Happy #gowardhan to all of you. To celebrate this I made this special aata ka halwa. Basic ratio to keep in mind is 1 cup aata, 1 cup sugar, ½ cup + 2 tbsp and 2 cups of water. Recipe: In a pan add 1 cup of aata and roast it for 2-3 min. Next add ½ cup ghee and roast aata until it starts leaving the sides. In a separate pan add 2 cups water and 1 cup sugar. Heat the water and sugar. Let the solution come to a boil. Once aata is roasted add the bubbling hot sugar and water solution to the atta mixture. be careful as the mixture has the tendency to splutter. It’s weekend and again pizza time. It’s the easiest recipe and makes the beat pizza I have ever baked. Ingredients 180gm water 2tsp salt 7g yeast 260gm flour 1/2 tsp salt 2tbsp olive oil 𝗥𝗲𝗰𝗶𝗽𝗲: In a bowl add water and heat it until its warm just warm. Now add sugar and yeast. Let yeast proof for 5-10 min. Now in a big bowl add APF, oil and salt. Mix the wet. Knead the dough for good 5 min until the dough becomes stretchy. Cover and set this aside in a warm place for 1-2 hours or until it doubles or triples in size. Punch the dough and give pizza shape. Apply pizza sauce as your liking, some cheese and toppings. #happyganeshchaturthi I know I am a little late for this post. But here is my take on the modaks. These are my Kaju Katli Modaks. Recipe: add 400gm of sugar and 200gm of water in a pan. Cook until it becomes a thick taar chasani. Now add 400gm of grounded cashews and cook until it leaves side and when rubbed between 2 fingers it makes a ball. Now let it cool down for 5 min and give modak shapes. Few days back I shared my version of tahini with you guys. Today its my "Dalai Salad" which I created using my homemade Tahini. Hope you guys like it. 𝗥𝗲𝗰𝗶𝗽𝗲 𝗕𝗮𝘀𝗲: 1 cup cooked dalia. 𝗩𝗲𝗴𝗴𝗶𝗲𝘀: half purple cabbage, some baby corn, 1 small onion, Few cherry tomatoes, Some celeray, Some basil leaves, 1 small cucumber, Red and Yellow bellpepper. These are the options which I used Dressing: 2 tbsp Tahini, 1 lemon juice, 3 tbsp olive oil, some salt and pepper 𝗡𝗼𝘁𝗲: You can mix dalia and veggies anytime but add dressing when you are about to eat the salad. If you were following me on my stories you would know that I was indulged into making salads last week. I tried whole wheat Dalai salad, quinoa salad and pasta salad. All those salads were amazing. What I understood was to make a perfect salad you need a perfect sauce. So to make a base for my salad I used “Tahini a lot”.. 𝗪𝗵𝗮𝘁 𝗶𝘀 𝗧𝗮𝗵𝗶𝗻𝗶?? 𝗧𝗮𝗵𝗶𝗻𝗶 𝗶𝘀 𝗮 𝗽𝗮𝘀𝘁𝗲 𝗺𝗮𝗱𝗲 𝗳𝗿𝗼𝗺 𝘀𝗲𝘀𝗮𝗺𝗲 𝘀𝗲𝗲𝗱𝘀 and is a staple in many cuisines, especially in the Mediterranean and Middle East. It’s vegan, gluten-free, nutty and is simple to make. 𝗛𝗼𝘄 𝘁𝗼 𝗠𝗮𝗸𝗲 𝘁𝗮𝗵𝗶𝗻𝗶? In a pan roast 1 cup of sesame seeds for 5 min over low heat. Don’t let seeds change its colour. Now set this aside and let it come to room temp. In a blender jar or a food processor blend until you have a smooth. Use 2 tbsp olive oil in between. This might take a few minutes.
