This year's Midsummer treat: Thumbprint cookies flavored with rosemary and filled with apricot preserves. These are absolutely delicious (yes, I already ate one). The buttery shortbread cookies crumble away in your mouth. The rosemary in them adds wonderfully earthy, piney notes that are perfectly complimented by the sweetness of the apricots. Thanks to Brogan Wu (@thekitchenwitch) for the recipe! Happy summer solstice! Apricot Rosemary Thumbprint Cookies "This recipe yields 25-30 small cookies. Its magical properties are all about encouraging healthy relationships. Apricots promote love and have been used for centuries in magic and in the kitchen for intimacy and affairs of the heart. Rosemary, meanwhile, promotes clarification, purification, and memory." --Brogan Wu 2 sticks of butter, softened 3/4 cup sugar 1 t. vanilla 2 cups all-purpose flour 1-2 t. fresh or dried rosemary, to taste (I used 1 1/2 t. dried) Apricot preserves Cream the butter and sugar together. Stir in the vanilla. Add the flour and mix until the dough just starts to come together. Fold in the rosemary so it’s evenly incorporated into the dough. Flatten the dough into a disc, wrap it tightly in foil or plastic wrap, and chill for at least an hour. Preheat the oven to 350°F. Cut the dough evenly into cubes. Roll each cube into a little ball and press it out flat onto a cookie sheet. Using your thumb, make a little round depression in the center of each cookie. Fill each cookie with a generous 1/2 t. of apricot preserves. Bake the cookies for 12-17 minutes, or until a light golden brown. Jess Schreibstein (@thekitchenwitch) credits childhood summer vacations chowing down on local butter-coated sweet corn on Chincoteague Island, Virginia, as a stepping stone in her path to food blogging. Inspired by her parents who were both talented in their kitchen at home, Jess began trying her hand in the kitchen when she left home. "The more I began to cook, the more I began to approach food as more than just putting a meal on the table," she says. "It's this amazing thing—so much of our health and energy comes from what we choose to eat." Jess's passion for food is evident in her Instagram photos, where she shares everyday moments made all the more special with freshly baked cookies or a trip to the farmers market. Putting the emphasis on simple, local and seasonal ingredients, she lets the food tell the story in her photos to demonstrate that home cooking is not only accessible but also fun.
An active member in the Washington D.C. food scene, Jess founded the DC Food Swap, a series of teaching events where individuals learn cooking techniques or trade homemade goods. As she explains, the DC Food Swap was created "to bring together our local food community and create opportunity for new cooks to practice and share their efforts in a supportive space." Jess has been documenting her culinary exploits on her blog, Witchin' in the Kitchen, for four years and uses Instagram as a quick, informal way to share her culinary witchcraft and find inspiration.

Jess Schreibstein, founder of the awesome DC Food Swap, posted a delicious looking recipe on her Instagram for some spicy pickled onions. I loooove a pickled onion.
one of my favorite things to make in winter is spicy onion pickle, a fiery addition to salads and cheese plates. RECIPE! in a large jar, combine 1 sliced red onion, 1 sliced jalapeño, 4 bay leaves, 1 tablespoon whole allspice or pickling spices, 1/4 cup white vinegar, 1/2 cup freshly-squeezed grapefruit juice, and a pinch 'o salt. shake shake Shake to distribute the liquid and let it sit at room temp. for 6+ hours, shaking every so often. store in the fridge for up to 6 weeks. pair with pickled beets and crumbled goat cheese for a killer snack.

Tonight's cocktail: A raspberry mint mojito! The base of this drink is a homemade lemonade flavored with a raspberry-mint simple syrup. And yes, I made both the simple syrup and lemonade from scratch all by myself today, because I'm in quarantine and what else am I gonna do? Thanks to Brogan Wu (@thekitchenwitch) for the recipe! Raspberry Mint Mojitos For the Raspberry Mint Simple Syrup: A generous handful of fresh raspberries A generous handful of fresh mint leaves (or 1-2 t. dried) 1 cup sugar 1 cup water For the Lemonade: 1 1/2 cup ice Raspberries and fresh mint leaves for garnish 3/4-1 cup lemon juice, to taste Raspberry mint simple syrup 4-6 cups water Seltzer water, to top White rum (optional) To make the simple syrup, place the raspberries and mint into a mortar and pestle and mesh them finely. Place 1/4 cup of the mixture into a saucepan and add the sugar and water. Cook over medium-high heat until dissolved, 1-2 minutes. Place the ice, raspberries and mint leaves, and lemon juice in a large pitcher. Strain in the raspberry simple syrup. Add the water and stir. Top with seltzer water.
