Chopsticks vs Forks and Knives – Which cutlery is better?
Have you ever wondered why Asian people eat with chopsticks instead of forks? 
If you have, this means you have tried to hold chopsticks many times. 
Have you ever wondered why Asian people use these hard instruments? 
If you have, this means you have gone through many struggles while using chopsticks. 
I sit in one of the Chinese restaurants in Emporium with my friend - Ella Mori, who was born in Australia. We have variety Chinese dishes in front of us. I was born in an Asian country - Vietnam; so using chopsticks to eat noodle soup is not that hard like many Western people have to deal with. However, I was a little surprised at how Mori uses this hard cutlery like an expert.

The History of Chopsticks 
Chopsticks first appeared about 4000 - 5000 years ago in China; the earliest versions were used just for cooking because they are the perfect tool for reaching into hot water or oil. Then, the founder of Xia Dynasty - Dai Yu did not want to wait for his meal to cool down while he was rushing to leave a flood zone, so he decided to pick up a pair of twigs and start his meal. 
Due to the rise in population in China AD 400, resources (especially food) became very limited. People began chopping food into smaller pieces; so it suited the bite sized pieces and required less cooking fuel. The tiny pieces were perfect for eating with chopsticks, which were made from cheap materials and easily made. The trend started from this day. 
Chopsticks quickly spread out around Asian countries such as Vietnam, Japan and Korea. Different cultures have different chopsticks styles. For example, in Korea, chopsticks are made from metal; whereas in Vietnam, it is made from bamboo or wood. In Japan, they categorise chopsticks as eight-inches-long for men and seven-inches-long for women.

Different cultures have different rules of using chopsticks. In traditional Chinese culture, digging food around a bowl is referred to as ‘digging your grave’ and is considered extremely rude at a table. In traditional Vietnamese culture, tapping chopsticks on the the edge of a bowl is considered ‘calling a ghost’, which is thought to be a bad omen. Taiwan and Korea have other different rules while using chopsticks at the table. 
So, why do forks and knives not appear on Asian people’s table? 
Forks had been found in Ancient Greece; however, they did not appear on dinner table until the 1500s. According to some historical contexts, forks officially appeared in Venice in the 11th Century during the wedding ceremony of a Byzantine princess, Theodora Anna Doukaina, to Domenico Selvo. Due to many religious beliefs, many people did not like a Byzantine princess and claimed that forks carried negative stigma and were considered an affront to God. Therefore, forks during this time were not allowed on the table. 
Romans founded the knife. However, it did not become popular in northern Europe until the 16th Century. When Catherine de’ Medici married Henri II she brought her cutlery set with her, which included forks and knives from Florence to France in 1553. After more than a hundred years, Charles I of England finally gained respect and declared that the fork and knife would become the utensils for serving every meal until now. 
In contrast with Western people, many Asian countries such as Vietnam believe in Confucius. He believed that knives were not suitable to eat with. He claimed that knives were associated with acts of aggression because they mostly appeared in the slaughterhouse and kitchen. Moreover, chopsticks are older then forks by many decades yet the observation of using forks in Asian countries only became one of the way of having a meal until recently. 
From a beginner to an expert 
Jessie Moxham originally is from Australia. She has been to many Asian restaurants in Melbourne. However, using chopsticks is a challenge every time she goes to an Asian restaurant. For her, it takes a large amount of time to get used to chopsticks. 
“My mum bought chopsticks, which have a tool to support beginners and I have tried to practice with them. It is quite easy to hold food while using them; however moving on to the real chopsticks is really hard. I cannot hold food properly; especially with dumplings.” Moxham sighs.

