Cucumber and Pomegranate Wheat Berry Salad (Vegan)

The sun is out, the sky is blue, this warm Spring Saturday feels a bit like Summer, and this refreshing Cucumber and Pomegranate Wheat Berry Salad and a glass of chilled rosé is just what you need to complete the illusion! Have a good one!
Ingredients (serves 3 to 4):
2 cups wheat berry
1 cucumber, rinsed
a dozen large leaves Garden Basil 
salt and freshly cracked black pepper, to taste
2 tablespoons olive oil
1/2 ripe lemon
1/3 cup freshly released pomegranate seeds
Cook wheat berry in a pot of salted boiling water according to package's directions, generally 10 minutes until al dente.
Drain wheat berry, and allow to cool a little.
Meanwhile, halve cucumber and cut into thin slices. Add cucumber slices to a large salad bowl.
Finely chop Garden Basil, and add to the salad bowl. Season with salt and black pepper, and drizzle generously with olive oil. Toss, to combine.
Thoroughly squeeze in the juice of the lemon halve, and toss once more, to mix.
While it is just a little warm still, stir in cooked wheat berry and fresh pomegranate seeds, tossing well to combine.
Chill in the refrigerator, at least a couple of hours.
Serve Cucumber and Pomegranate Wheat Berry Salad cold, with a glass of chilled rosé or dry white wine.

Not a clue how many vegan followers who enjoy cruises I have, but I want to stick the pictures I took of the main dining room vegan options somewhere, and it may as well be here! We ate at the main dining room five of the seven nights. Will include the night, the official description, my image, and a brief thought.
This was for a seven-day Australian domestic cruise on Royal Caribbean's Brilliance of the Seas. The nights we skipped were days 4 (British night, vegan options were garden salad, butternut squash curry that was available in the buffet anyway, and a vegan berry sundae), and days 6 (Royal Night, the other formal night - vegan options were a citrus/avocado/melon salad, stuffed red bell pepper, and a chilled banana-cocoa custard). Our sailing did not include Mexican Night (disappointingly, some interesting stuff on there!) or Mediterranean Night (exact same items as Bon Voyage).
Day 1: Welcome Aboard

Starter: Roasted Tomato Soup. A blend of seasoned vine-ripened Roma tomatoes topped with crunchy garlic ciabatta croutons and basil pesto.
A very tasty small serve of soup.
Main: Herb-Crusted Stuffed Portobello. With vegan creamed spinach and fluffy vegetable couscous, baked until golden in marinara sauce and herb oil.
Whoops, I started on this one before I took a photo. It was very round! The couscous was good.
Dessert: Peanut-Caramel Bar. Crispy peanut butter rice square with a touch of maple syrup over a sweet mixed berry compote.
No compote, actual fresh berries. I do love peanut butter and caramel, although it did feel fairly simple.
Day 2: Italian Night

Starter: Golden Polenta Fries with Spicy Dip. Crispy baked corn polenta served with a chilled creamy hazelnut-red pepper spread.
Delish, the sauce was fantastic. Kind of wanted seconds.
Main: Vegan Spaghetti Bolognese. Al dente pasta in a rich marinara sauce with hearty mushrooms and a tofu crumble.
It was... edible! Bizarrely, the tofu crumble seemed to be silken tofu? I got the impression it'd be more parmesan-like. This one was just okay.
Dessert: Crumbly Oat and Berry Bar. Layers of jam and brown-sugar-crusted oats baked fresh and topped with berries and mint.
Very tasty, although again, it felt a bit basic (and there was no mint at all).
Day 3: French Night (formal)

Starter: Creamy Butternut Squash Soup. Roasted harvest squash blended with coconut milk topped with crisp toasted pumpkin seeds.
Only a small serve, but an excellent pumpkin soup.
Main: Spring Pea and Asparagus Risotto. Creamy short-grained rice in simmering pea and mint sauce with jumbo tender asparagus.
Felt... sparse. These are not jumbo asparagus, RC! The peas were either frozen or freeze-dried? Not great. Pretty disappointing for formal night.
Dessert: Dark Chocolate Chip Cookies. Homestyle favorite served with fresh raspberries.
These, at least, were delish. Raspberry, single, lmao. Odd choice for formal night, though.
Day 5: Caribbean Night

