さつま町の蓮の花畑(広瀬)
国道504号線と鹿児島県道51号線の交差地点にあります。ピークを過ぎて花から種になりつつありますが、これまた圧巻の風景です。

3日前から販売がスタートしたさつま町産のマンゴーを使ったタルト🥭
マンゴーの美味しさもさることながら、ケーキのタルト生地とクリームがマンゴーを邪魔していないので去年は週1~3日のペースで食べていました笑
今年も絶対食べたかったので、2日前の職場で昼休み中にお店に電話して取り置きしてもらいました。食べると、「これこれ🥰」って幸せになるんです🥭さつま町はキャッシュレス決済のキャンペーン真っ最中なので、また行かないと!

薩摩川内市の特産品のひとつ、鬼灯(ほおずき)。
無病息災、魔除けとして古くから飾られるそうで、帰りに一休のオーナーから頂きました。玄関に吊るして飾ると、乾燥後もきれいだよと教えていただいたので、早速自宅の玄関に飾っています。下から撮っていますが、実際は140cmくらいの長さで、これまた圧巻です。

People I have had to deal with at my job in a small coffee shop (a non-exhaustive list)
Middle aged white woman ordering a bagel with charred peppers, throwing a fit because the peppers are, in fact, charred
Slightly older middle aged white woman telling us she feels weak and is about to pass out so we HAVE to give her beer. We don't serve alcohol. It was 9am.
Guy points to & orders a slice of cheesecake and eats it. Throws a fit because actually he meant bubble tea and we gave him "the wrong thing".
Group of teens ordering three frappés. They watch us make the drinks. When all three are finished they realize actually they wanted one frappé and a cookie can we give them their money back?
Small unsupervised child running around the shop for 10 minutes. Runs into the back kitchen and almost throws himself into our industrial oven to get at the unbaked cookies. Mom tells him he "really needs to calm down" when we bring him back to her. We had to barricade the door because he kept coming back.
The slightly concerning amount of people asking if there's mayo in the chicken/mayo sandwich.
That one guy telling us he's allergic to peanuts after ordering almost exclusively M&Ms and Snickers based products
That other guy who came in asking if we sold rotisserie chicken.
Parents ordering bubble tea for their kids because the kids saw it on Tiktok, only for them to later tell us they didn't know it had tea in it and their kids don't like tea so we should give them their money back
Woman in her forties telling me the heat wave that was hitting the country at the time was because of a giant ball of fire in the sky (not the sun!) because the government wants to make the Earth explode and I should look it up on Youtube there's videos explaining everything

I made another go at (crustless) peanut butter chocolate cheesecake yesterday. It is the next month, after all. XD
I went ahead with the changes I proposed in my previous post.
Ingredients: • 458g PB chocolate spread (exact mass will vary with the amount of water used to make it) • 8oz cream cheese • 3 eggs • 32g peanut butter (for more flavor) • 60g baking mix • 1/4 cup Splenda • 1 Tbsp vanilla • Clove (just a bit for, like... warmth)
I mentioned the PB chocolate spread in my previous peanut butter chocolate cheesecake post. It's basically the peanut butter chocolate overnight oats but without the oats. I tripled the amount I would use for the overnight oats to the following:
• 90g PB powder • 60g cocoa powder • 6 Tbsp Splenda • ~1 Tbsp vanilla • Salt • Water (stirred in until the powder is incorporated and it's just slightly runny)
An unforeseen boon from this is that the amount of spread ended up actually being slightly more than the amount of pumpkin the original recipe calls for. Thus, I can split the batch into 1.5 cheesecakes like I do with the pumpkin version:

Looking good so far! I definitely didn't eat a bunch of this unbaked batter, and it sure isn't unreasonably delicious. Nope. That sure isn't my biggest food-related vice. Uh-uh.
Oh god, the sink. It's so ugly. I hate it, so I'm always trying not to show it, but I failed this time.

Aaaaaaand they cracked. Horrifically. The texture around the edges is too cake-y again, so I think I baked them too long. I'll reduce the bake time for the larger one to 25 min next time. Aside from that, the texture is quite pleasantly airy. I suspect this could be due to evaporation of the water in the spread I used... or maybe just overmixing the batter. And the flavor is delicious, of course.
With these modifications, I was able to bring this dish more into line with my nutritional goals. Actually, I think I could make a couple more tweaks and still be fine in that area. I could trade the 1/4 cup of Splenda for sugar, since the Splenda I use is quite expensive. Or I could add a bit more peanut butter for even more PB flavor. I'm also toying a bit with the idea of using milk instead of water or adding in some protein powder.

The invention
A famous Japanese chef Tomotaro Kuzuno got the idea of mixing a German cheesecake recipe with an American cheesecake recipe. It happened when the chef was on a trip to Germany in Berlin. Thus, cheesecake in Japan was introduced, which is delicious to taste, fluffy and light, and a kind of souffle.
Japanese cheesecake - know the variations
Back in the 90s, the cheesecakes gained a hype in Japan among the people, and then came the variations. You can find baked cheese tarts and non-baked western-style cheesecakes. Some recipes are made using less of sugar and are creamier; still, it tastes better. But you will surely love the tarts, which have the effect of cheese oozing out in the mouth.
We take a look at the two primary variations that got famous after several iterations of the recipe. If you Google about ‘famous cake shop near me, you will definitely find the following types of cheesecakes in Japanese cuisine.
● The souffle cheesecake (baked)
A remodelled dessert with less sugar still tastes better and is low in calories but delicious. It is a baked type of Japanese cheesecake found in Jakarta. You can find the difference in the recipe as it used meringue egg to make a cream cheese mixture.
● Rare cheesecake (unbaked)
The second type is a cheesecake which is a western-style unbaked one. Also called the rare cheesecake, you can find ingredients such as gelatin, agar agar, and yoghurt cream cheese with a sour and tangy taste.
