Kidney Bean Epazote Chili

Epazote adds heightened fresh flavor to bean dishes as I found experimenting with it’s touted tendency to reduce the gas and bloating some experience eating beans and cruciferous vegetables.  Turns out epazote does both.  I found it in the fresh herb section at my local grocer’s alongside the dill, etc. Think about freezing this chili in meal size portions as a fall back position when you don’t feel like cooking.  After the soup has cooled, try using quart ziplocks as freezing containers.  Plan ahead...support your healthy eating habit. 

3 c. kidney beans, dried

4 c. vegetable stock

5 c.+ water

1 lg. onion, diced

1 lg. green bell pepper, seeded, diced

1 clump fresh epazote

2 t. Smokey Spanish paprika

2 t. salt

2 t. garlic powder

2 t. pepper

1 can diced tomatoes with liquid

In a large covered soup pot, bring kidney beans, vegetable stock, and water to a rolling boil.  Take off heat and let sit in the hot broth for 1 hr. until beans are tender.  Beans will continue to cook from the residual heat.  Resist checking them before 1 hr. has passed. Simmer for 45 minutes to finish off cooking if needed.

Add onion, green bell pepper, epazote, paprika, chili powder, garlic powder, salt and pepper.  Simmer until vegetables are tender.  Remove and discard epazote before serving.

Tanja Janz wollte schon als Kind Bücher schreiben und malte ihre ersten Geschichten auf ein Blatt Papier. Heute ist sie Schriftstellerin und lebt mit ihrer Familie und zwei Katzen im Ruhrgebiet. Neben der Schreiberei und der Liebe zum heimischen Fußballverein schwärmt sie für St. Peter-Ording, den einzigartigen Ort an der Nordseeküste. amazon.de

“Wintermeer und Bernsteinherzen” war mein erstes Buch der Autorin Tanja Janz. Der Klappentext versprach eine gemütliche, winterliche Geschichte. Als Handlungsort wurde hier St. Peter Ording gewählt. Das Buch “Wintermeer und Bernsteinherzen” beginnt mit einem Prolog aus dem Jahr 1985. Wir bekommen hier einen kleinen Einblick in eine Szene und lernen die hochschwangere Susanne mit ihrer kleinen Tochter Janina kennen. Susanne wird in einem Reethaus in St. Peter Ording herzlich aufgenommen. Mit den Kapiteln der Gegenwart lernen wir die Protagonistin Finja kennen, die ihren Job als Heilpraktikerin reduziert und wieder einen Auftrag als Architektin annimmt, um die gestiegene Miete ihrer Praxis zahlen zu können. Ihr erster Auftrag ist nicht so einfach, denn sie soll eine Immobilie für einen Schauspieler und seine Familie in St. Peter Ording finden. Natürlich gibt es hier Extrawünsche, das könnt ihr euch sicher vorstellen. Auf ihrer Recherche trifft Finja auf das Reethaus und spürt mit diesem eine besondere Verbundenheit. Mehr wird an dieser Stelle nicht verraten. Mir hat die Reise in den Ort St. Peter Ording mit Finja gefallen. Ich war gespannt, ob sie eine Immobilie finden würde und was es genau mit dem Reethaus auf sich hat. Auch ob wir mehr über Susanne erfahren würden. Die Protagonistin Finja hat mir hier sehr gut gefallen. Es hat mir Spass gemacht, mit ihr durch den Ort zu streifen, die Anwohner kennenzulernen und so ein wenig gedanklich durch St. Peter Ording zu reisen. Auch wie Jesper, der zweite wichtige Part dieser Geschichte in Erscheinung getreten ist. Ich hatte Spaß von ihm und Finja zu lesen. Es gab immer mal wieder Szenen, an denen man doch etwas schmunzeln konnte. Der Schreibstil hat mir an der Stelle ganz gut gefallen. Das Buch ließ sich gut lesen und man kam doch recht gut voran. Das Cover selbst hat mir auch gefallen, mit dem verschneiten Reethaus und den glitzernden Elementen darauf. Wintermeer und Bernsteinherzen ist ein gemütlicher winterlicher Roman, den man gut in der kalten Jahreszeit lesen kann.

Smokey Chili Corn Chowder

This soup is so rich and delicious... when you spoon this up to eat, it feels like a warm blanket wrapped around your shoulders on a chilly evening...cozy, comforting, lovely.  If you want extra warmth, add in some chili powder.  See what you think... 4 T. margarine

1 lg. onion, diced

2 c. celery, diced

1 c. radishes, diced

1 - 4 oz. can chilies, diced, mild

4 c. frozen corn chowder, defrosted in running water through a colander

4 t. garlic, minced

1 t. dried oregano

1 bay leaf

4 c. half and half

1 t. kosher salt

1 t. smokey Spanish paprika OPTION:  1 t. chili powder In a large, deep fry pan melt margarine to then saute onion, celery, and radishes until just tender.  Add chilies, corn, garlic, oregano, and bay leaf to heat through.  Add salt and paprika to milk, then slowly add milk stirring in gently between other ingredients to keep it from curdling.  Heat through and ladle up to enjoy.