Starter: Green Lentil Soup. Hearty lentils simmered in a San Marzano tomato base with fragrant rosemary. AND Maple-Soy Tofu and Avocado Salad. Chilled marinated tofu tossed with plump grape tomatoes, ripe avocado, and toasted white sesame seeds.
Two, two vegan starters! Got both, for Science. The soup was delish, and the tofu was beautifully done, although avocado lovers would be deeply disappointed by only two little cubes.
Main: Stuffed Grilled Eggplant. Whole wheat couscous with pomegranate seeds and bell peppers layered inside grilled eggplant, with minted cucumber and a spring onion dressing.
No pomegranate to be found, but otherwise extremely tasty.
Dessert: Vegan Fudge Brownie. Rich chocolate brownie with sweet whipped cream and caramel sauce.
The 'cream' felt odd, but the giant scoop of ganache more than made up for it. Delish brownie, very fudgy and much better than the cakey brownies they had up at Windjammer.
Day 7: Bon Voyage

Starter: Pan-Seared Asparagus. Jumbo green asparagus with creamy white bean hummus and a hazelnut-basil pesto drizzle.
Again! These are not jumbo asparagus! Tasted great, especially the hazelnut pesto, and Mum and I both got seconds of it, just... not much to it.
Main: Vegetable Greek Moussaka. Layers of grilled eggplant, Roma tomatoes and tender potatoes and onion, topped with panko breadcrumbs and served with oregano-tomato salsa.
My favourite of the mains, really filling and tasty.
Dessert: Chocolate Cherry Tart. Vanilla tart shell with rich dark chocolate ganache and cherry filling, sweet whipped cream and lemon zest.
No lemon zest, but there was a maraschino cherry! Very tasty, albeit quite hard to eat! (The ganache would slide around on top of the cherry filling.) The whipped cream was a bit overly sweet.
Overall thoughts
Not bad, and there has at least been an attempt! Some items were... weirdly sparse, like the formal night risotto, and the starter serves were sometimes tiny. Also, they do not know the meaning of 'jumbo asparagus', apparently. Some pretty decent desserts, albeit some quite simple. On the plus side, it's not just a scoop of lemon sorbet or some fruit!
Vegans won't go hungry, although you may want a protein shake or bar or something too.

Heya I was wondering if you think it’s possible for anyone to be vegan? I’ve always been interested in trying but I have a lot of allergies (rice, corn, all types of melon, tomatoes, broccoli, nuts, seeds, peas, garlic, onion, chocolate, carrots, lettuce, sunflower seeds, strawberries, mango, pineapple, apples, and an oral allergy to bananas and avocados so I can only eat those cooked) that intimidate me out of it. Just curious if you have advice of any kind. Thanks!
Hello! First off, I have to say if you really want to go vegan then you can do it. Personally I believe that it is possible because most of what would change is the swap of meat for meat substitutes (many omnivore dishes contain ingredients that you are allergic to…also consider the fact that you’ll be ditching bad cholesterols :). I was also nervous about going vegan cuz i thought that my allergies to all nuts and many seeds would make things difficult (it seemed like a goodbye to all affordable forms of cheese–vegan or not). But I learned over the years that eating according to allergies (and other food choices that was better for my health–eg. plant based eating) is not a matter of restriction but finding alternatives (like a parent should do with a child with picky eating habits). I’ve become accustomed to tweaking recipes because of it. The biggest thing I would say that you would need to face is cooking more for yourself (but you may be used to that) and possibly costs (since you are allergic to some of the cheaper vegan foods). I can give my suggestions in three parts: allergen swaps, dish ideas, other eating tips.
i. And with your allergies, many foods will be less accessible so you’ll want to compensate for that fact especially as you first try to navigate the lifestyle.-Supplemental foods: spirulina, moringa, carob, microgreens/sprouts, nutritional yeast, goji berries-Explore other cuisine-Berries for antioxidants-Teas (hibiscus, licorice, peppermint)-Listen to your body. Feed it if you feel hungry-Vitamin C –> helps iron absorption-Omega 3s –> soy products like tofu or edamame-B12 –> fortified plant milks and nutritional yeast-Get familiar with more herbs to give your dishes variety

In Stardew Valley, in order to gain friendship with the community you need to give the residents gifts found throughout the world. Everyone has different gifts they absolutely love and others they cannot stand. So I thought I would put together a little guide on what every characters loves the most. Now there are some universals that apply to every villager so that is listed at the top of this list. You can gift villagers gifts once a day but up to a max of twice a week.