Mori is one of small group of Western people who can use chopsticks in the proper way. “I think because I came from a foodie family and both my parents know how to use chopsticks, I picked it up earlier than the average Australia kid.” Mori smiles. 
Both Moxham and Mori agree that using chopsticks is very challenging and it requires a lot of practice to be an expert. “it is very annoying to use chopsticks to eat noodle soup at the beginning; especially when everybody around me has finished their dishes. So I end up using a fork.” Moxham disappointed herself when she tries to use chopsticks. 
Moxham had a bad experience while going to Indonesia. “I had a rice dish while I was in Panduan, I had a lot of struggles picking up my food with chopsticks. I had to ask them to provide fork but they did not have one.” Moxham comments. 
Unlike Moxham, with Mori’s observation, some Asian restaurants in Asian regions are trying to cater both to the Eastern and Western style of having a meal. “When I was 16-years-old, I went on 18 days tour around China. I always had a choice of using either chopsticks or forks and knives in restaurants.” She remembers. 
What do Asian people think about chopsticks and forks? 
Unlike chopsticks, no matter how you hold it, you can still can pick up food by forks and cut food by knives. Many Western people like Moxham are not really familiar with chopsticks due to complicated techniques. Searching YouTube, WikiHow and asking Asian people how to hold chopsticks properly are some of ways that many people do. 
Trang Tran, who was born in Vietnam, says “When I turned 19-years-old, I realised that I held chopsticks incorrect. it took me a year to correct my mistakes.” Tran remembers. With Tran’s observation, if a person understands the techniques, it is quite easy to hold chopsticks to pick up food. 
Tran also comments that using forks and knives is very easy; however, it does not suit with Asian culture and belief. She thinks using chopsticks is very interesting. Even though it is very challenging to use it at the first time, it is a signature way to identify where you came from. 
Hue Vo, who comes from Vietnam, taught her little boy how to use chopsticks when he turned three-years-old. “My little boy used forks when he turned two-years-old because I feel using chopsticks is very dangerous at this age. I acknowledge that using forks is very easy but using chopsticks is our culture and belief. My little boy needs to know how to use chopsticks and rules when using this tool.” She comments.

Being asked why teaching her kid at such a young age, Vo says children same age as her kid in Japan can use chopsticks fluently and they can eat by themselves without asking help from parents. Moreover, using chopsticks is one of Vietnamese culture that kids should acknowledge and learn how to use them. 
Both Tran and Vo think using chopsticks has many rules while using them; whereas knives and forks nearly do not have any rule. Therefore, people who use chopsticks should understand rules and try to avoid mistakes. 
Not only Asian people but also Western people understand using chopsticks requires many skills and techniques. Furthermore, it also trains people to be patient when learning how to use them. But people cannot deny that it is one of the significant cultures that appear in almost all Asian countries. 
“Using chopsticks is fun!” Ella comments. 
Definitely, using forks and knives is easier then chopsticks. There are many arguments around using chopsticks and forks. These utensils have both strengths and weaknesses. I think the most important thing that people should consider using which cutlery would give you confidence and ease when having a meal.

Today is my free day, no take care of children, no working. It is my day off. 
Few days ago, I planned to go to Minh Long, where is the biggest pottery factory in Vietnam in the early morning. However, plan changed this morning. 
I was going to visit my auntie, as it has been a month I did not see her when I came back. Well, she was quite happy when I see her. She cooked a lot of food such as My Quang (one kind of Vietnamese noodle), Soya milk, Vietnamese sweet soup. It is awesome and I love it. 
I came back home and helped my mom doing some work for our company. I was happy to do it because afterwards, we went to shopping. 
As I mentioned in the previous blog, I am addicted with shoes. Every time, I go to shopping, the first thing I look after is shoes. 
Today is the same day. I went around the shopping center to have a look shoes. I saw the ballerinas and flat shoes in the other store. There are 3 colours, which are purple, nude and red. I do love all three colours; however, I decided to buy 1. So I thought very carefully. 
Later on, I asked my mom, which one I should buy and she said, she loves I wear the pink shoes with high heels. Yes! Afterwards, I bought the pink shoes. ^^ 
I walked around the shopping centre to have a look all of stuffs in the sale season. I have found a lot of clothes with the good price. 
Then, I have dinner with my family and watch HongKong drama. 
Great weekend I ever had so far!

Creme caramel

Alright! Below is the recipe for making Creme Caramel. I made this for several for my family every time I come back to Saigon. 
Ingredients 
6 eggs 
200ml of Whipping cream
275ml sugar 
90g sugar 
3/4 cups milk (skim milk or full cream milk) 
Method 
Preheat the oven to 200C. Put the 90g sugar in a frying pan and cook in medium heat for 10 minutes. Stir occasionally until the sugar melt to form a golden toffee. 
Whisking well eggs and sugar. 
Put the milk and whipping cream in a saucepan and gradually bring to boiling point. 
Combine eggs, sugar, milk and whipping cream together and put it in the frying pan where you cooked the golden toffee. 
Place the ramekins in a baking dish and pour in boiling water until it comes halfway up the sides of the dishes. 
Then bake in around 20 to 30 minutes or until it set. 
Use a knife to run around the edges of the dishes and turn out the creme caramel onto a serving plate, toffee side-up.

