I thought this was about this weekend and not next weekend and I was very "It's 4:30 on a Sunday the time for hope is over ahahaha' but then I realized this is about my race next weekend! Thank you, I am extremely nervous that I am going to do really badly and fuck it all up, but, I am going to try to chill and just enjoy running.
(Also, this weekend actually was pretty decent, minus not getting much sleep!)

If I had a cent for every time I accidentally burnt a scone in my office's microwave I'd have two cents, which is not a lot but it's curious how it happened twice

In one of my past lives, I wanted to be a professional baker, I took courses, worked at a bakery, and learned SO many recipes. This one stuck with me because it’s delicious, easy, and gives me all the holiday feels!*
Ingredients (16 scones)
650g Flour
108g Sugar
1 tsp (5g) Baking Powder
1/2 tsp (2.5g) Baking Soda
1/2 tsp (2.5g) Salt
284g (20tbsp) Butter Cubed and Cold
158g Whole Milk
316g Heavy Cream
50g Orange Juice
25g Orange Zest
200g Fresh Cranberries
Instructions
In a large bowl whisk all the dry ingredients together (flour, sugar, baking powder, baking soda, and salt)
Using a handheld or stand mixer beat the dry ingredients with the butter and the orange zest.
Mix until coarse meal texture (about 5 minutes).
Add cranberries
In a separate bowl whisk wet ingredients (half & half, heavy cream, and orange juice)
Add wet ingredients to the dry and mix until combined (don’t over mix!)
Empty bowl and divide the dough into two 252g balls
Using an 8’’ cake pan dusted with flour, press the dough ball into the pan evenly
Tip the cake pan upside down and gently bang out the formed dough, repeat for the second ball
Place in freezer for 15 minutes
While waiting, preheat the oven to 400F (204C)
With a sharp knife or bench scraper, cut the dough into 8 wedges
Line a large baking sheet with parchment paper and arrange scones 2-3 inches apart
Brush the scones with heavy cream and sprinkle some coarse white sugar
Bake for 25 minutes or until golden brown around the edges. Remove from the oven and cool for a few minutes on the baking sheets before serving.
*note: this recipe is not overly sweet and it’s perfect to pair with a hot cocoa! If you want a sweeter pastry I would replace the cranberries with blueberries which would reduce the tartness!
