As someone in academia, I can tell you why textbooks aren't doing this. In academia, 'they/them' are STRICTLY plural pronouns. You cannot use them to be gender neutral for one person.
I also see the reasoning behind this. They're supposed to be plural only. My idea of a potential solution is to have a different pronoun (probably a new one) that is meant to be strictly gender neutral AND singular. At least in academia.
When it comes to academics, you got to realize these are the people that are the slowest to change. They're also not likely to let go of the plural-usage-only rule for they/them. It'd be better (for academics) to introduce a new pronoun that's meant to be a gender neutral option and singular.
literally so annoying when i’m reading a textbook and it keeps saying “he or she” or “his or hers” or “him or her” i’m just like WOW WOULDN’T IT BE GREAT IF THERE WAS A GENDER NEUTRAL PRONOUN THAT YOU COULD USE INSTEAD

I think the most unintentionally pretentious part of me is I genuinely forget that most people do not have a near-encyclopedic knowledge of mythology and folklore. I literally just assume most people know at least the name of every Greek god. My mom and I were watching the Banshees of Inisherin and at the start, she asked "Do you know what a banshee is?" and I was so stunned because it would never occur to me to ask that question because I would never assume the average person doesn't know what a banshee is. The average person knows what a banshee is right. You know what a banshee is right. You know the names of the greek gods right. You know that norse myth where loki fucked the horse right. Right. RIGHT