How to cook chicken ragout? So, here is the recipe  Serving: 22 people 
Today, I cook chicken ragout for my relatives, including my grandma, my parent, all of my aunties and my uncles. 
Ingredients: 
4 chickens 
2 kg potatoes 
2 kg carrots 
10 tomatoes
7 bottles of coconut
A bottle of tomatoes sauce 
7 spoons of corn flour
Salt, soya sauce, sugar, chicken stock, oil
Garlic, red onion and white onion
Coriander 
Method 
Chicken: Cut into the small pieces that you can eat. Then, put 4 spoons of salt, 4 spoon of sugar, 4 spoon of soya sauce, 4 spoons of chicken stock. Mixed well and leave it there for 30 minutes. 
Meanwhile, peel the cover of potatoes and carrots. Also, cut tomatoes. 
After 30 minutes, take the pan and put the oil until it is getting hot. Afterwards, put garlic and red onion into the saucepan and waiting for turning brown. Then, put the tomatoes in the saucepan and tomatoes sauce until it cooks. Mixed chicken, potatoes, carrots with the tomatoes sauce in pan. 
Meanwhile, heating the coconut juices until boiling in the saucepan. Then, put the chicken, potatoes, carrots and tomatoes sauce into the saucepan on the low heat. Boiling it until it cooked. While waiting for it cooked, put 1 tablespoon of salt, and 1 tablespoon sugar. Try it regularly to make sure it is delicious as you expected. 
Before serving 10 minutes, mixing corn flour with water and then put it into the saucepan of ragout. 
Serving with coriander and bread.

Surviving with hot weather

This is Tory and Philo - my two nephews
It has been a week I live in Hochiminh City, Vietnam. I have found that I could survive with the humid weather! It is such great news!
I did not do anything much, just stay at home and take care my two nephews. Many people think that it is such a boring job; however, I have found that gaining some experiences in different areas help me to learn a lot of life - skills.
For instance, one my nephew named Tory is quite interesting. When he loves to eat something, he keeps asking for giving some more. Yesterday, I was eating yoghurt on the dining table and ate durian. Tory was sitting next to me. He tried to reach the durian dish, and I gave him a bit of durian. I understand that not many people like to eat durian because of its smell. Some people think that the smell is very nice; on the hand, it is very smelly like cooking gas. Tory loves to eat durian; and everyone laughed yesterday.
In the afternoon, Tory has to go back to his grandpa place due to his grandpa miss him. I took care Philo and I have found that he loves to eat cherries and durian instead of bananas, which his mom forces him to eat all the time.
My mom is very busy on these days as she has to manage our business with my father. Nevertheless, she still managed to cook some nice food for me.
Today, my mom cooks steam fish with fish sauce, pumpkin soup with prawn and carrot coleslaw. It is such a delicious food; but I forgot to take photos. I will take some of it later.
Tomorrow will be my busy because my auntie and my uncle from U.S will come to my place for having lunch. My mom did invite my grandma, my auntie, my uncle, their daughter and the other relatives come to our place. I volunteer to be a chef cook tomorrow. I will cook chicken ragout, carrot coleslaw, and creme caramel for dessert. I will post photos tomorrow.

