Sauerkraut

I’ve been learning a lot out here in the country! Hannah and Tim have been embarking on a healthy lifestyle. I love sauerkraut and all that it does for us. It’s easy (and delicious) to make it yourself:
ingredients:
1 ORGANIC cabbage (Note: It is VERY important it’s organic cabbage. If it isnt, the bacteria and pesticides and chemicals or whatever else will be that grows and multiplies on your kraut. Opposite of healthy)
1 small onion chopped
3-5 cloves of garlic sliced or chopped
2 tbs himalayan salt
sterilized jars
Instructions:
Chop the organic cabbage and put into large pot
slice the onion and garlic and add it to the pot
add 2 tbs himalayan salt
crush for ten minutes. I use one of those stone crusher things you’d use in one of those bowls with spices in it. I dont know what its called. You can use a lot of force here and the ingredients will mash down and get watery and flatten down to about half the size.
start to scoop the cabbage mix- maybe just a spoon full at a time- into your jar that you’ve sterilized with boiling water. After each spoon full or every other spoon full, squish and pack it down. The liquid will rise above the solid.
Continue this method until you’re about an inch away from the top of the jar. As you get to the top, the liquid should be well above the solid.
Apply lid.
Put it in a cabinet and dont touch it for two days. After about two days, you’ll want to burp your kraut. Just twist the lid to let out some air. You’ll hear it hiss. This is essential because if you do not burp your kraut, the jar WILL EXPLODE!
Put the sauerkraut away again. It will be ready to eat in two weeks :) :) :)
***You can play with the recipe! You can add different spices or leaves to change the flavor. Just make sure your hands are clean and your ingredients and jars are clean.

We visited a farm today. The biggest farm I've ever seen. They have thousands of sheep that they sheer and lots of cows too. I'm obsessed with sheep on hills.
