Dinner was the sushi bowl I’d planned to make last night. Sushi rice with carrot, zucchini, steamed sweet potato, avocado, nori, and sesame seeds. And I went for a walk after dinner. Work was stressful and I’m stressed out about other stuff, but I’ve dealt with it all pretty well today. I’m really ready for the weekend.
The full day:
Breakfast: toast with Tofutti, banana, jam, and hemp hearts
Snack: cherry tomatoes, Tofurkey slices
Lunch: corn chowder, grilled “cheese,” broccoli, sriracha tofu
Dinner: sushi bowl

Lunch was the same as yesterday, minus half a sandwich: corn chowder with sriracha tofu, grilled cheese made with The Honest Stand spread, and broccoli.
Exercise so far: 80 minutes on the stationary bike. About to go for a walk because I’ve been staring at an Excel sheet for the last 3 hours.

Last night didn’t exactly go according to plan, haha. We ending up going out of town to look at a car, ended up buying said car, and going out to dinner at Vertical Diner. Not complaining, and we didn’t get dessert and it didn’t devolve into me eating junk food all evening. 
Every time we go to Vertical Diner, we have to share an order of Buffalo Tigers. They’re one of the best things ever. Fried chunks of seitan tossed in a sweet and spicy buffalo sauce. I could eat an entire bucket of them. After that I decided to try and keep it sort of light with an order of jackfruit tacos, which came with a salad. The tacos were good - they definitely weren’t trying to be terribly Mexican. And the salad was fine. I really like Vertical Diner, and I’m kind of glad it’s a bit of a drive to get there because it would be a bit dangerous to live too close to it. I’d be there all the time, eating piles of Buffalo Tigers.
Here’s the day’s full damage:
Breakfast: banana toast with Tofutti and strawberry jam
Snack: apple with ½ tablespoon peanut butter, Tofurkey slices
Lunch: corn chowder, one and a half grilled cheese sandwiches made with The Honest Stand cheese spread, broccoli, and sriracha baked tofu
Dinner: tacos, salad, and Buffalo Tigers at Vertical Diner

Today’s lunch was just yesterday’s lunch plus MORE. I added a half-sandwich, some broccoli, and some Trader Joe’s sriracha tofu “croutons” on the soup. I was plum stuffed by the time I finished, but not miserable. 
Tonight I’m making sushi bowls for dinner.
The day so far:

Ugly food photo alert! Dinner was cauliflower “chicken” tossed in gochujang sauce over jasmine rice and riced cauliflower. Dessert was a small square of dark coconut milk chocolate. 
My entire day:
Breakfast: peanut butter-chocolate nice cream bowl
Snack: grape tomatoes
Lunch: corn chowder and grilled cheese
Snack: Larabar, later on: two Tofurkey slices
Dinner: cauliflower gochujang “chicken” over rice and riced cauliflower
Dessert: small square dark chocolate

Lunch was corn chowder and a grilled cheese. The grilled cheese is made with The Honest Stand cashew cheddar spread - it’s so good. And I spread a thin layer of reduced-fat Veganaise on the outside of the bread before grilling it. You should try it sometime. 
For a snack I had a peanut butter-chocolate chip Larabar. Kind of a rich snack, but really satisfying. 
Day so far:
Breakfast: peanut butter-chocolate nice cream bowl
Snack: grape tomatoes
Lunch: corn chowder and grilled cheese
Snack: Larabar
Dinner will probably be a sweet and sour cauliflower bowl.

50-ish minutes on the stationary bike
About to do a Walk at Home workout. Will probably go for a walk after dinner.

Today I was a total vegan cliche and made chocolate-peanut butter banana nice cream for breakfast. Unlike a lot of nice cream on the internet, mine is not very photogenic. I plugged it into MyFitnessPal (with the toppings - peanut butter and hemp hearts):
436 calories
13 grams of fat
10 grams of fiber
17 grams protein
Not bad. Weekdays are a lot easier for me stay on track - I guess having a routine is good and stuff. For lunch, I’m making this corn chowder, minus the olive oil, and a grilled cheese with a cashew-based cheese. 
Exercise so far: stationary biking, in progress. I have one of these contraptions.

Yesterday was kinda busy and weird, so i had another Plant pure meal for lunch. This one was much better than the Sesame Garden Noodles, and fewer calories, if you care about that. The peanut sauce was really flavorful, the giant slabs of tofu were nice, and the veggies were much less frozen-tasting. I thought the couscous were an odd choice for the grain (I would have preferred rice), but it’s fine. I did add a fair amount of coconut aminos and sriracha.
For dinner, my SO and I went to a vegan bar and I got a tofu bahn mi and a rum and diet coke. I wanted a kombucha, but it was one of the rare bars around here that doesn’t offer kombucha. I hadn’t had much to eat all day, so I feel like for a weekend meal, this wasn’t bad. Definitely not ideal, but balance, I guess. 
I’m definitely feeling less gross and tired now that I’m eating better and getting out and exercising. Ready to drop some weight, but I know that take time and persistence, especially for me. 
Yesterday food and exercise:
Breakfast: toast with tofutti, jam, and hemp hearts
Lunch: Plant Pure Peanutty Buddha Bowl
Dinner: Tofu bahn mi, rum and diet coke, mini soft pretzel bite

Farmers market haul! My cat was fascinated by all the produce, so you get a bonus cat. I did not buy him at the farmers market. I discovered one of the vendors sells gala apples last week, and wowzers, they’re so good. I also bought the hugest cauliflower ever. And my So and I are addicted to that strawberry jam.
My day so far:

It’s Friday, bitches! Normally I would go hog-wild and get a big ol’ vegan pizza or something equally excessive, but instead made the responsible choice and got veggie sushi at the new sushi and ramen place down the street. I had two avocado rolls and one cucumber roll. Only $4 each.
It’s been a good first day back on track. Still want to get a walk in before I go to bed.