Holiday is coming

I went to Vietnam for my holiday yesterday. Well, everything did not seem very smooth as a lot of things happened.
I went to the Tullamarine Airport at 6:30am on Sunday’ morning. Well, it was too early for waking up on Sunday. I arrived at the airport after an hour driving. Yesterday, the weather was a bit naughty as it has had shower and was really cold. Fog and drizzle are two words can be described the weather on Sunday.
I supposed to jump into the airplane at 10:30; however, it delayed by an hour for some reasons. Everyone seemed a bit angry of that. However, I thought it is just my holiday trip, I do not have to be very hurry.
This was my first experiences that I have so far in my life. The flight from Melbourne to Hochiminh City and return should be around 8 hours or 8 hours and 15 minutes. Nevertheless, yesterday, I sat on the airplane 9 hours such a ridiculous. I understood that because of naughty weather as well as some other reason as I don’t really know.
I arrived Hochiminh City at 5pm and another an hour waiting to go to custom. It was such an insane because they stopped working in the Tan Son Nhat International airport for an hour due to the other reason. Obviously, the other an hour waiting for taking my luggages. 
My parent picked me up at the airport. They were very worry about my flight. Finally, I came home! 
The weather in Hochiminh City was really hot and humid even it has had shower. Comparing the weather in Melbourne and Hochiminh at this time is totally differences. In Melbourne, even though it is sunny, it is still really cold with 18 degrees is the maximum; whereas, in Hochiminh City, although it has shower, it is still around 35 to 37 degrees. Sometimes, it is 40 degree and humid. Weird! I prefer to live in the cool weather rather in hot weather as I have an allergy with hot weather. 
I went back to my place at 7pm. I saw my two nephews - Tory and Philo. Well, they are growing up. While Tory was scared of me because it is such a long time I did not see and play with him, Philo is remembering his auntie. I carried Philo and he just looked at me, smile and hug me too tight. I tried to carry Tory but he started crying and shy. Tory was looking at his mama in the kitchen and tried to get off me. I was a bit sad as Tory, who was the one look at me couple months ago, and always played with me when his mama went to work. 
My mom cooked Vietnamese Spicy Beef Noodles as a gift for welcoming back. Of course, it was absolutely delicious and tasty. 
I opened my luggage after dinner and gave a lot of presents for my family. I brought a lot of toys as such books, puzzle, balls, and food for my nephews. I brought some vitamins, beef, chocolates, peanut and banana bread for my family. Everyone was happy and I was happy too. 
I went to my room and it reminded myself missing my bed. I slept in my bed with sweet dream. 
New day is coming! Weather is really hot and sunny, of course, I have to turn on the air condition all time. 
I went down the living room and saw Tory was playing with his toys. I carried and kissed him. Luckily, he did not cry. He still looked at me and tried to cry but his mama tried to convinced as I’m his auntie. Later on, he gets used to it and hanging around with me at the moment. 
Right now, I’m enjoying my holiday back in Vietnam and will update my activities regularly :)

X-Men: Days of Future Past

Yesterday, I went to Chapel Street for shopping, and end up the day with Ella at Jam Factory for watching movie named X-Men: Days of Future Past.
Going to Chapel Street on Monday, it did not busy like I thought. There were not much people for shopping on Monday. I went to Forever New shop and looking for an IPhone 4 case for my sister-in-law. It is really hard to find the case that she wanted. I was looking around Forever New in Melbourne Central and Bourke Street Mall, but I have to give up as they are out of stock. I tried the shop on Chapel Street with the tiny hope that the case would be there; however, it is out of stock as well. How sad?
I went along Chapel Street and came in Sport Girl, where is my sister-in-law favourite shop. Still, I was looking for the IPhone case for her. Luckily, I have found one and it was prettier than the one in Forever New. I was so happy. I called my sister-in-law and asked her what her favourite colour is. She said she loves orange, and I think it suits her as well.
Walking around Chapel Street, I have found Melbourne does not cold like last couple weeks ago. It was quite warm yesterday and there is not much sale off like I expected. I stopped at Ganache Chocolate shop at the corner of Toorak Road and Chapel Street. I bought 3 macarons, which are chocolate, pistachio, and raspberry flavours. I tried chocolate and raspberry; but it was not delicious like the other shop named Le Belle Miette. I save the pistachio macarons for Ella.
We chose to watch X-Men: Days of Future Past at 7pm at Jam Factory. There were not many people went out and watched movie like us. I have decided to have popcorn and coke; whereas Ella had her favourite ice-cream and water. The movie is about 2 hours and 15 minutes; however, neither of us had dinner yet.
Watching X-Men: Days of Future Past, I have some thought as it is the best X-Men so far I have ever watched it. Moreover, I watched X-Men because I wanted to see Hugh Jackman and my brother, who is acting as General Nhuan in this movie. For Hugh Jackman, he is really good actor in this movie. I could see his emotions through the movie is quite interesting; especially, his facial expression in the past and future. Within my brother, who is acting as General Nhuan, is fabulous. Even though he is not famous back in my country as well as overseas, his acting was really good. His facial expression, his actions are fabulous as well as speaking Vietnamese language are quite fluently even he lives in Canada for quite long time. Jennifer Lawrence in this movie is nice; however, her speaking in Vietnamese language does not like I expected as I could not get what she means until I read the caption. Fan Bingbing, who is one the famous actress in China, appeared in this movie. She just appeared one or two scenes, not much but I have found she acts not as good as I expected.
After watching movie, I and Ella decided to go to Oriental Tea House for dinner. I had Earl Grey tea; while Ella had her mint tea. We had some prawn ginger dumplings, mushroom dumplings, scallops dumplings, and tofu with salt and pepper. These were so yummy meal that we ever had so far for Chinese restaurant.
We headed back to South Yarra station and still talked about X-Men Days of Future Past. This is movie is nice and recommend for anyone like Hugh Jackman and who like action, adventures, and fantasy movie.

