italy SUCKS for many countless reasons but i assure you culinary traditions are one of the few things that are exempt from that :')

the thing about italian food is that it kinda sucks when made in italy. the average italian cook is suffering under 300 different traditional family bylaws that prevent them from like, adding garlic to their sauce, or washing their vegetables or whatever. and if they were to move five kilometers away to the next town over then they'd be executed in the street for cooking it that way. when italians are released from the context of italy it's like they're taking off training weights. an italian cook with no limiters becomes a culinary apex predator. it's for this reason that italian food has, outside of italy, become one of the big three cuisines, while remaining, in italy, frustratingly under-potential. it has to be this way.

i don’t mean to be rude but as an italian living in italy that’s actually very false. besides the fact that we have like a lot of restaurants and cooks that focus on experimenting with traditions and incorporating foreign and/or new culinary customs into their dishes, i can guarantee that this stereotype about following traditions to a t is not as stigmatized as you make it out to be and most of the times it��s something we use as a joke to "criticize" culinary choices that appear absurd to us (but it’s actually very light hearted); take the pineapple on pizza discourse for example, though we kept making jokes abt it online in the end if you come to italy you will find quite a bit of restaurants that have introduced this kind of novelty into their menus. this misconception that italy is a monolithic entity that does not allow any kind of change is kinda sad and misleading; it’s obvious you may find a lot of cooks that prefer sticking to traditions, as much as it can happen in the next country though. also i assure you that italian cusine here in italy is 10/10
