vietnamese cuisine doesn’t really use sesame seeds or sesame oil or dark soy sauce as much as the chinese, korean, or japanese, a lot of us think sesame oil has such a strong flavor it’s basically only suitable as a preservative to mask the off-flavors of turned meat and using old ingredients is a big nono to us, we have a “go to the market everyday for fresh ingredients” culture. one of my core memories in the kitchen with my mom was when i was making sườn heo kho tiêu/black pepper braised pork ribs with my mom as a gift to one of her ailing friends, and my mom drizzled sesame oil and sesame seeds on top of the finished ribs and she was like we only do this when giving food as a gift to someone else so it can seem “fresh” for a longer amount of time. which is why using sesame oil isn’t as common because in our minds, it’s relegated to the chinese koreans and japanese because they supposedly don’t get fresh ingredients everyday and NEED sesame oil, according to my family. similarly most of us barely, if at all, use dark soy sauce because it’s “so heavily flavored” that it’ll overwork and damage our kidneys, because a vietnamese philosophy for living a long life involves lightly seasoning your food.

Who would have known if you get two table spoons of oyster sauce, one and half table spoons of soy sauce, a tea spoon of garlic and add it to some hot oil and combine some cooked noodles and stir until it's mixed in it's really good

i am slow cooking the most delicious of concoctions in the kitchen rn
(my tags are so long lol whole half ass recipe down there)
#idk its some bastardized recipe for something called mongolian beef#well can it really be called bastardized when i actually fuckin improved it#like all there was originally was fucking soy sauce garlic brown sugar and onion#LITERALLY NO SEASONING#so i took my earned skills and actuallly made it good#the sauce is now flavorful and doesnt taste like garlic soywater#(the meat gets slow cooked in the sauce thats how i know how the sauce tastes)#added a teeny bit of mustard powder and cumin(half TBsp) added some ginger and onion powder(TBsp) and upgraded garlic to black garlic(TB)#it contained 1/2 cup of soy and 1/3 cup of Brown sugar#also replaced the water with beef broth(half cup)#theres also some oil(i did reg Veggie oil cause i dont like Sesame/ 1TB)#you serve ontop some seasoned/fried rice and mixed peppers/veggies thatve been lightly seasoned and fried in a skillet#the meat(1 1/4 Lb.) gets cleaned and sliced into strips#you leave the strips in a heavy salt solution to leach it/tenderize it(you can use other methods but this was what i had on hand) then rins#(you leave it in the solution for ATLEAST 30 minutes)#pat the strips down dry and using a 1/4 cup of Corn starch you coat the strips entirely#you then put the meat into your sauce and stir it around until the meat is entirely covered in it#then slow cook for however long you want(im doing 8 hours for some REAL tender shit)#alot of these measurements were eyed balled (except starch and liquids)[im skilled at this]#i will update yall once ive tasted the finished product#i went a little light on the seasoning but i dont have certain ingredients i want/can obtain so i had to make do(plus my parents cant shiit#DO NOT ADD EXTRA SALT TO THE DISH#leaching the meat and the soy sauce already has enough salt content#THE STARCH IS NECESSARY PART OF THE DISH#you can achieve black garlic by slow cooking regular garlic FOR WEEKS#longer = better#also i recommend using minced Ginger instead of powder for better flavour

i've actually been an absolute chef the past few nights 😳😳!! and nobody at all helped me or gave me instructions or reminded me that you can cook food in things other than water. you can, in fact, stir fry things in substances besides tap water and hot sauce. and you can, in fact, cook vegetables along with whatever random piece of fish you've scavenged off the side of the road like a mongrel beast

Just did a T shot for the first time in years!! I was so brave!!! Used a bluey bandaid too :-)
#i started t in 2017 but after a few weeks i started having an allergic reaction to the cottonseed oil used in it#started getting it compounded with a grapeseed oil suspension and it was fine! until 2019 i moved cities#the new compounding pharmacy would only fill a 6 month supply. id previously been getting 2 month supplies. it was way more expensive#but i was able to get the 6 month supply#2 or so weeks in. the vial fucking fell and shattered. T is majorly regulated and i wasnt allowed a refill for 5 and a half months#when i was able to get back on T i opted for the topical and was on it for years#it was great it worked great#a couple of months ago though my ocd got extremely bad and the contamination aspect of the topical just got to be too much to deal with#so i stopped T for that reason and another reason i wont go into. not important or transition related but i had my reasons#tried to convince myself to start the topical again but when i tried i just got way too anxious wbout the contamination still soooo#i found out theres silicone sleeves online you can get for vials to prevent breakage if they fall so i got an appt with the clinic#told them about all my concerns and stuff#tried to get the pellet implant first but they said i have to go somewhere else for that#may or may not follow up on that#but they were able to prescribe me the sesame oil suspended T and stuff so i cant do shots again#reason i did compounding before was the sesame suspension was more expensive for me at that point#but now its way cheaper for me than the compounded T#so ya this is the context for why i wasnt doing shots for years but now am doing them again#suprisingly enough i had a needle phobia before starting T#but it subsided pretty quickly for the most part when i started and the needle aspect of it all was never a factor for stopping injections#just the price and risk of losing months of T in an instant#i dont have my silicone sleeve for the vial yet but its in the mail. rn my T is safe and sound in a jjk pencil bag :)#tw needles#just in case#didnt expect to write so much in the tags lol