The restaurant was giving us homely vibes. It has some Iranian artifacts like Persian hanging rugs, tile painting, table clothes.
The more interesting thing is the table cloth pattern represents Indian cultural patterns too. the shapes, patterns are more familiar with me as I am from India, I know its patterns very well. the major difference is that we use this type of pattern as our bed sheets.
My dish: Shirazi Salad
“Shirazi salad is a popular traditional Iranian salad originating in Southern Iran and named after Shiraz. It is also known as Persian Cucumber and Tomato Salad. The main ingredients are cucumber, tomato, onion, olive oil, and lemon juice, although sometimes lime juice or verjuice is used in the preparation.
In Iran, it is eaten on its own as a side dish in the summer, along with meat-based foods such as kebab or steak, and as a side dish before and after meals throughout the year. Shirazi salad is sometimes used to complement rice. Cookbook author Jila Dana-Haeri describes it during the summer as a refreshing dish.”

It is very easy and quick to make.
we just need to chop tomatoes, onions and cucumber into very finely. And then some lemon juice, dried mint, and coriander leaf to garnish this salad.

It’s midnight… and are you craving for food? Do you feel like having a pizza or a burger or a couple of donuts or maybe a few momos? In today’s fast-paced world everyone is busy chasing their dreams and are struggling for their survival. We are working through day and night to become successful. But, do you ever think about what we are losing in the process of getting successful? Are we indirectly hampering our health due to our stressful lifestyle?
Early To Bed And Early To Rise Is Rarely Practised These Days This unhealthy lifestyle of getting late to bed is not only common with adults, but it equally affects urban kids and teenagers. Today, children prefer playing with their gadgets over playing outdoors. Most of them are gadget freaks who spend hours watching movies and playing games on their I-Pads or other tablet devices accompanied with a big bowl of chips, maybe even a few rolls or chocolates till the wee hours of the night.
People like you and me are either staying awake streaming their favourite movie or binge-watching the latest season of the Game of Thrones or cheering for their favourite EPL team or it could just be office work which is making you a nocturnal creature.
Midnight is the time when most people feel a craving for snacks. Even if you’ve had dinner at 8, you’ll again start feeling hungry if you are awake late. Most of us end up eating junk when this happens. Especially for all the health-conscious people, this is one thing which is very unhealthy. Unhealthy, because this does not necessarily mean that one is hungry, it could just be due to boredom or due to being awake or a habit that one has developed over the years.
Health hazards of such behaviour are many – from weight gain to bloating to acid reflux to triggering stress hormones and much more. Taking these health issues into account, let’s see what people usually crave for and what could be a healthier alternative if one can’t control these midnight hunger pangs.
Ice Creams: When you open your fridge and find out a tub full of ice- cream, you would obviously eat it. Who wouldn’t, right? However, instead of gulping down on store-bought ice cream, how about making your own? Just take some ricotta cheese and blend some berries and nuts – your homemade ice-cream is ready!
Salty snackCraving salty snacks: It could be chips, nachos, fries or a thousand other things – but do you know what all of them have in common? It is full of saturated fats and oodles of salt which can result in an unwanted increase in blood pressure and metabolism, which can lead to stroke and weight gain respectively. So how about having some roasted makhanas, puffed rice, wheat or millets with rock salt and black pepper instead? You can also try having avocados with some yoghurt – this is not only healthy but is absolutely yummy!
Cookies/ Brownies: Cookies and brownies are one of the many indulgences which most people enjoy, especially children. However, these can wreak havoc on the body’s blood sugar balance, spiking it erratically. Instead, have some fruits / homemade brownies/ squeezed sponge Rasgulla (a Bengali sweet) or simply 2-3 pieces of dark chocolate to control that temptation.
Fried Nuts: Rich in trans fats, packaged fried nuts can easily hamper our blood pressure levels, trigger a heart stroke and cause fatigue. Instead, have something sweet with a crunch – mix half a cup of crunchy cereal with a small container of fat-free Greek yoghurt rich in both dietary fiber and protein. Even some fruits like dates, pomegranates can be had along with some nuts and a few pieces of dark chocolate, satisfying the temptations for both sweet and nuts.
Pizza: The all-time favourite pizza, with loads of cheese and bread, can significantly spike up the sugar levels. Instead, one can go for his/her own multigrain toasted pizza at home with a good choice of fresh vegetables and some healthy cheese.