It is been a terrible morning I ever had so far in May. I woke up in the early and worked on my assignment. I tried to finish it before 10am as realized I need go to the Queen Victoria Market to buy some food. Today, the weather is quite cool, so I decided not to wear a jacket.
I came out of my place and stood in front of the machine, where you can top up myki card. I recognized that I forgot a card and came back home. I have tried to find my myki card but I could not. I started angry.
I went to Queen Victoria Market but I was not happy at all as I could not remember where did I put my myki card. When I came back home, I realized Melbourne Central celebrate the heritage festival so they have had tons of sale. Yes! It was sale off.
I came back home, cooked my lunch and decided to go to Melbourne Central again and just have a look around.
Even though I have had bad mood in the morning, later on, I was very happy. There was tons of sale (just only today 22nd May) most of the shop on sale. I have to say, I am a person, who addicted with any kind of shoes. That is the reason why I came to Melbourne Central today just looking for some pairs of shoes that I waited for sale off.
I went to Forever New, where I waited for quite long to buy a pair of shoes. It was a great feeling when I got a pair of shoes, which I love most, was on sale. I decided to take this pair and looked around for my sister’ stuffs. Everything 20% off, wohooo… I was so excited. Later, I came to Nine West, yes, just looking for the pair of shoes that I love. Of course, they were on sale as well – 25%. Those pairs of shoes that I love and waited for a long time for sale off have some of common sense. The color is blue navy, which I desperate to have it from the beginning of this year; however, I have had a thought that they would sale it some days. That is why I have to be very patient and wait until now. Both are flat shoes, comfy and fashionable.
Then, I went to Hairware House, where I usually buy coconut oil. Today, they gave 15% off to me. I was very happy and take shampoo and coconut oil for my hair. I hanged around and realized that I was not in bad mood anymore. I felt very happy and excited after looking for my favorite stuffs.
At the moment, I understand why does people have a joke: “Whoever said that money cannot buy happiness, simply does not know where to go shopping.”
I came back home in the late afternoon and cooked pasta soup, which is my favorite soup in Vietnam.
My day, which I was going to include sadness and happiness. Hopefully, tomorrow will be my great day.

