"Autumn Harvest Beef Stew"
by infernicorn (please credit when sharing)
Flavor / Energetic Profile: Like a crisp autumn morning, with the sun's light shining through the leaves. Sweet and hearty, though I find it to be on the lighter side energetically than many beef stews. Good for bolstering the spirit and body during the darkening portion of the year.
1.5lb boomer gold creamer potatoes (aka tiny bite-sized white potatoes)
8 oz white button mushrooms
2 large carrots
1 yellow onion
2 moderate sized sweet apples
1 garlic clove, or 1/2 tsp pre-minced garlic
1.15lb stew beef
2/3 cup white flour
2/3 tsp pepper or to taste
2/3 tsp salt or to taste
2 cups beef broth
1/2 cup apple cider
1/2 cup coca-cola (not diet--if you use diet soda it will taste like chemicals)
1 cinnamon stick
1 star anise pod
1 bay leaf
Add each ingedient with intention, reflecting on where it came from and all of the energies that went into creating it. Consider the magical properties of each component just as you would any spell. This is just a spell that happens to be edible!
Locally sourced and grown using ethical practices is ideal. Sometimes you have to work with what you have so I always like to 'cleanse' the ingredients of unwanted energies as I prepare them, much in the same way you would purify the elemental representations of a ritual circle.
Earth provided the ingredients, along with human ingenuity to craft and/or harvest and bring it to your kitchen. Your intention mixed with motion (stirring, chopping, etc.) and heat work to meld the energies into a tasty bowl of magickal poetry.
Keep that in mind.
Recipe:
1. Wash potatoes (or get pre-washed), carrots, mushrooms. Husk onion. Lightly rinse meat.
Incant as you wash:
"Clean and pure,
blessed be,
ready to serve
and nourish me."
This step cleanses of unhelpful energies, purifying it.
2. Cut carrots, mushrooms, and onion into slices. Core and cut apples into chunks no larger than 1 inch. Add all, plus potatoes, to crockpot. Add garlic as well, mincing fine if using a fresh clove.
Incant as you combine ingredients:
"Orange bone, and gloam's cap,
Biting fruit and garlic snap.
Add the apple from above and below,
With magick charge my will be so."
Orange bone is carrot.
Gloam's cap is mushroom.
Biting fruit is onion (yes, I know it's not an actual fruit).
Garlic is... well, garlic.
Apple above is the fruit.
Apple below is the potato.
This step calls upon each plant spirit and gives the charge for each to aid in your purpose. Every ingredient has natural 'skills'. You just have to tell each what you want specifically from them.
I state my charge for each using one word or phrase to sum up its task, giving each a kiss as I add it to the pot.
An example charge could be for strength of body, mind, and general health during the time of darkness. Carrot for strength, the mushroom to help with transformation of that which no longer serves. Onion and garlic to provide sound mind and body. Potatoes for grounding, and apples to be surrounded by love.
(Example: As adding carrot, say 'strength of body', then as adding mushroom say, 'transformation', etc.)
3. Combine flour, salt, and pepper in bowl and coat meat. Add to pot.
4. Add beef broth, coca-cola, and apple cider.
5. Add bay leaf, cinnamon stick, and star anise.
Incant as adding each:
"Leaf of bay, lend your power.
Provide your strength as mouths devour.
Autumn's tongue and Fire's bark,
Light our spirits within growing dark.
Star's light of perfume and flame,
Bring us luck and magick same."
6. Cook in crockpot on high setting for 4 hours, or until potatoes and carrots cut easily, stirring occasionally, clockwise, in such a way to rotate the vegetables on top and bottom of pot to prevent uneven cooking.
7. Remove the cinnamon stick, anise, and bay leaf before serving.
*~*~*
These are all sample incantations. Use your creativity and own personal associations to charge each component with its task according to your own situation. Make the recipe your own--alter it to fit your tastes and needs as suits YOU (and anyone else you might be feeding) best. The best kitchen witch is an adaptable one.
And happy witchin' in the kitchin'!
May your ingredients be fresh and your magick tasty.

Pumpkin Cheesecake with Maple Bourbon Meringue
Prep - 75 min
Ingredients
Cream Cheese Layer
1 package (8 ounces) cream cheese (softened)
4 tbsp powdered sugar (sifted)
1 tsp vanilla extract
Pumpkin Layer
1 can pumpkin pure
3 eggs
1 cup sugar
1 tsp vanilla extract
1 tsp cinnamon
½ tsp all spice
1 pinch of salt
Crust
1 9″ graham cracker pie crust (store bought)
Maple Bourbon Meringue
1 cup egg whites
1 cup light brown sugar
¼ cup maple syrup
1 tbsp bourbon
½ tsp vanilla extract
Instructions
Preheat the oven at 350F.
