The first post, I suppose. This is always the toughest part of starting a blog. I never really know how to begin, but I’ll try.
I should probably give you a bit of a backstory.
I started this whole adventure with meal planning and cooking at home after a scary moment with my health. I was eating terribly, living every day in terrible chronic pain, and to top it off, not taking my medication (as I thought it wasn’t working, but that’s a whole other story.) I was admitted to the hospital with diabetic ketoacidosis; DKA for short. I was told that I was a type 2 diabetic from the age of 12 when I was diagnosed, but during that, they told me that I was a type 1, and was living misdiagnosed for a decade.
Long story short, they got me properly diagnosed and medicated. They set me up with a wonderful team of nurses and dietitians, who introduced me to carb counting and meal planning. They sparked something in me that I didn’t know existed before, and it was an excitement for cooking.
Thus began our planning. My husband and I would spend two hours every Sunday night just planning our dinners for the next two weeks and looking forward to the grocery shop that came along with it. Usually Thursday or Friday nights we would spend a few hours prepping our work breakfasts, as seen above, and any dinners we could prepare for. We came to see it as a bonding activity instead of a chore.
We’re still learning, and not every recipe we’ve done has worked out, but all in all, we’ve got a pretty great success rate! I can’t wait to start posting here. Even if no one sees, this is probably one of the best ways I can keep myself accountable for my own health.
Well, I’ll post more within the next few days. Probably with some different turnouts from recipes, or my meal planning for the next two weeks.

Cyborg diaries
Just managed to put my first libre on completely solo, I tried to put one on the other day but the mechanism was broken so it only deployed halfway before the needle retracted. So just enough to scratch me but do nothing useful. Wonderful first experience. WooHoo, delete me I guess.

Two months difference almost to the day he was out of the hospital. #Insulin is a miracle drug. It saves lives. It should be affordable too all. All brands, all pharmacies, all insurance companies, should be on the same page here but, unfortunately they’re not. I’m fortunate enough to have my son with me today. You’d be astounded by the number of people who die each year due to a completely manageable disease. Only because they cannot afford their medical supplies.
