my cooking endeavors this week:
- for tonight (monday) i will try to be crafty and use the leftover chicken breast i saved from when i roasted the whole bird a few days ago. i think if i just reheat it in a pan and we eat it on top of jasmine rice cooked in chicken stock and turmeric and maybe buttered, it could be good to soothe the nausea that my gf was suffering from yesterday
-on tuesday i don’t work so i have pretty lofty cooking plans that involve a meaty slab of slow cooked pork shoulder and a wealth of whole toasted spices (curry leaves, cinnamon sticks, cloves, cardamom, coriander, cumin, fennel, etc) to grind and make into a curry powder. i want to slow cook the pork w coconut milk and lemongrass and stock for a few hours and serve it steaming hot over rice
- i also have a square of pie dough i made last week when i made quiche that i want to utilize for a gooey tart cherry pie with (my gf’s wish is my command ofc <333)
- on wednesday my gf won’t be home for dinner so i will probs just have like . a pb+j LOL
- for thursday, it’s a bit of an experiment. the best part of the roasted chicken i made last week was the wings, and it wasn’t even close. they came out sooo crispy and juicy and flavorful and spiced. i want to try recreate them on just a batch of wings, and maybe eat them w steamed jasmine rice and cucumber salad ? i’ll dry brine them and roast them in the oven and see how close i can get
- on friday we are going to have rice bowls w crispy skin salmon (our faveee) and rice and nori and cucumbers and avocado and toasted sesame seeds and chili oil and scallion !! easy and fast and flavorful
- saturday i work late so it’s leftovers in my lunchbox eaten hastily in the breakroom lol
- and for sunday dinner, my gf sent me a link to a video of this cold noodle soup dish w a cashew butter broth and buckwheat soba and soft boiled eggs and cold crisp veggies (purple cabbage and cucumbers and lime) that we both are eager to try !!

also realized i haven't been sharing my cal intake these past few days, oops
wednesday: went out with my aunt, had a chicken sandwich. then later for dinner i had some shrimp alfredo. net: 972
thursday: had some alfredo for breakfast, walked for an hour and lost about 300 cals. then had some mashed potatoes and 2 chicken strips, which wasn't the best day ever. it made me go to about 1,200 calories that day.. (was my own fault, didn't count the calories properly). but because of my exercise, my net was: 881
friday: basically had microwaved sesame ginger cod all day- think i ate the whole box actually... oops. got close to 1,000 overall, but my net from exercise was: 692
and then today was: 3 pieces of salmon and a 10 cal monster. may or may not have something else very small, bc i feel like i've been eating way too much lately. about to do my exercises, but net as of posting this is: 390

Little Meals on the Aerie, Week of 9/22
I love meal prepping, so I'm going to share what's on our table this week! I pack breakfast and lunch for us to take to work. For dinner, I make ahead nearly all of this to reheat the day of. I don't often get home until 6pm, so I want dinner on the table in fifteen minutes flat!

Lemongrass Chicken Noodle Soup

Spicy and warming, this flavourful Lemongrass Chicken Soup is just what one need to soothe a cold. I reckon it might even prevent it! Happy Friday!
Ingredients (serves 1):
1 1/2 tablespoon toasted sesame oil
half a thumb-sized piece fresh ginger
1 small fresh lemongrass stick
1/3 hot chili pepper
1 medium carrot, rinsed
leftover Roast Chicken (a small thigh or breast or wings)
1 tablespoon Hot Pepper Sauce 
1 1/2 tablespoon sweet soy sauce
1 cup Chicken Stock, warmed
90 grams/3 ounces egg noodles
boiling water
1 tablespoon demerara sugar
Heat toasted sesame oil in a medium saucepan over medium-high heat.
Peel ginger, and cut it into thin slices. Add to the oil, and and fry, a couple of minutes.
Cut lemongrass stick into chunks, and cut each open lengthwise, without going all the way. Add to the saucepan. Fry, a couple of minutes more.
Thinly slice hot chili pepper, and stir it in as well.
Cut the carrot into thin slices, and add to the saucepan. Cook, another minute.
Roughly chop the meat of leftover Roast Chicken, and stir into the saucepan. Cook, 1 minute.
Deglaze with Hot Pepper Sauce and sweet soy sauce. Reduce heat to medium. Then, stir in warmed Chicken Stock. Stir in demerara sugar Bring to the boil, cover with a lid, and simmer, 5 minutes.
Meanwhile, place egg noodles in a bowl. Cover with boiling water and a lid. Allow to soak and cook, about 3 minutes.
Once cooked, add the noodles, with half to a full cup of its cooking water, to the saucepan. Increase heat back to medium-high, and bring to the boil.
Enjoy Lemongrass Chicken Noodle Soup very hot.

