyoung Longest)

Leftover rice? Make THIS!
I’ve been relying on Seonkyoung Longest’s recipes a lot lately. Her hypnotic AMSR video tutorials pull me in every time they come through my feed and I’ve never been disappointed with a recipe. (If you’re keeping track, my Recipe 39 will also be one of Seonkyoung’s.) If you haven’t checked her out yet . . . what have you been doing!?! I turned to her Thai Basil Fried Rice to make use of ingredients I already had (mostly from other recently made Seonkyoung recipes) and found a perfect quick meal for two to enjoy after getting our second doses of our Covid vaccines on a Friday night. We’re looking forward to being considered “fully vaccinated” in two weeks, but for the moment another night of “Food You Might Order Going Out But Are Enjoying In” seemed perfectly appropriate.
SKILL RATING: Easy-Peasy
This was so easy and I can’t conceive of a better use of leftover cooked white rice than frying it up with some vegetables and protein. I made a couple minor adjustments to the recipe to compensate for the ingredients I had on hand, but this didn’t make it any more difficult to tackle. Her tutorial uses shrimp, which I love and would obviously be delicious. But I had two small remaining chicken thighs left from what I purchased to make her delectable Koren Style Hot Chicken. I cut the meat into bite-sized pieces and threw them into a quick marinade of grated garlic, fish sauce, and soy sauce while I prepped everything else. I also chopped up some Chinese broccoli to add to the rice since I almost always add a little extra veg to any recipe. I added the broccoli after the chicken had nearly cooked through, but before adding the rice and sauce to allow it to cook enough so that it wasn’t raw but wouldn’t end up turning to mush by overcooking it. Regardless of what protein you use or if you add some extra vegetables, this is one of the easiest things to make. Including prep, it takes about 15 minutes.
TASTE RATING: 5/5
So good and infinitely customizable. The techniques transforms a lump of leftover rice to something completely new with a pleasing combination of crispy bits and more tender bites. The final notes of Thai basil give the whole dish a fresh tasting finish. Try this out next time you have some leftovers in need of a re-vamp!

I loves me some Seonkyoung Longest and often follow many of her recipes. Though as you know, I tend to switch recipes up a tad here and there. I went w/ her Wasabi Shrimp Spaghetti! -Shrimp: Bought deveined/peeled shrimp. Defrosted them & put them in bowl. Mixed sake/corn starch/salt in and mixed it all up. Set aside. -Sauce: Mixed wasabi powder/sake/soy sauce well. Set aside. -Spaghetti: Boiled some noodles in well salted water. Removed when ready. Set aside. -Green beans: Had some frozen greenbeans so blanched them up then removed & tossed in butter/salt/pepper. Set aside. -Assembly: Put butter in pan. Added shrimp. Let cook. In this order - Added green beans & previously chopped green onions. Added sauce mix. Added spaghetti. Stirred well. Plated up. Quick taste. Should have used more wasabi. Dropped a bit of some red pepper paste/sweet chili sauce in & mixed well. That did it! Garnished w/ green onions/sesame seeds. Result: Pretty tasty. I def need to mix the wasabi powder w/ water first & make a paste instead of just right into the mix. And def more wasabi. Then I wont need the additional spice/sauce that I added. Green beans were a nice addition & could have thrown in other veggies as well. 핫도그 (hatdogeu) - Hotdogs/Corndogs

(serves 4-6) 
There are many variations of the hotdogs however the version we are making is the most popular and the original. 
Equipment 
Wooden skewers 
Sieve 
Trays 
Deep fryer or pan with oil
Ingredients 
2 - 3 Hot Dog sausage - halved (so there are 4-6 pieces)
4 - 6 mozzarella pieces - cut to the size of half a sausage, refrigerated  
2 cup (250 g) all-purpose flour (or bread flour) - sieved
2 tbsp (30 g) granulated sugar 
½ tsp salt 
2 tsp baking powder
¾ cup (180 mL / 180 g) milk 
1 egg
Panko bread crumbs 
Oil for frying
Extra sugar for coating 
Condiments (usually ketchup and mustard)
Instructions 
Mix the flour, sugar, salt, baking powder, milk, and egg together in a large tray. Cover with cling film or a wet towel until the batter doubles on size If it is too runny, add more flour. 
Preheat the deep-fryer to about 190℃ 
Skewer the sausage lengthways and then skewer the cheese lengthways on the same skewer. Place back in a fridge 
Put the panko in a tray or plate. 
On a separate tray or plate, sprinkle a layer of sugar 
Take the sausage out and roll it in the batter. Make sure all spaces are cover otherwise the cheese will leak out while frying. 
Completely cover in the panko crumbs, squeezing it to make sure the crumbs stick on. 
Deep fry until completely golden brown 
Roll in the sugar while still hot and drizzle with ketchup and mustard (or any condiments) 
Popular variation: 
Just sausage
Just cheese
Cheddar instead of mozzarella
Tteokbokki instead of hot dog and cheese - boil before skewering 
Jalapenos - finely dice the jalapenos and add to the batter 
Cheetos/Doritos coating - crush up and add to the breadcrumbs 
Instant noodles - crush up to small pieces (but not to dust). Dip in batter then roll in crushed noodles, making sure to press it into the batter. Lastly, coat in the breadcrumbs 
Potato/Chips - cut potatoes into ½ inch cubes (cut chips in half). Dip in batter then roll in the potato/chips, making sure to press them into the batter. Lastly, coat with breadcrumbs. (these ones are called gamja (감자) hotdog. Gamja means potato in Korean)

Recipe 37: The BEST Pad Kee Mao aka “Drunken Noodles” (Seonkyoung Longest)

How does one determine “the BEST” when Pad Kee Mao is inherently incredible?
After trying WoonHeng Chia’s Vegan Pad Kee Mao, which was as richly flavorful and satisfying as it was easy to put together, a scroll through Seonkyoung Longest’s website brought me to her version dubbed The BEST Drunken Noodles. She tells us, “The BEST Drunken Noodles recipe is here no need to look around anymore.” Okay, Seonkyoung, you had me at “Drunken Noodles” already. That and I happened to have everything I needed on hand including half a package of Chow Fun noodles, Chinese broccoli, and Thai basil left from my go at WoonHeng’s version. I also happened to have the exact amounts of shrimp and bacon she uses in her tutorial video. I will point out the instructions say to use whatever protein you wish and it’s very easy to make her version vegan, but the coincidence here made trying this recipe so soon after the other an easy choice. As to which recipe is better . . . they were both great! I hope you try them out to see which you prefer, I know I’ll make both versions in the future.
SKILL RATING: Easy-Peasy
This was both fast and easy. There was a little chopping involved, but I really love working with the fresh Chow Fun noodles. After softening them under a damp paper towel in the microwave for a minute (WoonHeng’s method), they need to be carefully pulled apart, but are otherwise ready to toss into the stir fry. Most stir fry recipes are going to require using other pots to cook up the accompanying rice or noodles. Not so here and I always appreciate a true one pan meal! 
TASTE RATING: 5/5
There is something truly magical about the combination of pork and shrimp. The fattiness and salt of the pork pairs well with the tender, sweet shrimp which is fantastic in any number of recipes from dumplings to risotto! The bacon fat here gave a succulent gloss to the noodles and vegetables and the bright bite of the Thai basil provided the melodious high notes. I gave mine a little squeeze of lime at the end for a little extra punch. Chef’s kiss!
