Simple & Delicious: Homemade Banana Bread
I love cooking.  The joy of being creative.  The excitement of “exploring” different cultures on the cheap without having to buy a plane ticket.  Heck it’s just plain old fun to try out new recipes or sift through vintage cookbooks to find a new tradition.  I love it all.   What has never been quite my jam, however, is baking.  I’m not big on measuring and it’s always seemed to me that there are just FAR TOO MANY bowls and measuring implements and whisks and spoons involved with baking that cleanup becomes tedious.  But, on the journey to becoming more self-reliant and sustainable, I find myself wondering what kind of homesteader I am if I’m still buying overpriced and over packaged grocery store bread... So I vowed to try my hand at baking again and, to get inspired, I bought this lovely cast iron loaf pan.  The beauty of cast iron is that, when properly seasoned (tutorial on seasoning coming soon!), it is naturally nonstick so you can say ta-ta to toxic teflon. To break in my pan, I made this gorgeous, and super easy, loaf of banana bread first:

What you need: 2 cups flour 3 teaspoons baking powder 1/2 stick of unsalted butter 3/4 cup brown sugar 2 eggs 2 1/2 very ripe bananas Step 1: Thoroughly mix all your wet ingredients together in a mixing bowl.  (I’m not having any of this two bowl nonsense.  Ain’t nobody got time for that!) Step 2: Fold in your dry ingredients and stir to combine. Step 3: Bake at 350F for one hour.  The loaf is done when a fork inserted at the center comes out clean. See.  So easy!  This bread makes for an excellent breakfast or dessert, with or without jam and butter.  I hope to make some savory loaves soon and will post tutorials when I do.  Happy homesteading!

Sometimes you just want a really great baked chicken. Right? Here is Jason's sure-fire perfect baked chicken made right in our favorite @lodgecastiron skillet. This recipe is so simple and perfect for dressing up a week night dinner. Read on for the recipe: Jason's Easy Sure-Fire Baked Chicken 6-8 Chicken Thighs 1 bottle Organicville Vinaigrette (Sun Dried Tomato & Garlic) or other bottled vinegarette 1 Tbsp Mustard Powder Juice and Zest on 1 lemon 1 tsp garlic powder Salt and Pepper to taste . . . . . . . • Place 3-4 chicken thighs in a bowl and pour over 1/2 bottle of vinaigrette. • add remaining chicken to bowl • combine mustard, garlic powder, lemon zest and juice, with remaining vinaigrette, pour over chicken and stir so all chicken is fully coated • refrigerate for 2-4 hours • Pre-Heat oven to 350 degrees • Place chicken in baking dish or cast iron skillet • sprinkle liberally with salt and pepper brush or spoon some marinade from the bowl onto each chicken thigh • Bake for 45-60 min until chicken is golden brown and full cooked. serve with any veggie you like! . . . . . . . My friends.. dig deep. You know you have one in there way back in your cabinets. Maybe from your great Aunt or your Grandmother. If not then get out and get yourself one. If you're not using cast iron in your cooking, you really should. Here's why. Cast iron cookware retains heat. They stay hotter. Much better than other similarly sized pots and pans. If you are iron deficient, cook with cast iron pots and pans to boost your iron intake. They leach iron into your food and help provide the 18 mg of iron that we need daily. Oh and the flavor. Everything tastes better when cooked in cast iron. They are portable and indestructible and can be used over an open flame while camping as well as in your oven at home.