there's just something so comforting about childlike things, even if i never actually did them as a child.
i want to put on sesame street dvds and fall asleep in front of the tv on a friday night. i want to eat chicken nuggets with ketchup for lunch. i want to drink a capri sun while i draw chalk rainbows on the sidewalk. i want to have a sleepover with my friends and paint our nails and pretend to be the adults we're not.
i want to be the child i was never allowed to be.

Doubts Creepin' In
Couple of weeks ago I said I wanted to "finish strong" - I wanted to weigh the lowest I've ever weighed on my last weigh-in, I have a few unwritten goals that I want to surpass, and I want to skate into the New Year flawless on my diet.
Well,
I have become extremely snacky recently. I am still eating "clean" but the portions are getting out of control.
The recent Snack Attack obviously hasn't helped my weightloss progress
And...
I got a Family Holiday Dinner coming around corner just before my penultimate weigh-in and I don't know if I can resist all the side dishes... especially since I will be deprived of my most coveted Holiday Elixirs - I'm talking about the Three Wise-Men of Winter Goodness:

It's 10:30pm.
I’m in Chicago.
I’m drinking filtered ice water from the fridge.
Drag show at LAM tonight. A bunch of the performers did drop-offs when I was working up front -- sweetest people with the best manners. It was a joy talking with them.
Sent some emails out this morning to clear my head: to CARAS asking if I can be assigned a new mentor -- because my current one hasn’t gotten back to me since March and I need feedback. To the local Food Not Bombs to get info on food distros and pick-ups for Ramsay (and maybe Rocket and me, if shit goes sideways later this year).
My mint is coming up beautifully in the back garden. I made chicken stock two days ago and decided to move it from the fridge to the freezer. Also made black tahini for smoothies -- couldn’t find the blades for our food processor and the top of the blender is in the dishwasher, so the only way I could grind the sesame seed was with the drink mixer attachment. Took a while -- and then a bit longer -- but I got it.
Minimal fatigue (weekend), no sound sensitivity, no itches or overheating or feelings of constriction. I buffed and painted my nails two days ago, repainted my index finger when I chewed the polish off. Dysphoria’s been a little worse than usual lately -- I’m trying to ignore it for now.
Things I feel positive about today: cleaning the house. The Vlad Tepes t-shirt I found at the thrift store on Friday. Remounting my Star Wars mini-zine and working on another one.

This year's Misawa City Festival marked 100 years! We enjoyed the vendor food, entertainment and parade this past weekend. The kids had a really great time! We stayed up past our bedtimes to see all the magical floats.
The different generations involved with each float was beautiful to see. All the floats were pulled by two ropes led by all ages ranging from what looked like 4 year olds to older men and women. There were moms with babes in arms and cute kids singing the different chants.
I've got to start taking pictures of the food vendors. As you can see, we were a bit distracted, but street food is always a must. The kids had typical fried chicken on a stick, fries seasoned with cheese and garlic and the adults had some pad thai and, forgive us for our lack of Japanese food knowledge, but what appeared to be a Japanese crunch wrap. Typically, we can count on churros, spiraled fried potatoes on a stick, and sesame balls. The adults imbibed on some local stouts from a brewery in town. Delicious! Next time I will try to get some photos.

Needless to say, we soaked up all that we could. On Sunday, we decided to go downtown again to see the festival during the day as we had seen all the floats on Friday night. And even in the daytime, they were exciting to see!
There was a park nearby that the kids played at for a while and Teddy played some baseball with a local boy and his dad.

Because we are still relatively new in town, we've had a lot of people ask us how we like it here. We are still responding with a resounding, "we love it!" We've also heard from other friends that have been here a while that the magic will wear off. And maybe that's true, but I really hope not.
I fully intend on exploring as much as I can. There is just so much to see and do in Japan. Montana taught us to get out and explore. We know that if we choose to be homebodies for too long that we won't appreciate the place we are in. Like anywhere, there is definitely a chance to get too comfortable. You go to the same places, eat the same foods, shop at the same stores. That might just be natural.
But we are being really intentional about staying active here. There truly is something for everyone.
I was told that apple picking season is happening soon and you better believe I am so there.