To make the Cream Cheese Layer
In a medium bowl, beat the softened cream cheese, powdered sugar and vanilla until smooth. Spread into graham cracker pie crust.
To make the Pumpkin Layer
In a separate bowl, whisk all the ingredients until smooth and pour over the cream cheese layer. Smooth the top with an angled spatula. Place in the center of the oven rack.
Bake until firm around 60 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack before topping with meringue.
To make the Meringue
In a small saucepan, bring an inch of water to a simmer.
In the bowl of a stand mixer, combine the eggs, brown sugar, maple syrup and vanilla,  and set over the saucepan. Make sure it doesn’t touch the simmering water. Whisk until the sugar dissolves completely and the whites are warm. Feel the mixture between two fingers: It should have a smooth consistency, without any granules.
Place the bowl on the mixer fitted with the whisk attachment. Beat on high speed until stiff peaks form, about 5 minutes. Add the tablespoon of bourbon and reduce speed to low, beat until combined.
Once the cheesecake cools, pat the top carefully with a paper towel to remove moisture. Spread the meringue on top. Use a small offset spatula to achieve swoops and swirls. You can brown the meringue in the oven, but for more control or prettier results use a kitchen torch.
If using a torch, hold the flame at a 90-degree angle three inches from the meringue. Move around the pie until the meringue starts to brown.
Serve immediately or keep in the fridge. Serves 8-12 people. Enjoy!

Heavenly Lavender Scones
A Spell for Happiness and Anxiety Relief 💜🦋✨
I think we all need a little bit more joy and a little less spiraling misery. I won’t pretend that life isn’t deeply challenging right now, and I wrote this spell to carve out a bit of delicious relief. Make these scones and see for yourself <3
Lavender is associated with calm and anxiety relief, and it’s also associated with Selene, goddess of the moon. The heady scent of dried lavender serves as a reminder of summers past and that there will be summers again.
Scones:
* 2 cups (250 grams) all-purpose flour
* 1/3 cup (67 grams) granulated sugar
* 1 tablespoon (12 grams) baking powder
* 1/2 teaspoon salt
* 5 tablespoons (70 grams) unsalted butter chilled and diced
* 1 tablespoon dried lavender
* 2/3-3/4 cup (158-177 milliliters) heavy cream plus extra for brushing
* 1 large egg
* 1/2 vanilla bean or 1 teaspoon vanilla extract
* Decorating sugar
Vanilla Glaze:
* 1 cup (120 grams) powdered sugar
* 1/2 vanilla bean or 1 teaspoon vanilla extract
* 1-2 tablespoons (15-30 milliliters) milk
* Dried Lavender for garnish
Instructions:
* Preheat oven to 400˚F (200˚C). Line a baking sheet with parchment or lightly grease.
* In a large bowl, combine the flour, sugar, baking powder, and salt.
* Quickly cut in the butter using a dough blender, food processor, two forks, or your fingers until blended and no pieces are larger than a pea.
* Pour the tablespoon of lavender right into your hand and imagine a white light surrounding the herbs. Imagine that it is a light of gentle healing and joy. Say to yourself “I invite joy and relaxation into my life” while focusing on holding the light around the herbs.
* In a small bowl, whisk together your now enchanted dried lavender, 2/3 cup (158 ml) heavy cream, egg, and seeds from the vanilla bean (or extract).
* Gently mix the cream mixture into the dry ingredients until the dough just comes together. Add most but not all of the cream mixture at first. You want a shaggy dough. Add a little more cream only if the dough is too crumbly to hold. It should not be sticky.
* On a lightly floured surface, smush and pat the dough out into a circle, pressing it together so that it is not shaggy anymore. The circle should be about 3/4” high.
* Cut the circle into 8ths and transfer to a prepared parchment lined baking sheet.
* Brush the tops of the scones with a thin layer of heavy cream and then immediately sprinkle with your decorating sugar. Bake in preheated oven until lightly golden, 21-24 minutes. Gently transfer the scones to a wire rack and cool to room temperature.
* In a small bowl, combine the powdered sugar with the seeds from a vanilla bean or vanilla extract. Whisk in 1-2 tablespoons milk until a smooth glaze forms.
* Drizzle the glaze over the cooled scones and immediately sprinkle with a small pinch of dried lavender if desired.
* Allow the glaze to set. These Lavender Vanilla Scones are best served the day they are made.