Here I have jotted down a list of healthy snacks which you could binge on at midnight. These are snacks especially for teenagers or youngsters who seldom like eating fruits.
1/2 cup roasted peanuts 1/2 cup roasted chickpeas/ black grams (Channa) 1/2 cup protein mix (a mixture that is easily available with nuts and seeds) 1/2 cup roasted wheat (it’s a snack that is available just like puffed rice) 1/2 cup roasted Mung beans (Moong) 1 medium bowl popcorn (without butter) 1 glass of milk (saffron, cardamom can be added; coffee can also be added once in a while but in moderation so as to prevent functional disturbances like sleep issues, irritability and nervousness) 1 bowl papaya/ cucumber/ pomegranate 2 boiled egg whites (sprinkle rock salt and black pepper over it) Boiled Cauliflower with Olive Oil and Sea Salt Crunchy Muesli + milk Amaranth pop mix Wheat Rusks (2) Green Tea / Black Coffee / Black Tea with roasted 5-7 almonds Sprouts salad (with olive oil dressing) Boiled black gram (kala-chana) salad with olive oil dressing Homemade Snack Mix (made with roasted nuts and  cereals/ grains) 1 veg multigrain bread sandwich (2 multigrain bread slices with coleslaw) Bottom Line Take your last bite before 9 pm to be fitter and healthier. Now that Star Wars: Galaxy’s Edge has opened in Disney’s Hollywood Studios, let’s talk about the delicious dishes and drinks being offered throughout the land. There are lots of fantastic options to choose from for all of the Star Wars foodies out there. Here are the details courtesy of Disney:
In creating Star Wars: Galaxy’s Edge, Walt Disney Imagineering envisioned a land that immerses guests entirely in Star Wars storytelling, using all five of their senses. Thus, food and drink play important roles in deepening guests’ engagement, using taste and smell to play right alongside the wondrous sights and other sensations found within this new land at Disney’s Hollywood Studios in Florida. When guests take a bite of Fried Endorian Tip-yip or a swig of a strange-looking concoction, they feel all the more as if they’ve stepped onto the planet Batuu.
The Disney Parks food and beverage creative teams worked hand in hand with Walt Disney Imagineering to develop a diverse and distinctive menu for Star Wars: Galaxy’s Edge. The wide array of delectable creations reinforces Walt Disney Imagineering’s commitment to immersive storytelling and attention to detail in every aspect of this Star Wars experience.
As a remote planet, Batuu is one of the lesser-populated worlds in the Star Wars galaxy, so the food available in Black Spire Outpost has a “farm to table” feel typically found in more rural communities. Food and drink throughout the land hint at an ancient culture, passed down to the current generation of Batuuan residents and are served in unique and exotic vessels.
Oga’s Cantina, for example, is the land’s main watering hole and serves as the heart of Black Spire Outpost. Here, guests gather to share their tales from around the galaxy as they enjoy exotic beverages such as the spicy Bloody Rancor, the foamy Fuzzy Tauntaun or the fruity Carbon Freeze.
Ronto Roasters, named for the large pack animals of Tatooine, draws attention from passersby with its large podracing engine firing up a barbecue pit. When hungry customers queue up to order, they encounter a former smelter droid, 8D-J8, carefully turning the spit of meats. The stall’s signature Ronto Wrap may remind guests of roasted pork and grilled sausage, while the Tatooine Sunset specialty drink may have them reminiscing about gourmet flavored iced tea and lemonade.
The Milk Stand will answer a question four decades in the making: What does Blue Milk taste like? This stall offers two local favorites – Blue Milk and Green Milk. Both provide a frozen blend of exotic tastes and fruity accents, with Green Milk delivering a bit more zing.
At Docking Bay 7 Food and Cargo, Chef Strono “Cookie” Tuggs’ transport shuttle sits atop Docking Bay 7 as a mobile kitchen and restaurant, turning the hangar into Tuggs’ Grub. Tuggs’ journeys from system to system allow him to fill his pantry with exotic ingredients he uses to make new and unusual dishes, such as Smoked Kaadu Ribs, Fried Endorian Tip-yip and Batuu-bon for dessert.

