Hi everyone today we are going to be making my favorite mushroom soup

So first we got out mushrooms, pound of em, usually I use button bc they're cheaper and they're all the same mushroom, but today I'm using baby Bella, I'm fancy. That's also a whole yellow onion all chopped up

Those mushrooms I made different types of chops for texture, some slicey some chunky

Then I got like, almost a whole stick of butter,6tbs if I'm to round it, I'm gonna brown it a bit before I put the mushrooms and onions in. I love browning butter

started getting some clicking drives in my file server. time to take out the old drives, some almost 15 years old. Replacing with 2 6tb server SAS drives mirroring to 2 more.

for those curious, server is a ryzen 1200 and a SAS card in an antec case. it was painted honda sonic blue back in the late 2000s.

it serves as a samba server, music server, and Vintage Story server and runs openmediavault.

chocolate chip buttermilk scones

1 large egg, beaten

75g (1/3c) Greek yogurt

1/4c light buttermilk

1tsp vanilla extract

240g (2c) all-purpose flour

64g (1/3c) white sugar

2tsp baking powder

1/4tsp salt

6tb cold butter

150g chocolate chips

preheat oven to 375F

whisk together the egg, yogurt, buttermilk, and vanilla

in a large, separate bowl, whisk together the flour, sugar, baking powder, and salt

cut in the cold butter to the dry mixture and mix in using the back of a fork, until the mixture looks like fine crumbles

add the chocolate chips into the dry ingredients

add the wets to the drys, and fold until just combined

lightly flour a surface (~5g) and turn out the dough, kneading gently until a sticky dough comes together

line a baking sheet with parchment

place the dough on the parchment and pat into a large circle, about 1" tall

cut the circle into 8 wedges with a sharp knife, but do not separate

sprinkle the top of each wedge with an 1/8tsp of white sugar

bake for 20 minutes

remove and cut through the wedges again

bake for 5 minutes, then remove and separate the wedges from one another

bake another 5 minutes ((30min total)), or until the scones are golden-brown and no longer doughy

the dough is very sticky, so it is easier to bake as a circle, then later separate the wedges