大家好! MS and I caught up at the Japanese restaurant which serves salmon hotpot. We shared spinach in sesame sauce and bonito flakes as well as grilled mini aribiki sausages. For mains, he chose grilled cod with rice which comes with miso soup and pickles and I tried their oyako donburi (chicken, onions and scrambled eggs with rice). We loved how the creamy sesame sauce added a delicate flavour to the spinach. Aribiki sausages seem to be less greasy than other sausages so there's less of a jelat (bloated, saturated, full) feeling after eating them. We enjoyed the crunchy skin and mild savoury taste. MS said his cod was good. As for my oyako donburi, tender chicken pieces and smooth, fluffy eggs paired very well with rice. The bill came up to under $62, which was reasonable given the quality of our meal.
After telling my parents about the coffee shop with the Japanese stew stall, they made their way there, tried the food and liked it so much, they asked to meet me when I feel like eating there on WFH days. So we did just that! After they were seated in the airconditioned section, I placed our orders. They wanted miso salmon stew with rice; I tried tomato chicken stew with soba (buckwheat noodles) and ordered an extra portion of soba for Pa to take home because he likes it. Finally, I ordered cucumber salads for all of us. The tomato chicken stew is delicious; the sauce tastes similar to the gravy served with Hainanese pork chop. The chicken, carrots and potatoes are very tender and the celery still has some crunch. What an enjoyable meal!

For all the talk about weighing ourselves and not being obsessive about it, I'll be very frank. I gained weight on purpose because, at 47yo, it isn't exactly healthy to remain a US size 00. But because, like family and close friends, I'm very active and don't eat fastfood often, my weight often dips below what I deem as optimal. I need to weigh myself daily so as to consume enough calories. My meals tend to be very filling and nutrient-dense so I don't snack a lot; when I do, fruit and nuts are enough to keep me full till the next meal. If I must name the foods that keep me fullest, it will have to be seafood and fish. My cousin, K, can pack away a lot of food but when I took him to a buffet and he fell in love with the seabass, he couldn't eat any more after finishing a plate of it.

K was so apologetic because I was paying for our meal and, because it was quite expensive, he wanted to justify the expense by eating as much as possible but, after the seabass, he just couldn't. I didn't mind, because I would rather he enjoys the meal. Now why would I say fish and seafood are the most filling - I often cook at home and dine out once a day. 6 Hokkaido scallops stirfried with celery eaten with a bowl of rice can keep me full till the next meal. The same goes with seabass baked with plenty of garlic, bakchoy and rice. Everytime I eat fish, especially white fish and seafood as a protein, man, I'm stuffed. Why we focus more on fish and seafood is because in the 1980s, the first centenarians appeared in Japan and we wanted to emulate what they did so as to stay healthy for as long as possible.

My parents feel the same when I treat them to lobster noodles; after downing that, dimsum and some vegetables, they don't have room for dessert even though both of them have a sweet tooth. When we're full, we're less inclined to snack and, if we do, these snacks tend to be light - fruit and a small quantity of nuts. Some people try to restrict calories for main meals but then get too hungry and snack a lot. Family, friends and I do the opposite; we have filling main meals and are usually too full to snack a lot. So I have the opposite problem; I have to weigh myself consistently in order to not lose the weight. Come at me if you want, I don't care. 下次见!

Little Meals on the Aerie, Week of 8/4
I love meal prepping, so I'm going to share what's on our table this week! I pack breakfast and lunch for us to take to work. For dinner, I make ahead nearly all of this to reheat the day of. I don't often get home until 6pm, so I want dinner on the table in fifteen minutes flat!

