It's Not A Farewell...
I want to let you know that I am taking a break in order to focus on my health. I currently have stage 4 cancer. Even if the situation may appear dire with the help of my loved ones, prayers, and all of you out there, I continue to hold out hope that I will be able to triumphantly beat this fatal illness.
When I reflect on this journey, I'm amazed at how far we've come together. Despite having numerous options, you decided to visit this blog. I would want to take this opportunity to express my gratitude for your unwavering support and encouragement, which have been the foundation of my journey. To all of the amazing people out there, I want to show my love and appreciation. I am very happy and grateful that you are a part of my journey.
With gratitude and my heartfelt thanks to each and every one of you,
LC

Thai Sweet Chili Chicken and Carrots
Here with a quick stir-fry to help make that daily dinner dilemma as easy to solve as possible. Thai food is one of my favorites since it combines straightforward cooking methods with layers of strong flavors. If you're anything like me, you have a sweet tooth and a spice tooth, so this combo is sweet, savory, and spicier. It gives the flavor a new dimension. The meal is sure to satisfy.

Steak Fajitas with Grilled Onion and Peppers
There's not much else on my mind when I develop a craving for beef fajitas till I eat them.
Mesquite wood was used for cooking. In addition to providing a very strong and unique flavor, mesquite also yields the hottest cooking coals. At home on the backyard barbecue using a mix of mesquite bits and charcoal briquets that can be purchased at any hardware store.
If you can, I suggest looking for sun-dried chile powder because it's a huge improvement. Consider the flavor difference between sun-dried tomatoes and oven-roasted dried tomatoes to understand that this is sweeter and less bitter than the usual mechanically dried chile powder. Internet sourcing is fairly simple.
After taking the vegetables off the grill, they should still have a lot of bite; you want the soft tortillas, crisp toppings, and tender meat to all have different textures. Sprinkle with fresh lime juice.
As Americans, we tend to look at Mexican food as nachos, which is not Mexican food really - they don't eat them.

Creamy Tomato Lemon Shrimp Penne
Beyond the sum of its components, Creamy Tomato Lemon Shrimp Penne is exceptional. The vibrant citrus notes in the tomato-lemon sauce contrast with its rich and highly cheese-like texture. This pasta dish with tomatoes and lemon goes nicely with a large green salad and a garlic bread loaf. Cozy fare in a bowl.

Orange Chili Garlic Pork Steak
I wish you could taste this succulent pork steak because it is so good. Seared pork steak is coated with this aromatic and savory orange chili garlic pan sauce, which takes this easy recipe to a new level. with broccoli and steaming white rice on the side. I am quite pleased and delighted with this dish's flavor profile. My dad was a fantastic cook so I'm sure he would agree.
“You think about some of the most memorable meals you've ever had; the food will be good but it will often be about locating a mental memory and taste is inexorably linked to all the other senses and memory, so ultimately it is all about taste.”

Kangkong (Water Spinach) with Bacon
I was thrilled to see this at the Asian grocery and promptly grabbed it because I was craving a healthy supper choice. This green veggie was a staple of my childhood. In our backyard, my father planted this particular veggie. Cooking oil, garlic, onions, vinegar, and soy sauce are used to sauté it. This is a fantastic main course or side dish. It's a terrific vegetarian recipe even without the bacon, but I decided to add some. A tasty, fresh dish that fulfilled my need.

Beef Salpicao
The ideal dish saving you time in the kitchen and enabling you to spend more time with your family. This delectable Filipino dish is called beef salpicao. Recognized for its succulent beef cubes cooked in a flavorful sauce with a lot of garlic. It is easy to make and can be eaten as a main course or as an appetizer. One of the greatest comfort dishes ever. Delightful with a bowl of white rice.
To me, food is as much about the moment, the occasion, the location and the company as it is about the taste.

