The robust and easy to grow Brassica oleracea 'Cavolo Nero Black Magic’ (borecole, kale, Tuscan kale) was growing in the walled vegetable garden at Hampton Court Palace, Surrey. This cultivar has dark green to black wrinkly leaves which provide architectural interest in the vegetable garden.

Green Soup where I use one of the most beautiful tasty and detoxifying vegetables that I know: watercress. According to the "Centers for Disease Control and Prevention" in Atlanta, USA, watercress is the most nutritious vegetable in the world, did you know it? KALE YEAH!!! On Thursday when I got lots of kale from my @wildrabbitfarms CSA box, I knew I had to make one of my fave brunch dishes... scrambled eggs with kale, goat cheese & herbs! 🥚🍳🥬🐐🧀🌱 It’s a protein packed dish that will prepare me for the podcast interviewing ahead of me today!! 🥬❤️🥬❤️🥬 Micro Farmer Friend, Josh brought some glorious Tuscan kale which is the most glorious & beautiful dark green which inspired me to make this hearty and easy egg scramble that can be customized to whatever you’ve got on hand! I sautéed the chopped kale (minus ribs) in some butter with a pinch of salt. I fried it on medium heat until it was mostly wilted and some of the kale started to crisp up like a kale chip. Then I added the scrambled eggs and goat cheese and turned the fire down to low. Then I added my herbs (chive and dill from my garden). Slowly stirred the eggs until they were to my preferred creamy doneness! I finished it off with some of my Bay Salt! 👩🏼‍🍳🥬🥚👌🏻👏🏻🤤 Voila! A delish brunchy dish I’m enjoying on my patio while Sofie & Ringo chase butterflies and bees! 🐱🐈🦋🐝 Gotta love some local eats! The distinctive dark green to black wrinkly leaves of Brassica oleracea (Acephala Group) 'Nero di Toscana' (Cavolo Nero kale, Tuscan kale, Italian kale, dinosaur kale, kale, flat back kale, palm tree kale, black Tuscan palm) were netted to protect them from hungry pigeons.
