Time for some real KFC! Korean fried chicken that is. I made it along w/ some kimchi fried rice. - Chicken: Cut thighs into chunks. Marinated in sake/salt/pepper/minced garlic/diced shallots/red pepper flakes/ginger/oyster sauce. Let sit overnight. Next day, removed pieces & covered in corn starch (alas, no potato starch). Fried on medium/high heat for a bit. Removed. Then fried again on high. CRISPY! - Sauce: Mixed together gochujang/ketchup/honey/brown sugar/soy/minced garlic/sesame oil/ginger. Warmed up on low heat. Added in chicken to coat. - Rice: Made rice night before. Next day, Added shallots to kimchi & fried in pan w/ oil. Added rice, then bacon, then sauce (soy/sugar/gochujang). Stirred up a bit. Added crunchy wasabi peas/chopped green onions/salt/pepper/sesame oil. Topped w/ a bit of mozzarella cheese. Fried an egg & placed on top. - Plated: I garnished all w/ fresh chopped green onions/chopped dried seaweed. Sprinkled sesame seeds over chicken along w/ some red pepper flakes. - Result: GODDAMN DEELISH! That chicken was so crunchy thanks to both the starch & double fry. Sauce was great but will go a little hotter next time. I tried some new kimchi that wasn't all that so rice was okay. Will never buy that brand again. Made a beautifully rare skirt steak earlier. Marinated it overnight in cola/coffee/garlic/ketchup/dried rosemary/rice vinegar/salt/pepper/hot sauce. (Ala Chef John of Food Wishes). Pickled jalapeno marinated fried chicken w/ wild rice/mushrooms/bacon/cheese Bacon: Fried up large bacon pieces. Saved bacon juice in panl Set bacon aside. Chicken: Marinated chicken breast strips in pickled jalapeno juice along w/ the jalapenos. Seasoned w/ salt/pepper/hot paprkia/buttery jalapeno salt/red pepper flakes. Took out of fridge. Poured out marinade into pan w/ bacon grease. Cooked chicken on medium heat for just a couple of minutes each side. Removed chicken & let cool down. Breaded chicken with maple/brown sugar instant oatmeal. Let sit in fridge a bit. Removed & fried in oil quickly on each side. Removed. Then fried again very quickly! Put on tray & covered in mozzarella cheese because CHEESE! Put in 400 degree oven until cheese was thoroughly melted. Mushrooms: Put mushrooms in same pan that cooked chicken w/ all the juices. Added some butter. I was going to add cream but decided against. Added bacon back in. Poured out excess juices when cooked. Spooned it all over chicken. Wild Rice: Cooked up w/ butter. Result. Pretty damn good! Chicken had a bit of spice to it but the sweetness of the breading balanced things out and it was awesome. Got home from work & made some late night quickie kimchi fried rice. Deeeelish! Chopped up thick cut bacon into cubes. Fried up. Drained. Added roughly cut green onion kimchi. Then added Korean canned tuna w/ kimchi sauce in it. Threw in some minced garlic, gochugaru (Korean chili flakes) & ground pepper. Added cooked rice. Mixed well. Turned down heat. Spread shredded parmesan around. Cracked one egg in center. Put lid on & let cheese melt & egg cook. When done, I topped w/ sesame seeds & cut up pieces of dried seaweed. - Result: Hell yeah you know it was delicious! As you probably have noticed, I haven't been cooking in quite some time. A lot of it is that I'm back working full time & am just exhausted all the time. And a lot of it is I've been pretty depressed and down a bunch lately. But I decided to do a quick easy simple snack that I saw the amazing @cafemaddy do. It's called so-dduk so-dduk (Korean rice cakes & sausage). - I bought some small berkshire pork sausages & rice cakes. If you are unfamiliar w/ Korean rice cakes (dduk or tteok), they are not what you think of with American rice cakes. They are thick, chewy & usually glutinous. Think a thick pasta. I skewered them together & simply fried them in a generously oiled pan on both sides until the dduk was crispy. - Meanwhile I made the sauce to spread on it. I did a small variation of Maddy's recipe. Hers mixed gochujang/sugar/soy sauce/ramen packet/garlic powder/water. Shamefully, I was out of ramen so no packet! So I used everything else listed and randomly added some tomato sauce & sesame oil & mixed well. Then heated up in microwave for a short time. Apologies to Maddy for changing the recipe but it still turned out super good. - When the sausage/rice cakes were done, I took them out & patted them dry w/ a paper towel. I poured the sauce evenly all over each side and spread. Topped w/ some sesame seeds. - RESULT: Damn these were so tasty! Literally took me minutes to make. I was on zoom w/ a friend and was sending him pics of it and he was like "you're done already?" Such a great snack and so delicious and simple to make. Tonight's podcast meal for Emily (@the_e_squared) & I: Jimmy's Asian Chicken Salad! Easy peasy! Salad: Chopped up romaine, red cabbage, shredded carrots, cilantro, green onions. Placed in large bowl in sections. Added sliced almonds, crispy chow mein noodles, canned mandarin oranges slices. Bacon: Put wasabi powder on thick cut bacon slices. Cooked in toaster oven. Chicken: Marinated chicken breasts in soy sauce, sesame oil, sesame seeds, pepper, pink salt, red pepper flakes, diced garlic, chopped ginger. Covered & put in fridge for an hour. Took chicken out & placed on rack in oven. Removed after done & sliced into chunks. Placed chicken on top of salad. Crushed up roasted wasabi seaweed & spread over. Dressing: Mixed soy sauce, ginger puree, diced garlic, sugar, honey, sesame oil, sesame seeds, rice vinegar, salt, pepper. Plating: Tossed salad well w/ everything. Served on plate. Placed bacon pieces evenly on each plate. Dressing on side to add to our own taste. Would have liked more heat to balance sweet but I knew Emily wouldn't like that. Result: Simple. Easy. (Still took some time but fun!). Deeeelish! Marinade really soaked into chicken. I had some red potatoes so decided to do a variation of a recipe my friend Falynn put together. WHAT DID I DO?! Well, one thing I forgot to do was take pics as I was making it...so here it is after I put the leftovers into a container. SORRY! :) - I cut the red potatoes into cubes, leaving skin on most of them. Soaked them in salted water overnight. Next day, took them out & put them in a pot. Poured heavy cream & milk in. Added half of a sliced white onion, about 5 whole garlic cloves, a few whole sprigs of fresh rosemary & parsley, ground black pepper, & dry herbs de provence. Brought to a boil on medium high heat & stirred off & on. After awhile, let it simmer for a bit. - When potatoes were cooked, I poured into a strainer over a bowl to save the liquid. Carefully removed the herbs & large onion pieces. Left garlic in & bits of herbs here & there. Added about half a stick of butter & started mashing! I slowly added in some of the cream/milk mix that I had saved & mashed/stirred together. I also added a bit of cream cheese, a good portion of gorgonzola blue cheese & cut up pieces of bacon that I had cooked in the toaster oven. I had also added some of the bacon fat grease to the pot when it was still cooking the potatoes. After fully mixing together...I ATE SOME. - Result: GODDAMN TASTY! So flavorful & creamy. Honestly, I didn't need to add the bacon or cheese as it tasted so great but it's my party & I'll cry if I want to. Baby's first cornish game hen! Listen, I cook all the time & am pretty good at it. But still a lot I haven't worked with or tried. Cornish game hen being one. So I looked up a bunch of different recipes (Giada, Ina, etc) & chatted w/ a friend (Thanks @erincrosbymakes!) about what I should do. So here's what I did. Cornish game hen w/ roasted potatoes/tomatoes. - Potatoes/tomatoes: Chopped red potatoes into chunks. Sliced cherry tomatoes in half. Covered in garlic oil/jalapeno salt/pepper/paprika/minced garlic/fresh rosemary/herbs de provence/bacon fat/butter. Mixed well & set on one side of the sheet pan. - Chicken: Poured salt/pepper/melted butter/fresh rosemary/sweet paprika/diced onions/minced garlic in a bowl. Put on some kitchen gloves & mixed well. Rubbed butter all over chicken. Then stuffed the mix inside the chicken & rubbed it all over on the outside. Added some chopped up lemons inside as well. Placed that on the other side of the sheet pan & stuck in 350 degree oven for about 50-55 minutes. - Result: It was a little hen but boy did it pack in that flavor. So juicy & tender. I'm not good at slicing a bird properly so I just sort of tore into it. Damn it was delicious! Potato/tomato mix was awesome too! Now that I've given it a shot, I def have ideas for future roasts. Maybe I might even fry one? Baby Baker's first chocolate chip cookies! As said, I'm a good cook but never been a baker. So taking baby steps and trying things lately. I asked around for some super basic recipes. No nuts, oatmeal, fruit, etc. Simple. Both baking & non-baking pals gave suggestions. I did go w/ a baking pal! (Thanks Adrienne!) :) Thanks to everyone else. I will def try other recipes. - Recipe said to make tbsp sized balls and I think I made them slightly a bit too big. But besides that...they turned out pretty good! Yeah, I'm shocked too. :) I was curious about this recipe as it involved honey & that sort of threw me off. But it worked! I also combined chips & chocolate chunks (cut up a giant Hershey's dark chocolate bar) & thought I may have put too much in but it seems to have worked out. I got some tilapia & didn't know what to do w/ it. I mean, I had plenty of ideas but wanted something super simple/quick! I looked up a bunch of recipes & sort of combined/came up w/ my own. Lemon Parmesan Tilapia! - In a baking pan, I put in garlic olive oil, minced garlic, jalapeno salt, black pepper, hot paprika, lemon juice, grated parmesan cheese, dried parsley, melted butter in & mixed up well. I had cut some tilapia up into somewhat square pieces & placed in pan. Mixed it all up making sure to cover every side of each piece of fish. Then topped it w/ more parmesan & parsley. Stuck in an oven for about 10-12 minutes. - Result: So simple & easy. And so damn tasty! Could easily mix up ingredients around keeping the basic lemon and parmesan. Nice bit of tanginess w/ the lemon. Bit of heat w/ paprika & jalapeno salt. And minor cheesiness w/ the grated parm. Deeeeeelish. Baby baker is at it again! As you know, I can cook like a MFer but have never really tried baking. Well, desserts that is. Decided to try some chocolate chip pumpkin bread this time around. I used Gemma Stafford's recipe of Bigger Bolder Baking. She's great for beginners and more experienced peeps. Well, I used her pumpkin bread recipe and added chocolate chips & chunks. And I didn't make the glaze. - Also, I don't have a proper bread pan so I used 2 smaller disposable ones & watched the time. I think I got it right! They turned out pretty good. Held together better than the banana bread I made last week. Deelish! - I need to try some basic chocolate chip cookies next time. But also, I'm afraid to get into baking as I'll do it all the time & then eat tons & turn my chub rock Asian self into an even chubbier rockier Asianier (can I be Asianier?).