Wheeling’s Greek Festival Keeps Getting Better and Better

The parishioners of St. John the Divine Greek Orthodox Church welcome you to their 23rd  Annual Grecian Food Festival beginning Wednesday thru Saturday, July 24 through July 27 from 11:00 AM to 9:00 PM. “Come and connect with our heritage and traditions which are centuries old, yet timeless in substance. Our Sanctuary Tours will inspire you, the Orthodox Christian Bookstore will educate you, the food and drink will entice you and the hospitality will overwhelm you.” said Gus Kayafas, Festival Director. NEW AND RETURNING MENU ITEMS THIS YEAR! The Grecian Festival menu has expanded to over 40 items.  Included with all of our festival favorites are NEW ITEMS such as: Opa Fries, our famous Tavern Fries topped with gyro Mezze and tzatziki sauce;             Big Fat Greek Hot Dog, deep fried all-beef hot dog topped with tzatziki cucumber sauce, fresh tomatoes, onions and crumpled feta; Salted Caramel Frappé, Traditional Greek iced coffee topped with cold foam blended with delicious homemade salted caramel served at the Kafenio, our Greek Coffee House; FREE COOKING CLASSES EVERY DAY …IT’S DESSERT TIME! Our popular FREE cooking classes will be held at 2pm and 4pm on all four festival days this year with two different lessons on desserts: Portokalopita, a delicious, super-easy and extremely aromatic Greek desert also known as Greek Orange Phyllo Cake. This recipe is divine! This recipe will be demonstrated by Maria Kayafas* on all four festival days --Wednesday, Thursday, Friday and Saturday at 2 pm in the second floor Learning Center. “Among the Greek culture, there is a tradition of Philotimo, the love of doing good for people,” said Maria Kayafas. “This comes across in our cooking, our desire to show hospitality to guests, neighbors, and family as we eagerly prepare Greek dishes to share our love for others. They traditionally have an egg glaze and are topped with a sprinkling of sesame seeds. They are typically served with a cup of coffee. This recipe will be demonstrated by Barb Landers** on all four festival days --Wednesday, Thursday, Friday and Saturday at 4 pm in the second floor Learning Center. “I attribute my culinary skills to my mother and yiayia,” said Barbara Landers, “My grandparents immigrated from the island of Karpathos, Greece, and taught me many recipes I use today.”  “I look forward to presenting a traditional Greek recipe for those who wish to learn more about Greek culinary culture.” Website reference: https://grecianfest.com/entertainment.html) “FAITH, FOOD AND FUN!” The authentic food, electric atmosphere and the contagious hospitality makes this one festival you do not want to miss this summer.   There is something for everyone to enjoy and the parishioners cannot wait to share their faith, food and fun with you. The festive outdoor setting allows you to enjoy our Famous Gyro Sandwiches, Greek Tavern Fries, Wings of Ikaros or Chicken Kabob.  A flaming aged-cheese called Saganaki will be served daily after 4 pm. The youth of our community prepare golden fried honey puffs, lemonade and baklava sundaes by day and by night. The Agape Dancers will perform daily the exciting and colorful dances from various regions of Greece to live authentic Greek music provided by an Ohio Valley favorite, “The Greek Company” and Greek DJ George Yamalis. In addition to outdoor activities, available upstairs in our Hellenic Center Hall we will have a variety of festival favorites such as Roast Lamb and Chicken, Pastitsio, Moussaka, Spanakopita, Dolmathes (stuffed grape leaves) and Greek Village Salad, along with a plentiful selection of homemade delicious Greek pastries.  Flavorful food items, only authentic to the Greek culture, are being offered.  Vendors will also be on hand which will allow guests to bring home a piece of Greece. However, our greatest desire is to share the beauty of our Orthodox Christian Faith with every single visitor.  When you visit the food festival, please consider learning more about the Orthodox Christian Church by visiting our St. John’s Bookstore, participating in one of our church tours, listening-in on one of our Youth and Young Adult Choir Showcase liturgical chant demonstrations, and, of course, conversing with Fr. Demetrios if you have any questions about their ancient faith.  The sanctuary will be open at 12:00 pm, 3:00 pm and 5:00 pm during the Festival for guided tours.  The Byzantine youth choir will perform daily at 4:45 pm. THE TAVERNA AND KAFENIO BACK at the Taverna this year is a delicious new item, a “Mezze" (appetizer in Greek), of chopped gyro meat, sauteed on the grill with peppers, onions and feta cheese and served with fried pita triangles. Our popular Kafenio, a Greek coffee house, returns this year with anticipated fanfare. Twenty-year-old Danyelle Dunlevy* shared her enthusiasm,  “We are excited to bring back this year a festival favorite first introduced in 2021. You don’t want to miss the KAFENIO for an iced Frappé, our newest Salted Caramel Frappé,  Baklava Cheesecake and Ladopsomo, a cinnamon sugar fried bread.” Again for this year, all food sales will be in-person, with no pre-orders in the upstairs Hellenic Center.
