A comforting and creamy vegan corn chowder that's perfect for a cozy dinner. Bursting with flavors from fresh vegetables and coconut milk, this hearty soup is sure to satisfy.

Ingredients: 4 cups corn kernels. 1 onion, chopped. 2 cloves garlic, minced. 3 cups vegetable broth. 1 cup coconut milk. 2 medium potatoes, diced. 1 red bell pepper, diced. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 2 tablespoons olive oil. Fresh parsley for garnish.

Instructions: In a large pot, heat olive oil over medium heat. Add onion and garlic, saut until softened. Stir in corn, potatoes, and red bell pepper. Pour in vegetable broth and coconut milk. Season with smoked paprika, salt, and pepper. Simmer for 20 minutes or until potatoes are tender. Using an immersion blender, blend part of the soup to desired consistency. Serve hot, garnished with fresh parsley.

You can fill up on this hearty and healthy chowder with quinoa, sweet potatoes, and corn. Enjoy this tasty vegan treat on cold days; it's creamy and full of flavor.

Ingredients: 1 cup quinoa, rinsed. 2 cups vegetable broth. 1 large sweet potato, peeled and diced. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 2 cups corn kernels fresh or frozen. 4 cups vegetable broth. 1 teaspoon dried thyme. 1 teaspoon paprika. 1/2 teaspoon ground cumin. 1/4 teaspoon cayenne pepper optional. Salt and pepper, to taste. 1 cup unsweetened non-dairy milk. 2 tablespoons nutritional yeast. 2 tablespoons chopped fresh parsley, for garnish.

Instructions: Put quinoa and 2 cups of vegetable broth in a medium saucepan. It should boil first, then you should turn down the heat, cover, and let it cook for 15 minutes. Put away. Put olive oil in a big pot and heat it over medium-low heat. Put in the garlic and onion, and cook them until they get soft. Add the corn, thyme, paprika, cumin, salt, pepper, and cayenne pepper if using. Put in the vegetable broth. Turn down the heat and let it simmer for 15 to 20 minutes, or until the sweet potatoes are soft. Add the nutritional yeast, nondairy milk, and cooked quinoa. Let it cook for five more minutes. Check the seasoning and make changes if needed. Serve hot with fresh parsley chopped on top.

Samhain Corn Chowder

Isn't Samhain just the best time of year? The magick is palpable now, and everyone is at their witchy best. It's also my busy time of year with various tarot and Pagan events and activities, so I usually try to find something easy to make, but something that evokes the feelings of the season. What's better for that than a bubbling cauldron of chowder? This uses the frozen corn leftover from Lammas's first harvest, and bacon from the Samhain livestock cull. We're going to eat this after doing our last harvesting for the year in the cool, wet weather. It will be warm, bubbly, and delicious! Bacon Corn Chowder - 1 package bacon - 1 onion - 4 cloves minced garlic - 1/2 gallon unflavored, unsweetened almond milk - 64 oz frozen corn - 3 large chicken bullion cubes - 1 tbsp smoked paprika - salt and pepper to taste - 1/8 cup corn starch - cheddar cheese shreds for garnish Cut bacon into small pieces and fry in a large soup pot until crispy. Remove to a bowl and set aside to garnish the soup later, leaving the grease in the pot. Chop onion into 3/4" pieces and saute in bacon fat until onions are soft and translucent. Add in garlic and saute another minute. Add corn, bullion cubes, and then add milk until it just covers the corn. Simmer for 30 minutes, stirring every 5 minutes or so to keep it from burning at the bottom of the pot. Add smoked paprika and salt and pepper to taste. Mix corn starch with an equal amount of water and stir to make a slurry. Add into soup while stirring constantly. Allow soup to thicken. Garnish individual bowls with cheddar cheese and bacon bits and enjoy! (You can make this vegan by substituting the bacon with a liberal dash of liquid smoke and using olive oil for your fat. Kale ready and rinsed for youth volunteers in the morning to make the Sunrise signature Kale Salad. Today two groups of amazing and strong women (check out our volunteer hauling chopped potatoes into the fridge) laughed, prepped onions, celery, red peppers and potatoes and made a plan for a dance party. There have been weeks when just a few volunteers have cooked for hundreds of people.