Apple Cider Donuts
Prep - 40 min
Serving - 20
INGREDIENTS
1 cup apple cider
1 cup granulated sugar
5 tbsp butter unsalted, softened at room temperature
2 large eggs
3 ½ cups all-purpose flour
1 tsp salt
1 tbsp baking powder
1 tsp baking soda
1 ½ tsp cinnamon ground
½ tsp nutmeg freshly grated
½ cup buttermilk
1 tbsp vanilla extract
vegetable oil for frying
Cinnamon Sugar
1 ½ cups granulated sugar
3 tbsp cinnamon ground
INSTRUCTIONS
Heat the apple cider in a large saucepan over medium high heat until reduced to 1/3 cup, should take about 10 minutes.
Cream the butter: In a large bowl using a hand-held or standing mixer fitted with a whisk attachment, beat together the sugar and the butter until mixture is pale, about 3 minutes. Add the eggs and continue beating for another 2 minutes until light and fluffy.
Combine wet ingredients: Pour the buttermilk, reduced cider, and vanilla into sugar/butter/egg mixture. Mix well, and don’t worry if the mixture looks a bit curdled; it’ll smooth itself out.
Combine the dry ingredients: In a medium-size bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, and nutmeg; set aside. Add the flour mixture to the bowl with the wet ingredients and combine gently just until fully moistened.
Form the dough: Transfer the dough to a lightly floured surface and knead it a few times until it comes together; form it into a ball. Roll out the dough so that it’s ½-inch in thickness. Cut out rounds with a 3-inch cutter donut cutter. Don’t discard the donut holes, fry those too.
Make cinnamon sugar: In a shallow bowl combine the 1 ½ cups granulated sugar with the 3 tbsp of ground cinnamon. Set aside.
Heat vegetable oil in a large stockpot or Dutch oven over medium high heat until a deep-fry thermometer registers 375 degrees F.
Fry the donuts: Working in batches, add donuts to the Dutch oven and cook until evenly golden and crispy, 1 minute per side. Transfer to a paper towel-lined plate for 30 seconds; then roll warm donuts in cinnamon sugar mixture to coat.
Notes:
Recipe yields 20 donuts and 20 donut holes. Nutritional information is for 1 donut and 1 donut hole.
Sadly these little cake donuts lose their appeal when not eaten hot and fresh. Frying them up when you’re ready to feast is half of the magic!
So while I don’t recommend storing these cooked, lucky for us the uncooked dough can be stored for future use!
You can refrigerate uncooked dough for 1 day if stored in an airtight container. Just be sure to take it out of the fridge and allow to come back up to temperature before frying, You never want to add cold dough to a fryer.
Form the donuts and line them up raw on a baking sheet, place this in the freezer and once frozen through move them to an airtight container or freezer bag. Keep this in the freezer for up to 1 month. Allow it to defrost fully on the counter before frying up!

🌿🍊Litha Orange Honey Cake🍊🌿
Tumblr media
Hello my greenies! Happy Litha! I hope you’re all enjoying the summer sun and nature. Even during quarantine, if you’re able to take a walk in nature without contact with others, I highly recommend doing so. If you’re unable to go outside, I recommend taking the time to bake and maybe listen to some nature sounds on youtube. Those have helped me during these times. I wish you all the best with this yummy cake! I hope you all like this recipe:)
Ingredients
2 cups all purpose flour
½ cup softened unsalted butter
2 eggs
1 ½ tsp. baking powder
½ tsp baking soda
¼ cup granulated sugar
½ cup milk
½ tsp salt
¼ cup brown sugar
2 tbsp fresh orange juice
2/3 cup honey
1 tbsp vanilla extract
around a tbsp of orange zest
Optional Glaze
½ cup honey
¼ cup brown sugar
some lemon juice
juice of 4th of orange
couple pats of ground cinnamon
dash of vanilla
½ cup (maybe.. I never measure this out)sliced almonds
Mix until syrup state.
Directions
Preheat Oven for 350°F and coat pan with non-stick or other alternative. I honestly don’t know what size my pan is…so I’d say eyeball it and see how much you can fit? Lol
In medium bowl, mix dry ingredients (including the orange zest). Set that to the side while you mix the other ingredients in a larger bowl.
Sift the dry ingredients into the bowl with the other ingredients in batches. So, sift a little in and mix then repeat that until all the dry ingredients are mixed in.
Pour the mixture into the pan and cook for about 28 to 35 minutes. Check with a long toothpick:3 After you take out you can pour over an optional syrup that I think is amazing!
There’s no particular chant I do for this recipe, I mostly just pray for the sun and for the health of those I care for. I like to visualize the sun and its heat and color wrapping me in an embrace and that same warmth infusing the cake.
I hope you call have a lovely Litha and special time with those you love a care for.
- Kenzie
