Holiday Baking ๐๐ Ginger Banana Bread Muffins * 1/2 cup butter (plant based or sub coconut oil) * 1/2 cup brown sugar * 1/2 cup maple syrup * 2 eggs (can sub flax egg) * 3 mashed bananas * 2 cups of flour (gluten free recommended) * 1 tablespoon grated ginger (avoid cinnamon!) * 1 tablespoon vanilla * 2 tsp baking soda Instructions 1. Pre-heat your oven to 450 degrees F. 2. Line a muffin tin with paper cups or lightly oil and flour 3. Whip the butter and sugar until light and fluffy. 4. Add the eggs and beat until combined. 5. Mix in the banana and maple sugar until completely combined. 6. In a separate bowl, sift together the dry ingredients then combine wet and fry ingredients. 7. I only occasionally drink Green Tea for the small caffeine kick and usually choose to enjoy a warm and aromatic cup of โ๐๐ฃ๐๐๐ ๐๐๐ instead. Drink ๐พ๐๐๐๐๐ฃ ๐๐๐ to start your day feeling invigorated. Ginger is alkaline in nature and anti-inflammatory, which eases irritation in the digestive tract. Ginger also speeds up emptying of the stomach, which can help prevent reflux! Fully stocked baking cabinet ๐ On the top shelf I stored things I will use least often like thickeners and rising agents. The middle shelf is where I keep all of my options for flour; gluten free , all purpose, whole wheat, etc. The ones I reach for most often are stored up front. On the bottom shelf is where Iโm storing all of my nutrients and add ins. I wanted these to be easily accessible when I make smoothies or need flax/chia eggs. I kept all of my sweeteners and oils in the cabinet above the stove. Reorganizing my pantry this weekend! What staple items do you keep in yours ? I realized I have at least 6 kinds of flour... all for different purposes . I try to avoid gluten products because I can tell my body is sensitive. Non-celiac gluten sensitivity causes symptoms like nausea, vomiting, abdominal pain, headaches, diarrhea, joint pain and fatigue. I primarily use gluten free flour mixes, almond flour, coconut flour, and oat flour. As someone who loves to bake and cook for others, I also keep all purpose and whole wheat flour on hand. I have semolina flour because I went through a pasta making phase, but this one has a high gluten content and is used the least. When I first started trying out gluten free flours I made my own at home by pulsing small batches of oats, cashews, almonds, etc in a food processor! Itโs so easy! Try out this easy meal prep method. You can easily the swap out the veggies, proteins, or grains to match your preferences. Choose options that are alkaline, low fat, and gluten-free. Prepare the food in bulk, then divide it into portion containers so you can eat healthy, GERD-friendly meals all week long! Preheat oven to 425๏ฟฝ๏ฟฝF โจSlice potatoes into wedges and coat with olive oil and fresh herbs like rosemary and parsley. Roast for 30-40 minutes โจ Toss green beans and carrots with a small drizzle of olive oil and season to taste with salt and pepper. Add to the oven once potatoes have cooked about 20 minutes. Bake about 15 minutes. โจCombine 1 cup of quinoa with 2 cups of water and simmer until liquid is absorbed, ~20 minutes. โจ Lightly cover fillets of fish with gluten free flour and season as desired.
