Hello! It’s been quite some time since my last post, but I’ve been cooking a lot lately & wanted to share. Some are from Pinterest recipes & some are concoctions I’ve curated with leftovers.
Recipe: vegan banana walnut bread

Next time: I’ll try cinnamon, different nuts & different fruit (berries)
I really love this recipe, as is. It’s not overly sweet & does great with a glass of Oat Milk 🥛.

Vegan Eggplant Parmesan with quinoa & veggies.
Prepare your eggplant: Slice and salt for 30 minutes to remove access water then rise well.
Batter: dip eggplant in mixed eggs or flax eggs, then breadcrumbs and lay out on pan
Bake: 375F for 15 minutes, flip and bake for another 10 minutes. Toss vegan mozzarella cheese on top and let sit in the oven for another 2 minutes, or until cheese melts.
Quinoa: box instructions 
Veggies: Add garlic & grape seed oil (or your preference) to a pan. Once heated up, add onion and sauté until golden. Add zucchini and bell pepper, season with Italian seasoning, oregano, dried and fresh basil. Once veggies are cooked to your liking, add the leftover egg or flax egg to the veggie mix. Serve over quinoa.
Tomato sauce: 1 28oz can of organic tomato sauce heated and seasoned with Italian seasoning and dried oregano.

Vegan Hawaiian BBQ Pizza on cauliflower crust inspired by thissavoryvegan.com. BBQ sauce, vegan mozzarella, vegan “ham”, pineapple, jalapeños, sautéed onion, and kale. The kale is mixed with sriracha, garlic powder, balsamic vinaigrette, salt, & red pepper flakes. Bake at 425 for 13 minutes.

Woke up, no eggs, no yogurt 🙈🤔 Next best thing, breakfast concoction with what’s in the fridge! Sauté garlic & onions until brown Add bell pepper & Canadian bacon, set all to side Sauté kale with pepper & cumin, set to side Sauté black beans, corn, carrots, and sweet potato with pepper and cumin Add everything together in pan then serve Top with avocado and sriracha for an extra kick!

Fresh lunch 🥗 Cod over a salad. For the cod: I used dill weed, pepper, lemon, and lemon pepper seasoning. Salad: Spinach & kale with avocado, carrots, feta, onion, bell pepper, tomato, and a Vidalia Onion dressing.

Kale bowl concoction 😮😍 Kale Canned corn Canned black beans Salsa Sweet potato Optional: onion, cilantro, bell pepper, jalapeno Directions • Cook sweet potato in microwave for 8-9 minutes depending on size, set to side • In bowl, add kale, black beans, corn, salsa, and veggies. Microwave for 3-4 minutes • Dice up 1/2 the sweet potato and add to your bowl Mix & enjoy!