All is about CAT :)
Ella and I was sitting on the shop named Le Belle Miette on Hardware Lane in the Melbourne CBD. We enjoyed having macarons and Earl Grey tea for afternoon tea on the cool day of Melbourne. While I had strawberry and vanilla favor for my macaron, Ella had passion fruit as her favorite. We were sitting in front of the shop and talked many things as such movies, pets and many more.
The discussion led to the Marnie – her mum’ cat. Ella told me she would go to pick up Marnie very soon as her mum has a trip to Europe. Well, I was excited and asked her should I go with her? Obviously, Ella agreed with this idea. I told her I would entertain her on the way to Mornington.
The day that we went to Mornington, I woke up a bit early. I offered Ella that I would buy the nice Borek in Queen Victoria Market and the bubble tea near the Melbourne Central Station – Chatime. It was not busy on the tram and train today, so I went to Queen Victoria Market quite fast. The market was not so busy as I expected. I thought maybe because of arriving very early in the morning, no one would go to the market during weekday. I thought it would be busy during lunchtime. I came to the Borek shop, where located in Deli hall in Queen Victoria market. I bought spicy lamb for me and the other flavor is cheese and spinach as Ella is a vegetarian.
I came to Melbourne Central Station to buy Plum Green Tea with bubble (pearl) for Ella and myself. I jump on the train to go to Glenhuntly station, where my Ella lives next to. It was not too far though, it took me around 20 minutes by train to get there. We were having meal on the car. Ella seemed enjoy having Borek and bubble tea that I bought for her.
On the way go to Mornington, I sang some songs and taught her some of Vietnamese words. We went to RSPCA – Royal Society for the Prevention of Cruelty to Animals near Mornington, where people could adopt dogs, cats and many more (I guess). Ella seemed like the dog station with a puppy called “Stuart”; whereas, I interested with cats a lot. I went to the cats station and saw a cat named “Boss.” Well, sounds like a boss, but he cutes – I have to say. When I stood next to him, he gave me a wave and tried to attract people as say “meow.” He is gorgeous man  - I thought. His fur is white, a few black’ place on his body and it seems he loves me. When I moved to the next station, I saw him look at me. He gave me the feeling that I should adopt him. I really want to; however, I cannot. I have no space for him to sleep and live in my apartment at the moment. I know, I fell in love with him – “Boss.”
We got off RSPCA then went to Ella mum’ place. Wow! I saw Marnie. I love Marnie, it seems she wants to be a cool girl, so at the first time, she did not touch me at all. I pretended that talking with Ella and she jumped to the coach and sat next to me. We picked Marnie from Mornington to Glenhuntly. She did not like to stay in the cave so I saw her pissed of Ella and I.
I came to Ella’ place today – what a wonderful place! She has the collection of tons of movies – Movies that she loves. I borrow her some Disney Movies and enjoy watching it over the weekend.
Hakuna Matata – What a wonderful phrases – It is means “No Worries” is the phrase that I kept talking with Ella on the way to Mornington and on the way back to Glenhuntly.
I had a great day with tons of fun. I think one day I will move to Mornington and enjoy wildlife and the fresh air in the beach. Of course, I hope that one day, I could adopt “Boss.”

Frozen – I have watched last weekend while I was doing my housework. The movie is very nice; especially the song named “Let it go.” I am addicted to listen it; so I kept listen it over and over again.
Frozen gives me some feelings that I am still thinking at the moment. The synopsis of Frozen is mainly talk about the story of Elsa. Basically, Elsa and Anna is very close sister; however, one day Elsa does not come out and play with Anna due to she realizes her magical. She could maintain the weather winter whole year. That is the reason she does not want to play with Anna. Because she thoughts her magical could be harmed for her younger sister. Anna did not realize about Elsa’ magical; that is why she keeps wondering and sadness due to her sister did not come out and do the snow statute with her.
When Elsa becomes a queen, she always wears gloves to control her magical in her hands. However, she fails because Anna suddenly takes out of her gloves in the ballroom. When I watched until this scene, I feel very sorry for Elsa because she afraid to tell her sister about the problem. She decides to leave the Kingdom and live very far away.
For Anna, she loves her sister so much; she decides to find her sister and leave Hans, who she thoughts her “true love.” On the way finding Elsa, Anna meets Olaf, Kristoff and Sven. They are willing to help Anna to find her sister.
Watching this movie, I like Kristoff’ character because he not only helps Anna to find Elsa but Kristoff also “teaches” Anna what the true love is. Once Hans does not really love Anna, Kristoff is the one who comes back to the castle and tries to rescue her since Anna is in the harmful positions.
In the movie, there is the scene that Anna has got freezing and nearly death. She runs away from the Arendelle castle and see Elsa is one the way of being killed by Hans. She sacrifices herself to rescue her sister.
I have some thoughts around this scene after watching this movie. I understand why Anna does this in the film; because she loves her sister so much. Any kind of love in this world could be melting the frozen heart. This Anna’ sacrifices is an act of true love with her sister – Elsa.
In the movie, there is the song named “Let it go,” I have found this is a nice song and keep listening it again and again. For me, the lyrics in this song is like represent for the disappointed feeling when no one understand Elsa’ situation. She does not to freeze whole kingdom – Arendelle, she wants to give back summer but she does not how to face with everyone; especially her sister Anna.
It is freezing in Melbourne at the moment. It could be Elsa comes to Melbourne already.
Anyway, enjoy listening this song “Let it go” and have a good week!