Filipino Chicken Adobo
As the unofficial national dish of the Philippines, the most common preparation of adobo in the Philippines involves browning the meat first, then braising with vinegar, soy sauce, garlic, bay leaves, and black peppercorns; the proportions of these ingredients depend on your own preferences. I always enjoy this dish and prefer my adobo to be slightly saucy and savory, rather than sour. Filipino adobo is great with steamed white rice. And if there are any leftovers, adobo tastes better a few days later.
When we are with our loved ones around the table, something extraordinary happens. The charm of a good meal fuels a sense of belonging and connection, and the air is filled with the perfume of excellent food. My father would prepare a weekly batch of chicken and pork adobo while I was growing up. It's a memory I will always cherish.

Parisian Chocolate Cake from Porto's Bakery
This delicious moist cake is a constant favorite. Composed of a smooth chocolate mousse layer with Porto's famous whipped chocolate ganache on top. Crispy pearls made of dark and white chocolate were used to finish. A heavenly creation. Life is too short not to indulge in the rich, decadent flavors from time to time.

Crispy Tilapia Fillet
Let's prepare a fish dish for our meal to change things up a little. I make an effort to eat seafood or fish once a week. My goal while making tilapia fillets is to give them a crunchy texture and a hint of pepper in the batter. This goes well with some veggies and mashed potatoes. Sure, it goes well with pasta or even steaming rice.

Shrimp and Black Beans Rice Bowl with Lime Crema
Alternatively referred to as a "deconstructed shrimp burrito bowl." Sometimes I like it best wrapped in a tortilla; other times, I love it best served with lettuce for a bright splash of color and crunch. You constantly have a yearning for something tasty, light, simple, and satisfying during the summer. You can precook the rice and black beans if you find that life becomes too busy, or you just don't want too much heat in your house. Purchasing your lime crema sauce can also make life easier.

Tender, Juicy and Delicious Meatballs
It is an undeniable fact that meatballs are a gift. The height of perfection when it comes to products containing ground meat.
After seasoning, the meatballs are formed, pan-fried, and cooked in gravy. Accompanied by some roasted carrots and potatoes. You may enjoy this with some steam rice as well.

Sunmerry Bakery Treat
Asian pastries and desserts are the bakery's specialty. Getting my favorite bread, pastries, and cakes from there has become a favorite spot of mine. I'm treating myself to some cream puffs, pudding, and brioche donuts this time.

Delicious Pork Tenderloin
Like that one friend who always looks put together and stylish but takes no more than five minutes to prepare, this dish is that way. Notwithstanding the fact that pork tenderloin is a cheap, lean protein that cooks quickly, it frequently lacks flavor. To get a golden brown crust on the pork, I sear it first. Then, I deglaze the pan with a mixture of orange juice, rosemary, and balsamic vinegar. Fresh cherries take turns in the pan, releasing their juices that eventually reduce to a syrupy sauce as the pork rests.
A home-made dish that combines the flavors of orange, cherries, rosemary, and balsamic vinegar and tastes delicious and fresh. Served with steamed green beans, roasted potatoes, and sweet potatoes.

Baked Salmon with Lemon and Thyme
My favorite salmon dish baked in the oven. This salmon is so simple to bake that it will quickly become a mainstay on your weekday menu. But I want to provide one crucial piece of advice right away: Instead of cooking the salmon pieces in a baking dish, use a sheet pan. With the former, the fish will cook evenly and avoid having raw centers and dried-out tops since the oven's heat will be able to circulate throughout the fish.

Lemon Parmesan Shrimp Penne
An absurdly simple weeknight meal. Simple and delicious dish that can be made in under 30 minutes. It is one of my favorite things to make, and this delicious pasta never fails to make it into my meal rotations. I really love how simple but flavorful this pasta always turns out. It's among my go-to quick dinners on weeknights. This recipe is sure to please those who love to squeeze lemon over everything they eat. The flavor of garlic and basil permeates every bite of this pasta, which is savory from the Parmesan cheese and acidic from the generous amount of fresh lemon juice.