School Lunch Ideas: 40 Healthy Kid Lunches to Keep You Inspired
Nothing says “back to school” then packing endless (and often dreaded) school lunches. If you’re anything like me, you start out with good intentions and then run out of ideas two weeks into the school year. ?While you can certainly use some of these kitchen hacks to make things easier, it doesn’t help if you have a case of “lunch packer block” (that is, you can’t stop packing the same things lunch after lunch after lunch.) That’s why I wanted to create this healthy school lunch ideas post: to keep you inspired when the going gets rough.
Finding JOY in packing school lunches
Truth be told, packing school lunches can be bothersome, boring and relentless. If your kids go away to school each day, it can be even more dissatisfying since you don’t get to actually see them oohing and ahhing over your amazing culinary skills. ? But, what if we flipped the whole thing on its head?
What if coming up with school lunch ideas became not only tolerable but JOYFUL?
After all, we have the opportunity to fill our kids’ bellies with nourishing, delicious and even inspiring food day after day after day. We also get to “love” on our kids in this very simple and yet important way. That’s how I’m choosing to approach school lunches this year. (We’ll see how long that lasts ?.)
Tips for making school lunches easier
Since we have to make at least 200 lunches for our kids (and this includes homeschoolers too!), we might as well make it easier on ourselves… amiright?
Here are some simple things you can try:
Involve your kids. Depending on your child’s age, have them cut up veggies, grab an apple out of the fridge, pack crackers, you get the idea. By having your kid help, you are teaching them to navigate the kitchen as well as boosting confidence and knowledge. You can also take the opportunity to teach them about healthy foods and macronutrient balance with each lunch! (If your kids don’t know how to prep food, consider enrolling in the Kids Cook Real Food course.) Also, let your kids come up with school lunch ideas, too! Cook in bulk. Consider making extra for dinner each night and pack leftovers for lunch. Or, make big batches of healthy gummy men, muffins, waffles, pasta, and rice & beans and store in freezer. Take out what you want to pack the night before to defrost and throw it into your kid’s lunch the next day. Use “convenience” foods. I’m not talking processed or fast foods but rather easy and very “packable” real foods like cherry/grape tomatoes, pitted olives, defrosted frozen peas/lima beans/corn, organic berries, clementines, organic grapes, string cheese, hard boiled eggs, organic jerky sticks, drinkable yogurt, healthy snacks like olive oil popcorn, seed crackers, or sprouted nuts & seeds Freeze a few “emergency” meals. For those occasions when you have a late night and have to scramble for a lunch the next day, consider freezing a few lunches that you can grab and go. Some school lunch ideas include: bean burritos, almond & honey sandwich, turkey roll ups, etc. Add a piece of fruit and a drink, and you’ve got yourself a balanced meal for your child.
Getting the right lunch gear
While there are literally dozens of portable food gear products out there, you want to find lunch supplies that are:
made with non-toxic materials like stainless steel dishwasher safe (ain’t nobody got time for hand-washing!) leak-proof (or mostly leak-proof) easy to pack durable and not breakable keep foods heat/cold as appropriate
After much research, I decided to go with PlanetBox. Here is the gear I own:

While Papa Natural is getting the kids ready for bed, I’m in the kitchen making their lunches for the next day. (I eventually want to partner with Griffin to make lunches but for now, this is working for us.) I’m rather rushed in the mornings so prefer being free of this task. If you take a morning quiet time or do an a.m. workout, packing at night might also appeal to you so it doesn’t interfere with your spiritual or physical fitness ??
Buddy up with a friend or neighbor.
My dear friend and fellow foodie, Savanna, has the most amazing school lunch ideas (as you’ve seen above!). We snap pictures of our lunches each day and text to each other for moral support. We inspire each other and also commiserate on Fridays when we’re so done with packing lunches ?
Find a friend who is also committed to packing healthy lunches and share school lunch ideas regularly. Or better yet, buddy up with a neighbor and swap bulk food items to take some of the burden off of each of you. For example, you could make a big batch of healthy muffins and she could make extra rice & beans; you then swap portions to each other to help round out your lunches.

Make your kids “snack” on any lunch leftovers.
After all of the effort that goes into making kid lunches, nothing feels worse that opening up a lunch box filled with half-eaten foods. When this happens in our household, I make the kids finish their leftovers before they can have other foods to eat, including dinner. This teaches them the value of not being wasteful and honors the work of others. ?
Find resources to help.
We all get into food ruts and need to break out of our old standbys. Consider joining a meal planning service to help you try new recipes that can be used as lunches. I like Real Plans because they create shopping lists (that you can use on your phone) and include lunch menus too. You can also follow awesome food bloggers like Deliciously Organic, Naturally Ella or Tasty Yummies. I also find inspiration in magazines and cookbooks like Nourishing Traditions.
Keep it simple.
While homemade sushi rolls and holiday-themed treats are fun to do on occasion, you want to also include regular, simple staples if you’re gonna stay in the game for the long haul. Simple foods are often best for younger, more delicate digestive systems, too. When coming up with new school lunch ideas, it can be as easy as just trying different foods, such as:
