Recipe for the red enchillada sauce!
Ingredients:
2 tablespoons olive oil
2 tablespoons all-purpose flour
1/4 cup chili powder
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano
2 cups chicken stock or broth
salt, to taste
Recipe:
1. Heat oil in a small saucepan over medium-high heat. Add flour. Cook for 1 minute, whisking constantly.  Add in the chili powder, garlic powder, cumin and oregano and cook for 1 more minute, whisking constantly.
2. Gradually pour in the stock, whisking constantly to combine until no lumps remain.  Continue cooking until the sauce reaches a simmer.  Then reduce heat to medium-low to maintain the simmer (the sauce should be lightly bubbling) for about 10-15 minutes, uncovered, until the sauce has slightly thickened.
3. Season with salt, as needed

still working out pretty consistently, except my last workout session was crashed by a screaming baby that didn't want to stay in daycare. :(
I workout tomorrow.
man, I feel guilty. for no progress. because I just am too lazy to track food. Some days I eat well and other days I eat out. And most days, I live on *almost* exclusively carbs. I feel like being a stay at home mom creates such a lack of structure. You would think it would (should) be easier to eat better, workout often, and be healthy and fit.
I find its easier to be lazier, when you have all the time in the world.
on the upside, I am getting stronger.
tonight I made a Mexican layered casserole. Taco seasoned beef, veggies. Enchillada sauce. whole wheat wraps. mmmmm.
I think I am gonna make a small bullet journal. For one week. mainly nutrition based. work towards a healthier eating habits. and healthy habits.
I feel so far away from the tumblr world. Like, I am losing a lot of my mutual peoples who I love to follow and keep being accountable with. I want to do a mini challenge. Like, a small running challenge. with people who are into it. I want to be pulled back in.

For those who are dieting or doing low carb I have this fabulouse delicious amazing Mamas Keto Lazy Enchillada Soup recipe Below!! Same as you would the recipe but much less, one layer and no tortilla’s more chicken and cheese!
1lb chicken- alot but all protien, precook..
3oz of cheese-330 calories
3 oz of olives-150 calories
1 cup of Enchillanda Sauce-50 calories mix with the bone broth!
1/2 cup of Kettle and fire bone broth chicken-50
If you want it more soupy just add more bone broth and Enchillada sauce!

Preheat oven to 350 degrees F. Coat 2 1/2 quart casserole dish with cooking spray. Spray a large nonstick skillet with cooking spray. Place over medium heat until hot. Add chicken; cook 6 minutes on each side, or until done. Remove chicken from skillet and let cool. Shred chicken with 2 forks; set aside.Re-coat skillet with cooking spray; place over medium heat. Add onion and garlic; sauté 5 minutes or until tender. Add shredded chicken, beer, red pepper and tomatoes; cook 15 minutes, or until most of the liquid has evaporated. Remove from heat. Reserve 1 Tablespoon green onions and 1 Tablespoon olives for garnish. Stir in remaining green onions, olives and chilies into chicken mixture; set aside.Combine flour, salt, cumin and coriander in medium saucepan. Gradually add milk, stirring with a whisk until blended. Place over medium heat; cook 7 minutes or until thick, stirring constantly. Gradually add hot milk mixture to egg whites, stirring constantly with whisk. Set aside. Place cheeses in bowl; toss well and set aside. Spread 1/2 cup white sauce in bottom of casserole dish. Arrange 4 tortilla halves over sauce; top with 2 cups chicken mixture, 1/2 cup sauce and 1/2 cup cheese mixture. Repeat layers twice, ending with sauce. Set aside remaining 1/2 cup cheese mixture. Bake, uncovered, or 40 minutes or until hot. Sprinkle with remaining 1/2 cup cheese, reserved green onions and olives; bake an additional 5 minutes. Let stand 10 minutes before serving. Serve with sour cream and salsa.

I made enchilladas last night! They were delicious
The recipe:
2 tablespoons olive oil
1/2 white onion, peeled and diced (or a small white onion)
1 pounds boneless skinless chicken breasts, diced into small 1/2-inch pieces (snack size)
1 (4-ounce) can diced green chilies (I used fresh habaneros this time)
salt and black pepper to taste
1 (15-ounce) can black beans, rinsed and drained
10 large flour tortillas
3 cups shredded cheese
1 batch red enchilada sauce (I'll share that recipe in another post)
optional toppings: fresh cilantro, diced avocado, avocado, sour cream, etc.
Instructions:
1. Preheat oven to 350°F.  Prepare the red enchilada sauce.
2. In large pan, heat oil over medium heat. Add onion and sauté for about 3 minutes, stirring occasionally.
4. Add chicken and green chiles, season with a generous amount of salt and pepper.  
5. Sauté for 6 minutes, stirring occasionally, or until the chicken is cooked through.  Add in the beans and stir until evenly combined.  Remove pan from heat and set aside.
6. To assemble the enchiladas, lay out the: tortillas, enchilada sauce, chicken mixture, and cheese. Place a tortilla on a plate and spread about 2 spoons of enchilada sauce over the surface of the tortilla.  Add the chicken mixture in a line down the center of the tortilla, then sprinkle with cheese. Roll up tortilla and place in a greased 9 x 13-inch baking dish
7. Spread any remaining sauce evenly over the top of the enchiladas, followed by the leftover cheese
8. Bake uncovered for 15-20 minutes or until the enchiladas are cooked through and the tortillas are slightly crispy on the outside.  Remove pan from the oven and serve the enchiladas while they’re warm. Add any toppings you would like.

Grabbed some quick tacos and enchilladas @TijuanaFlats while we were out on errands. Impressive line up of hot sauces, we did a sampling of 8 and all didn't hit them all. Also impressive were the size of the taco shells. Look at that baby!
