Oh. Was that more than ten? Meh. There’s probably like fifteen-hundred more I’ve failed to mention here. Good gods, I can’t think of them all, and shall need to revisit this again some day. Anyhow, thanks for the tag, hazel-san.  
I personally dislike the word favorite in this context. For me, these are characters that have impressed me by their story arc over time, touched me in such a way as to be unforgettable, influenced my nature from childhood up to my current years, or just seriously cause me to become enriched within the story of which they’re a part. To say one is more “favored” than another is a bit oversimple, I reckon. But I’ll shut up, you get it I’m sure.

Absurdly Sharp Blade: He enjoys cutting through steel beams and giant mechas like they're nothing.
Adaptational Attractiveness: For better or for worse. The original version's physical appearance was never an issue, let alone a sore spot (besides the fact that he had to shave his head, something very against the Bushido code), and Takashi Shimura was cast in the film for being a skilled and versatile actor more than anything, but the anime decided to make him younger and prettier anyway.
Ambiguously Brown: According to Word of God, he is supposed to have Hispanic features.
Barehanded Blade Block: He pulls one off with Kikuchiyo's sword. It's slightly justified in that Kikuchiyo's sword is wide enough that Kanbei could hold it with out having to touch the edge of the blade.
Blade Brake: He pulls off a rather memorable one involving a falling elevator.
The Chosen One: Kirara's water crystal pointed to him specifically. It was his idea to find six other samurai.
Graceful Loser: He readily admits defeat to Kyuzo when the other samurai has him on the ropes.
Heterosexual Life-Partners: With Shichiroji. It doesn't matter which war- they've always got each others backs.
Knight in Sour Armor: His experiences have made him jaded and cynical, but he nevertheless strives to do the right thing.
The Leader: Charismatic Type. Whether it's his experience, skill, or heroism, the others all respect him. As Kikuchiyo (sourly) points out, "Everybody loves Kanbei."
Martial Pacifist: He's fought in and survived way too many battles to find any pleasure in fighting.
Mistaken for Gay: By Katsushiro, when he introduced Shichiroji to the group. Katsu completely took Kanbei's talk about his "mate" the wrong way.
One-Man Army: One of several (seven, to be exact). He can cut through legions of massive Machine Samurai with ease.
Refusal of the Call: At first he wanted nothing to do with Kirara's mission. However, she is very persistent so he shifts to Resigned to the Call.
Spell My Name with an "S": Kambei or Kanbei?
The Rival: A downplayed example with Kyuzo. He acknowledges the other samurai's wish to kill him, but he's so world-weary that he couldn't care less.
Vibroweapon: He's the first to display this skill. According to him, only a true samurai is capable of doing it, and it comes naturally to any true samurai.

Seven Samurai (1954)
Seven Samurai (七人の侍 or Shichinin no Samurai) is just as insanely long as it is belovèd. At 3½ hours in length it’s examined by scholars in the way Henry V or the Scottish play is. To put it in a more modern context, people love and study this the way people have loved and studied the Lord of the Rings trilogy or the ongoing series of Star Wars films.

The titles are presented askew, denoting the fact the world of the film is in turmoil: “during the Civil Wars, an endless cycle of conflict left the countryside overrun by bandits,” we are told. “Peaceable folk lived in terror of the thunder of approaching hooves…” We see a village approached by bandits, who decide they will not take it, as they attacked and took the village’s rice harvest only last fall. They will return when the barley has ripened instead. They ride away, and a local man collecting wood is revealed to have overheard the decision. The village meets to decide what to do, with one woman wailing they have had to deal with “land tax, forced labour, war, drought, and now bandits!” This is not just the village, it is much of Japan in this period, and indeed Japan at the time of the film’s release: WWII left the island nation with nothing; they had fewer resources than the UK did, and had to rely on the Allies for supply of everything. Necessities of every variety and even the ability to develop their own sufficiencies had to be got from outside the island kingdom. This opening of a film surely resonated with film goers at the time, seeing themselves in the villager’s place.

The village debates its action: do they surrender all but the barest necessity to the bandits and beg to survive? do they fight the bandits when they come, even though all will be killed, even the last infant child? do they hang themselves in advance of the bandits’ arrival, as it will be the same fate in the end? They go to the Wise Old Man who lives in the mill to decide.
He tells them they must hire samurai to defend the village. While rarely done, he saw a village survive doing just this. They may only be able to pay the samurai with food, but “even a bear comes down from the hills if he is hungry,” so they must seek samurai who are proud but poor. Thus, they may survive.
Ten minutes of film time, including open title sequence, and you have the entire set-up for the story. The world is built, the stakes are established, the whole story is clearly laid out for the viewer. It’s an incredibly well-crafted piece of writing.

The leader of the titular group, Kambei Shimada (島田勘兵衛 or Shimada Kanbei), played by Takashi Shimura (above), falls into the same category of fighting men as Mal from Firefly, or Han Solo from Star Wars: the noble warrior who always seems to be on the losing, but just, side of the battle. They survive by cunning, but refuse to abandon their code of honour and nobility. They may be losers, but they are great men of courage.
By the arrival of the Intermission (complete with music), the samurai are assembled, the citizens are unified, a plan is created, and the reality of sacrificing some homes outside the main village is laid-out. This is not a time for doubt, nor thinking about one’s own interests, Kambei Shimada tells them. They must all think of protecting each other, for only that will make them victorious. The needs of the many out-weigh the needs of the few, or the one. We’re not quite half-way through at 1:45 of 3:27. While the farmers are trained, there is a great struggle yet to come.
It’s also an excellent opportunity to get a few things one needs for dinner.
The amazing thing is just how vicious the farmers are. They have so little that the non-stop thefts of their labour drive them to do everything they can to prevent it. Any farmer is living on a delicate balance of success or failure which is decided by things far out of their control: weather, nature itself, the usefulness of the seeds, and so on. When the power to defend their livelihood from something you can reason with — man — the farmer is given the opportunity to focus all of their frustration and anger at one mortal thing.
But, in the end, the feeling regarding the samurai continue: they’re useful to defend the village, courageous, strong, "but I wouldn’t let my daughter marry one of them."
