Cinnamon Raisin Bagels
512g Bread Flour
282g Water
10g Yeast
40g Barley Malt Syrup
92g Sugar
10g Salt
77g Raisins
5g Cinnamon
Instructions
Warm 82g of water to around 110 degrees Fahrenheit. Then add yeast, stir, and let rest for 10 minutes.
Add flour, salt, sugar, cinnamon, 30g of Barley Malt Syrup, and the rest of the water to a bowl. Mix on a low speed for 2 minutes.
Slowly add yeast mixture and mix on medium speed for around 5 minutes.
Add raisins and mix only long enough to incorporate them.
Add dough to an oiled bowl, cover with plastic wrap and let rise for 1 hour
Scoop dough onto a lightly floured surface
Split dough into 10 equal pieces (should weigh around 100g each)
Take one piece and roll it into a ball. Stick your finger through the middle and gently stretch until the whole is around 2 inches. Repeat with all the pieces
Fill a deep pot with water and bring to a simmer
Add 10g of Barley Malt Syrup to the pot
Add up to three bagels to the pot and cook for 1 minute on each side then move them to a cooling rack. Take care to make sure the bagels aren’t packed into the pot. Repeat until all the bagels are done.
Put bagels on a non-stick baking sheet and bake at 425 degrees for 20 minutes
Let bagels cool for around 10 minutes
Toast and Enjoy!

My bagels came out nearly perfect, if a little over done. My next batch is going to be cinnamon raisin and I'm going to make them a bit bigger

Every family has that one recipe, you know the one. It’s the one that everyone loves but no one knows the recipe to. Well for my family that recipe is Aunt TT’s potato rolls. These rolls were the best rolls you will ever have in your life,and they were always accompanied by her homemade peach jam. The combination was so heavenly that you could eat an entire batch as well as half the jar of jam without even realize. Sadly Aunt TT passed away a few years ago, but before she payed my mom managed to get the recipe from her.
